Categories     Dessert

Time 1h15m

Number Of Ingredients 11

4 cups all-purpose flour (divided )
1 1/2 cups butter (divided)
1/3 cup granulated sugar
1/2 tsp vanilla extract
1 large egg
5 apples
1 1/3 cup applesauce (sweet or unsweetened)
1 tsp lemon zest (freshly grated)
1 tbsp lemon juice
1/2 tsp cinnamon
1/2 cup granulated or brown sugar

Steps:

  • Lightly grease a 9x13-inch baking pan and preheat your oven to 350F (180C).
  • In the bowl of a stand mixer fitted with the paddle attachment, add 3/4 cup (1.5 sticks) butter, 1/3 cup sugar, vanilla extract, 2 cups all-purpose flour and egg. Beat until everything is incorporated. Spread the dough onto the baking sheet. Put the baking sheet in the fridge while you make the apple and crumble layer.
  • Leave the remaining 3/4 cup (1.5 sticks) butter on the kitchen counter to get to room temperature.
  • Peel and core the apples and chop them into small chunks. Mix the apple chunks with the lemon zest, lemon juice, cinnamon and apple sauce. Set aside.
  • For the crumb topping: In the bowl of a stand mixer fitted with the paddle attachment mix the remaining soft 3/4 cup (1.5 sticks) butter with 2 cups of flour and 1/2 cup sugar (see Note 4). The mixture will be crumbly.
  • To assemble the cake, spread the apple mixture onto the dough layer. Then use your fingers to crumble the crumbs on top. Press some crumbs together to form bigger crumbs, you don't want the crumbs to be too fine.
  • Bake for 45 minutes until the crumbs are lightly golden.
  • Let the cake cool off completely. It will be a little bit soft while hot.
  • Serve with whipped cream or vanilla ice cream!

Yield 1 9" x 13" Cake

Number Of Ingredients 11

2 cups unbleached flour
1/2 cup sugar
1/2 tsp. baking powder
1 cup butter
1 slightly beaten egg
3/4 cup sugar
1/4 cup unbleached flour
1 tsp. ground cinnamon
4 med apples- peeled, cored and sliced (4 cups)
1 cup sifted powdered sugar
few tsp milk

Steps:

  • Preheat oven 350 F
  • Grease a 9 x 13 inch baking pan
  • Prepare the Crust:
  • -In medium bowl stir together 2 cups flour, 1/2 cup sugar, and baking powder.
  • Cut in butter with a pastry cutter, until looks like wet sand.
  • Stir in beaten egg with fork.
  • Dump about 2/3 of the dough into the baking pan. Press evenly and firmly into pan.
  • Prepare the Apples:
  • -In a large bowl, mix the 2/3 cup sugar, 1/4 cup flour and the cinnamon.

  • Sprinkle any remaining flour/sugar/cinnamon stuff from the bowl.
  • Take the other 1/3 of the dough and crumble it over the apples. I grab it in my fist and sprinkle it through my fingers, making small and big lumps evenly over the apples.
  • Bake 45 minutes.. until beginning to brown
  • Cool on rack for 1 hour.
  • Now you get to choose.....
  • you can sprinkle powdered sugar over the cake and serve it...
  • Or
  • you can make a thick glaze by combining the powdered sugar and a few spoonfuls of milk... make sure it's not too thin... less milk is better...pour the glaze over the cake, let sit a bit, cut and serve
  • Or
  • you can eat it plain.
  • No matter which you choose, it will be delicious! Top it with whipped cream and it's bliss...
