My Very Best Steak or Chicken Fajitas image

We've tried several fajita recipes & finally this is it! I found this recipe online and have tweaked it to our liking. Make it with beef or chicken. Great for having a fajita party!! Prep time includes minimum marinating time.

1 1/2 lbs flank steaks or 1 1/2 lbs chicken breasts
5 teaspoons mccormicks fajita seasoning mix (in the packet)
1/2 teaspoon oregano
1/4 cup olive oil
1/4 cup vinegar (red wine vinegar for beef fajitas or white wine vinegar for chicken fajitas)
1 seeded chopped habanero pepper
1 tablespoon lime juice
1 teaspoon of mccormicks spicy McCormick's Montreal Brand steak seasoning, for beef fajitas (found in the seasoning section at the grocery store) or 1 teaspoon Montreal roasted garlic chicken seasoning, for chicken fajitas (found in the seasoning section at the grocery store)
1 red bell pepper
1 green bell pepper
1 large yellow sweet onion
1/4 cup olive oil
cheese (optional)
sour cream (optional)
guacamole (optional)
salsa (optional)
tomatoes (optional)

Steps:

  • Mix all marinade ingredients and pour over the meat (you can put it all in a large zip-lock).
  • Marinate atleast two hours or overnight.
  • Grill meat until cooked through.
  • Slice meat into strips.
  • Heat the 1/4 cup of olive oil in a saute pan on the stove and begin sauteeing the onions over medium heat.
  • Cook until soft.
  • Add the peppers and continue to cook until peppers are soft and onions are beginning to brown and crisp.
  • Serve on Flour Tortillas, add meat then peppers& onions& any of the optional toppings.

2 tablespoons fresh squeezed lime juice
2 tablespoons oil
1 large garlic clove, (minced)
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2-1 teaspoon ground chili ((adjust to your desired spice preference))
1 tablespoon fresh chopped cilantro ((optional))
1 1/2 pounds (650 grams) chicken thighs, (skinless and boneless)
3 large bell peppers (or capsicums), (cut into strips (I use green, red and yellow))
1 red onion (thinly sliced)
2 avocados, (peeled, seeded and sliced)

Steps:

  • In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and cilantro; mix together. Add the chicken thighs and If time allows, let marinate for 30 minutes.
  • Heat a large skillet or pan (12-inch | 30cm) on medium-high heat until smoking. Add a drizzle of olive oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, charred and cooked right through (about 8 minutes per side, depending on the thickness of your fillets). Flip them a couple of times while cooking so they get a nice even char.Transfer chicken to a warm plate, loosely tent with foil and let rest.
  • Add the peppers and onions to the skillet (drizzle with a little extra oil only if needed), and cook until the onion is soft and the peppers are slightly charred and cooked to your liking. Season with salt and pepper.
  • Slice chicken into strips.Serve with warmed tortillas, chopped cilantro and sliced avocado (plus your desired fillings).

2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano

1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips

6 flour tortillas (8 inches), warmed

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. , In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm. , Drain chicken, discarding marinade. 1 red pepper
1 medium red onion
2 skinless free-range chicken breasts
1 teaspoon smoked paprika
1 small pinch of ground cumin
2 limes
olive oil
4 small flour tortillas, or 2 large
150 ml fat-free natural yoghurt
50 g Cheddar cheese
SALSA
½-1 fresh red chilli, to your taste
15 ripe cherry tomatoes
1 bunch fresh coriander, (30g)
1 lime
extra virgin olive oil
GUACAMOLE
1 small handful of mixed-colour rip cherry tomatoes
½-1 fresh red chilli
a few sprigs of fresh coriander
1 ripe avocado
1 lime

Steps:

