BEST EVER BBQ CHICKEN
The BBQ sauce on this juicy grilled chicken is out-of-this world! We "wow" people with this recipe every summer during outdoor entertaining. I always double the sauce recipe to have extra on the side for dipping. The original recipe calls for 2 small boiler chickens quartered but we prefer using bone-in, skin on chicken breasts. Slow cooking on the grill gives it the best flavor. I hope you enjoy this as much as we do - it's a favorite at this house.

These wings are always a hit! I grill them up before a party and keep them hot in a low oven. I always use Frank's RedHot® sauce. It's got lots of flavor and isn't too spicy.

Steps:
- This method uses 2 zone cooking. The wings will be cooked in indirect heat at first and then will move to the direct heat side of the grill to finish off and get crispy.
- Prepare Your Chicken Wings: Dry off your wings fully with a paper towel and remove the wing flap if necessary.
- Prepare Your Dry Rub and Toss With Chicken Wings: In a large bowl, whisk your dry rub together along with the baking powder until it is evenly combined. Toss your wings into the bowl and coat them evenly with dry rub. This will vary by dry rub, but for every 1.5 pounds of wings, use 2 tbsp dry rub and 2 tsp baking powder.
- Marinate: Let the wings marinate in the dry rub mixture UNCOVERED in the fridge for at least 2 hours or up to 24 hours.
- Preheat Your Grill: When you're ready to grill your wings, turn on one side of the grill and preheat it until the temperature stays at 400 degrees. While you're waiting for the grill to preheat, remove the wings from the fridge and allow them to rest at room temperature for 10 minutes.
- Grill Over Indirect Heat: Place your wings on the indirect heat side for 10 minutes making sure the grill temperature stays at 400. After the first 10 minutes, flip and cook for another 10 minutes.
- Grill Over Direct Heat: Place wings over direct heat for 10 minutes flipping halfway through. This will ensure that the chicken wings get nice and crispy and finish cooking through. Remove from heat and eat as is or toss in buffalo sauce or BBQ sauce before serving.

Steps:
- In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
- Preheat a gas grill to medium heat (about 350 degrees F).
- Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
- In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
- In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

- Line a large glass plate with 2 layers of paper towels. Place wings on plate. With another set of paper towels pat dry the top of wings, removing excess moisture. Turn and repeat. Wings can be refrigerated in between paper towels for about 1 hour to help absorb excess moisture.
- Dip wings into dry rub, turning multiple times to ensure even coating. Place dipped wings onto a large platter.
- Preheat grill to medium heat, about 400℉ (takes about 10-15 mins). Once heated, place wings on grill plate closest to the heat. After about 10-12 mins turn wings and continue grilling for another 10 mins. Once 20 mins has elapsed, move wings to the coolest (top rack) area of grill and continue grilling for another 10 mins or until internal temperature reaches 165℉ making sure to not let the thermometer touch the bone. Pro Tip: Cook the wings with the lid closed but keep a close eye on not letting the temperature rise above 450℉. If temperature does climb above, open lid for a few minutes. The sugar in the dry rub will cause charring so moving the wings will help keep this to a minimal.

- Place the wing sections in a large airtight container or resealable plastic bag. Top with the salt and beer. Toss to combine. Brine in the refrigerator for at least 12 hours or up to 4 days. About 30 minutes before you’re ready to grill, pull the wings out of the refrigerator to come to room temperature for more even grilling.
- The magic of these grilled wings comes from zone grilling – creating different temperature zones in your grill. Learn more about zone grilling & grilling temperatures in this post. If using a gas grill, light the burners on one half of your grill to their highest setting (our grill has a “sear station” on one side of the grill that’s built to get hotter than the rest of the grill, so that’s the side we light). If using a charcoal grill, light your charcoal & distribute it to one side of the grill to create a high heat zone on one side. The grill should be HOT – 500-600 degrees F.
- Once the grill is hot, place the brined chicken wing sections on the side of the grill opposite the heat source. They will cook first from the indirect heat in the grill.
- Flip the wings, rearranging them so the wings furthest from the direct heat source in the first half of the cook are closest to the heat during the second half. Brush the wings with two more coats of Franks, close the grill lid & cook for 7 more minutes.
