Steps:
- Preheat the oven to 350 F degrees.
- In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
- Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
- In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.

Ok...after searching high and low, I've finally found a recipe that's similar to a casserole dish from one of my fav. eateries in St. Augustine, FL! It's a little diff., but just as tasty. I think their dish had a lot more butter in it. I pass this on with love and the hopes that you will take it to all of your potluck get togethers. I hope you like it, wait...no I hope you LOVE IT!:)

- Preheat oven to 350.
- spray a casserole dish with non-stick spray.
- combine cooked broccoli, egg, onion, cheese, mayo,sour cream, ***and salt and pepper to taste. (I add the egg last so that I can see if it needs seasoning).
- Make sure the mixture is a little "wet", but not soupy.
- Pour into casserole dish.
- Top with ritz and pour a little oil (1 tbs or less) on top of crackers.
- Bake at 350 for 30 minutes until top is golden brown and mixture is bubbling.
AWESOME BROCCOLI-CHEESE CASSEROLE
My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.

- Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.
- Melt butter in a large skillet over medium-high heat, and cook and stir celery and onion until soft.

- Have ready a greased 9"x13" casserole dish, and preheat the oven to 350°.
- Add the butter to a large saucepan over medium heat. Do not allow to burn. Add the onion and celery and sauté 6-8 minutes, stirring often, until softened.
- Sprinkle the flour over the vegetables and stir for about 1 minute. Add the chicken broth one big splash at a time, stirring after each addition. Add the cream and stir to combine. Simmer for 2 minutes, and remove from the heat.
- Add 1 cup of the cheese, salt, pepper, and garlic powder to the sauce. Stir to combine and transfer to a large mixing bowl.

- Preheat the oven to 350 degrees F. Spray a medium sized rectangle baking dish (about 11x7) with cooking spray and set aside.
- Bring a large pot of water to boil. Add broccoli and boil for 3-4 minutes. Drain and set aside.
- In a medium saucepan, melt butter over medium heat. Whisk in flour, garlic powder and paprika and cook for several minutes until golden. Add half & half and bring to a simmer until thickened. Remove from heat and stir in cheese (reserve 1/4 cup for topping). Stir in salt and black pepper. Taste and add salt as desired.
- Pour cheese sauce over the broccoli and gently stir to coat. Pour into the baking dish.
- In a small bowl, combine crushed crackers with melted butter and stir in the remaining cheese. Sprinkle cracker mixture evenly over the casserole.
- Bake uncovered at 350 degrees for about 20-25 minutes, or until sauce is bubbly and topping is browned. If topping isn't browned enough, place under the broiler for a few minutes.
- Let stand 10 minutes before serving.
- To freeze, bake and cool casserole completely, then cover tightly with plastic wrap and foil. Thaw in the refrigerator, then bake as directed in step 6.

- Preheat the oven to 400°F/200°C.
- Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.

- 1. Preheat oven to 350 degrees F. Pre-cook the broccoli about half way through. DO NOT over cook the broccoli because it will be mushy later.
- 2. In a large bowl, mix together broccoli, corn, and onions. Stir in sour cream, soup, and shredded cheese. In a separate bowl, toss together stuffing mix and melted butter. Spread broccoli mixture into a 2-3 quart casserole dish and cover with stuffing mix.

- Thaw broccoli by running under warm water for a few minutes.