  • Put a griddle pan on a high heat.
  • Halve, deseed and slice the pepper into thin strips, then peel, halve, and finely slice the onion. Slice the chicken lengthways into long strips, roughly the same size as the pepper strips.
  • Put the peppers, onion, and chicken into a bowl with the paprika and cumin. Squeeze over the juice of half a lime, drizzle over 1 tablespoon of oil, season with a good pinch of black pepper and mix well. Put aside to marinate for 5 minutes or so while you make your salsa.
  • For the salsa, finely chop the chilli, roughly chop the tomatoes and the coriander (stalks and all), then place in a clean bowl with a pinch of sea salt and black pepper. Squeeze over the juice of 1 lime, and stir in the coriander.
  • Using tongs, place the pepper, onion, and chicken onto the griddle and cook for 6 to 8 minutes, or until the chicken is golden and cooked through. As the pan will be really hot, keep turning the pieces of chicken and vegetables over so they don't burn - you just want them to lightly chargrill to give you a lovely flavour.
  • To make the guacamole, squeeze the cherry tomatoes onto a board, then finely chop with ½ -1 red chilli and a handful of coriander leaves, including the top part of the stalks.
  • Halve and destone the avocado, then squeeze it over a board so the flesh comes out of the skin. Discard the skin. Squeeze over the lime juice and chop everything together until fine. Taste and adjust the flavours, if needed.
  • Warm the tortillas in a microwave or warm, dry frying pan, then divide between serving plates. Squeeze the remaining lime juice over the sizzling pan.
  • At the table, carefully help yourselves to the chicken and vegetables straight from the hot grill pan. Just be sure to put it down on top of something that won't burn, like a chopping board.
  • Serve with bowls of natural yoghurt and guacamole, alongside the Cheddar, a grater, and the lovely fresh salsa.

How to Make the Best Fajitas image

Fajitas cook quickly, so taking a bit of time to season steak, chicken, or shrimp with our simple fajita seasoning is a good idea. Use our recipe as a guide; you can make all three proteins or choose one. Use 2 ½ pounds of protein for six people. Even though it is only the two of us, we still make the whole batch. The leftovers are fabulous.

2 tablespoons olive oil, divided
Salt and fajita seasoning, recipe below
1 pound flank or strip steak
1 pound chicken breast (2 medium)
1/2 pound shrimp, deveined with tails left on
1 pound bell peppers or poblano peppers, sliced (3 medium)
1 large onion, sliced into half moons
1 tablespoon minced garlic, about 3 cloves
3 tablespoons tequila, light beer or chicken stock
2 limes
1 ½ teaspoons ancho chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Warm tortillas, try homemade flour tortillas
Beans and rice
Avocado or homemade guacamole
Sour cream
Fresh tomato, pico de gallo or roasted tomato salsa
Shredded lettuce
Shredded cheese or crumbled queso fresco

Steps:

