This is one of our favorite chicken casserole recipes. A chicken casserole that's cheesy, filling, and healthy. Our chicken, broccoli, and rice casserole is made without pre-made soup, it's so easy and even more delicious from scratch.

Steps:
- First, preheat oven to 375ºF and spray a large ceramic casserole dish with nonstick cooking spray.
- Next, place minute brown rice, broccoli florets, yellow onion, carrots, and green peas on the bottom of the casserole dish.
- Prepare cheese sauce by placing broth and milk into a small saucepan. Heat over medium heat.
- Once simmering, turn down low/medium and add in 6 oz. shredded cheddar cheese, garlic powder, salt, and pepper. Continuously stir until the cheese melts and your cheese sauce has formed.
- Immediately pour over rice and veggies and mix.
- Next, slice chicken breasts into 1-inch cubes and add that to the casserole dish and mix making sure everything is fully coated in cheese sauce.
- Bake at 375ºF, uncovered, for 30 minutes.
- Then, add 2 oz. shredded cheddar cheese and 1 oz. shredded parmesan cheese to the top of the casserole dish and bake for an additional 15-20 minutes.
- Let casserole rest on the stovetop for 15-20 minutes before serving to further thicken.

MY MOM'S CHICKEN BROCCOLI RICE CASSEROLE
I could eat a whole pan of this. ..I've found that the texture of the sauce comes out grainy when I use pre-shredded bags of cheese - for best results, use a good quality block of cheese and grate it yourself. ..I hope you enjoy this! It's pure comfort food to me.

- Preheat oven to 350.
- Start the broccoli and rice:.
- Cook broccoli and rice as per the package instructions.
- When broccoli is done, drain, let cool and dice.
- Mix chicken, broccoli, and rice in a greased 9 x 13 pan.
- For the sauce:.
- Heat half and half in microwave til bubbles appear around sides of bowl, but it does not boil. Set aside.
- Melt butter in small saucepan.
- Add flour and stir crazily til incorporated but not browned.
- Add half and half.
- Bring mixture to a boil, whisking continuously.
- Reduce heat, and gradually add cheese, whisking to incorporate, til melted.
- Add cream of mushroom soup gradually, whisking til incorporated.
- Pour sauce over the dry ingredients and combine well.
- Season to taste with salt.
- Cover casserole with foil and bake for 45 minutes.
- Uncover and let bake 15 minutes.
- Garnish with paprika.

Prepare stuffing mix according to package directions, using only 1-1/2 cups water., In large bowl, combine chicken, broccoli and soup; transfer to a greased 11x7-in. baking dish. - Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. I use white long grain rice and the cooking time/liquid amount below works perfectly.
- Preheat the oven to 350 degrees.
- Cut chicken into bite-sized pieces and season with Italian seasoning and desired amount of salt and pepper.
- Heat butter in a large pot over medium heat until melted. Add the chicken and cook until golden brown on all sides, about 5 minutes. Remove and set aside. Note: This step is not needed if using a cooked rotisserie chicken.
- Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
- Cover tightly and cook for 7 minutes.
- Add the broccoli and replace the cover. Cook for 8 more minutes. Refrain from stirring.
- Turn off the heat and leave the cover on. Let the rice stand for 10 minutes, do not stir. Any rice on the bottom of the pot will release.
- Add the cooked chicken, soup, milk, sour cream, optional seasonings, and half of the cheddar cheese.
- Add to a lightly greased 9 x 13 casserole dish and top with remaining cheese.
- Cover and bake for 15 minutes.

My friend Kevin made this one night for his own dinner. About 5 or 6 people then wandered into his house around dinnertime and demanded "just a taste". - Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
- Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
