Steps:

BEST BAKED APPLES
This recipe from Cook's Illustrated takes a little more work than regular baked apples, but the effort is well worth it. The result is a crisp, flavorful apple.

Steps:
- Preheat oven to 375°F.
- Peel, core, and cut 1 apple into 1/4-inch dice.
- Combine 5 tbsp butter, brown sugar, cranberries, pecans, orange zest, oats, cinnamon, and diced apple in a large bowl; set aside.
- Shave a thin slice off the bottom of the remaining six apples so they sit flat. Cut top 1/2 inch off stem end of apples and reserve. Peel apples and use a melon baller or small measuring spoon to remove 1 2/-inch diameter core, being careful not to cut through the bottom of the apple.
- Melt remaining butter in 12-inch ovensafe skillet over medium heat. Once foaming subsides, add apples, stem-side down, and cook until cut surface is golden brown, about 3 minutes.
- Flip apples, reduce heat to low, and spoon filling inside, mounding excess filling over cavities; top with reserved apple caps.
- Add maple syrup and 1/3 cup cider to skillet. Transfer skillet to oven, and bake 35-40 minutes, or until skewer inserted into apple meets little resistance. Baste even 10 minutes with maple syrup mixture in skillet.
- Transfer apples to serving platter. Stir up to 2 tbsp remaining cider into sauce to adjust consistency. Pour sauce over apples and serve.

Steps:
- Preheat oven to 375°F (191°C).
- Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
- This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
- Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
- Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
- Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
- Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.

- Mix Filling ingredients together then set aside while you prep the apples – it will firm up and become scoopable (pop in fridge if its super hot where you are).
- Cut the apples in half through the core then use an ice cream scooper, spoon or small knife to scoop out the core (see video).
- Place apples in a baking dish so they are reasonably snug – you don’t want heaps of space around them. Pile Filling on the apples – I use an ice cream scoop.

We prefer to leave the skin on for flavor and texture (and fiber!) but feel free to peel them if you prefer. Place the apples into a small baking dish and set aside.
- In a medium bowl, mix together the oats, nuts, raisins, maple syrup, salt, and cinnamon. (Alternatively, you can use 1/2 cup of already made granola and skip this step.)

- Chop the tops off of the remaining 4 apples and use a spoon to scoop out the flesh. Discard the flesh or save it for another recipe.(See Note) You don't need to get every little bit out, just enough to make a "bowl" for the filling.
- Fill scooped-out apples with apple filling from the sauce pan. Top with a generous amount of crumble topping.

- Place almonds onto a baking sheet and toast in the oven while it is heating until they become fragrant. Remove almonds and chop into small pieces. Place almonds into a small bowl. Wash the apples well. Take a sharp knife and cut the stem out of the apple. Then use a melon baller to scope out the cavity of the apple. Remove a 1 1/2 inch core out of the apple, but do not cut through the apple completely.
- You may want to level the apple by checking to see if it will sit upright on its own. If it does not, trim enough off the bottom of the apple so it will sit upright.
- Prepare the filling by tossing together the chopped almonds, ground cinnamon, honey, salt, and vanilla extract. Add 2 tablespoons of melted butter to the filling. Place filling into the apples. Place about 1 teaspoon pat of butter on the top of each apple. Place boiling water and 2 tablespoons of butter into a 13 x 9 inch baking dish.