  • Mix the chili powder, cumin, garlic powder, oregano, and smoked paprika in a small bowl.
  • Season the steak, chicken, and shrimp with salt and a generous dusting of fajita seasoning. We use 1/2 teaspoon of salt for the steak, 1/2 teaspoon for the chicken, and 1/4 teaspoon for the shrimp. Set the steak and shrimp aside while you cook the chicken.
  • Heat 2 teaspoons of the oil in a wide skillet (with a lid, or you can use foil) over medium-high heat. As soon as the oil is hot and looks shimmery, add the chicken. Cook until golden, 2 to 3 minutes. Flip the chicken so that the seared side is facing up.
  • Reduce the heat to low, then cover the skillet with a lid or use foil. Cook 10 to 15 minutes or until an instant-read thermometer reads 165 degrees F when inserted into the thickest part of the breast. Transfer chicken to a plate and cover loosely with aluminum foil.
  • Note: Use the time while the chicken is cooking to chop the onions, peppers, and garlic.
  • Pour any liquid left in the pan out and use a paper towel to wipe the bottom of the skillet. It is okay if there are bits of chicken or spices stuck to the bottom. (If you want to, you can save the liquid to add back to the pan later.)
  • Put the skillet back onto the heat, increase to medium-high heat, and add another two teaspoons of oil. As soon as the oil is hot and looks shimmery, add the steak. Cook 2 to 3 minutes until brown, and then flip to the other side and let cook for another 2 to 3 minutes. Check the internal temperature. If it is not ready, turn the heat to low and continue to cook until it reaches your preferred doneness. For medium, cook to 135 degrees F. Transfer steak to the plate with chicken and cover loosely with aluminum foil.
  • Put the skillet back onto the heat, increase to medium-high heat, and add another two teaspoons of oil. Add the onions, peppers, garlic, and a pinch of salt. Cook, stirring until they start to soften and brown a bit; about 5 minutes. As the veggies cook, use tongs or a wooden spoon to scrape up bits of chicken, steak, or spices stuck to the bottom of the pan.
  • When the peppers and onions are ready, pile them up on one side of the pan. Place the shrimp into the pan and cook, stirring, until the shrimp are firm and opaque throughout; 2 to 3 minutes. Transfer cooked shrimp to a plate.
  • To finish, turn the heat down to low, arrange the vegetables on the bottom of the skillet, stir in tequila, beer or stock, and cook for 1 minute. Take the pan off of the heat. Slice the chicken and steak then arrange the chicken, steak, and shrimp on the peppers and onions. Finish with a generous squeeze of lime.
  • Serve the fajitas family style with more lime on the side as well as your favorite side dishes.

1 onion
1/2 c chopped fresh cilantro (it's corriander)
juice of 3 limes
1 cup any cooking oil except olive
1 packet Sazon with corriander and annato (in the Latino food aisle)
1 tbsp. McCormick Fajita Seasoning
4-6 boneless skinless chicken breasts
Fajita-size tortillas (flour, not corn)
Toppings (optional): sour cream, shredded cheese, chopped cilantro, avocado, tomatoes ... whatever you like.

Steps:

  • Mince about 1/3 of each of the vegetables. Add chopped cilantro, lime juice, Sazon, fajita seasoning and oil, stir well. Add chicken sliced in strips across the grain, and the rest of the vegetables sliced in strips. Marinate for at least an hour or overnight. Grill. Serve on tortillas.

  • Preheat oven to 425 degrees. Line a large baking sheet with parchment paper. Place red bell peppers, yellow bell peppers, red onion, and yellow corn on the baking sheet. Drizzle with olive oil and season with salt and pepper. Mix vegetables and oil. Push the vegetables to the sides, clearing out a space in the middle. Place the chicken into the cleared out areas of the baking sheet. In a small bowl, whisk together the chili powder, garlic, salt, ground cumin, oregano, black pepper, and cayenne pepper.   • MARINADE: In a large freezer bag, whisk together all of the Chicken Fajita Marinade ingredients. Remove 2 tablespoons to use later for vegetables. Add chicken to freezer bag and toss to coat. Marinate in the refrigerator 6 hours up to overnight (longer the better).

  • STEAK MARINADE: Combine the ingredients for the marinade in a large shallow bowl. Give it a taste and check for seasonings, adjust to preference.   • If your chicken breast is thick, I recommend cutting in half, horizontally. Do not pound it thin, as it will not have the right consistency for fajitas. Combine chicken with olive oil, lime juice, salt, paprika, ground cumin, garlic powder, chili lime seasoning in a large zip-top baggie to marinate for at least an hour.
  • Sauté veggies with olive oil spray and kosher salt in a cast iron skillet (if you have one, it adds lots of flavor!). Cover the pan with a lid, so they steam and get soft, and then remove the lid and let them get nice and charred.
  • Once the peppers and onions are done cooking, remove them from the pan. Spray the pan with a little more olive oil spray, if needed. Add the chicken and cook thoroughly. Remove and cut into slices. Add back to the pan with the veggies, and add about 1/4 cup salsa. Let mixture cook together for a few minutes until all liquid is absorbed.
