It has a homemade salad dressing made of light Greek yogurt and a bit of mayo, and a good drizzle of lemon juice. The perfect recipe when you want something quick and easy. It really is the best Waldorf salad, healthy, light, great on its own as a quick lunch, or as a side dish for your roast. Quick, easy, and so delicious!

4 celery stalks
2 apples
1 cup seedless red grapes
1 cup chopped walnuts
1 cup fresh baby spinach
1 tbsp lemon juice
1 tbsp Greek yogurt
1 tbsp mayonnaise

Steps:

  • Wash, core, peel and chop the apples in chunks.
  • Chop the celery stalks and grapes, then add them all to a bowl together with the walnuts.
  • Drizzle the lemon juice over, add yogurt and mayonnaise and combine well.
  • Arrange spinach leaves on a plate, then top with the salad.
  • Serve immediately.

150 g grapes, (on the stalk if possible)
1 lemon
olive oil
60 g shelled walnuts
1 teaspoon English mustard
250 ml fat-free natural yoghurt
6 sprigs of fresh tarragon
2 sticks of celery
2 crisp eating apples, such as Braeburn or Cox
1 cos, or Romaine lettuce

Steps:

  • Preheat the oven to 180°C/350°F/gas 4. Place the grapes on a baking tray, finely grate over the zest from ½ the lemon, drizzle with a little oil and season with sea salt and black pepper.
  • Place in the hot oven for 15 minutes, then add the walnuts and roast for a further 5 to 10 minutes, or until the grapes are soft and caramelised and the walnuts are golden.
  • Meanwhile, make the dressing. Place the mustard and yoghurt into a bowl and whisk well. Pick, finely chop and add the tarragon leaves, squeeze in the lemon juice and mix well, then season to taste.
  • Trim and chop the celery into 1cm chunks, slice the apple into large matchsticks, then place into a large bowl. Discard the tatty outer lettuce leaves, then roughly chop and add to the bowl. Pick the grapes off their stalks and add to the bowl. Drizzle over the yoghurt dressing and toss well. Place onto a platter, roughly chop and sprinkle over the walnuts, then serve.

2 cups wheat berries
6 cups water, or as needed
2 apples, chopped
1 cup raisins
1 cup chopped walnuts
1 cup chopped fresh parsley
½ cup pomegranate seeds
⅓ cup apple juice
2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon

Steps:

  • Place wheat berries in a bowl, cover with water, and allow to soak for 5 minutes. Drain. Transfer into a large saucepan and stir in 6 cups water. Bring to a boil, reduce heat to low, and simmer until wheat berries are tender, 60 to 80 minutes. Pour in more water if wheat becomes dry. Drain and set aside to cool.
  • Mix wheat berries with apples, raisins, walnuts, parsley, pomegranate seeds, apple juice, vinegar, olive oil, lemon juice, salt, black pepper, nutmeg, and cinnamon in a salad bowl. Can be chilled overnight if desired.

1 tsp honey
1 sweet apple
celery (desired amount)
raisins or crainsins (desired amount)

Steps:

  • Add wheat berries and water to saucepan and bring the mixture to a boil, lower the heat and simmer covered until the wheat berries are tender but still chewy in texture, about 15 minutes. Set aside to cool.
  • Toss cooled wheat berries and remaining ingredients together in bowl and serve.

1/4 cup olive oil
3 tablespoons apple cider vinegar
1/2 teaspoon dry mustard
4 teaspoons honey
1/4 teaspoon salt

1/2 cups walnut pieces
1 1/2 teaspoons honey
1/8 teaspoon ground red pepper
1/2 cup diced Granny Smith Apple
1/3 cup diced celery
1 cup seedless red grapes, (cut in half)
1/4 cup crumbled blue cheese

Steps:

  • Place the wheat berries in a medium saucepan and cover with about 2 inches of water. Add 1 teaspoon salt.
  • Bring to a boil, reduce heat, cover and simmer gently for about 1 hour. Stir occasionally. Drain.
  • To make dressing, combine olive oil, apple cider vinegar, dry mustard, 4 teaspoons honey, salt and pepper in a small bowl and whisk well to combine. Set aside.
  • To make walnuts, combine walnuts, 1 1/2 teaspoons honey, and red pepper in a small nonstick skillet and cook over medium heat for about 3 minutes, stirring occasionally.
  • Place wheat berries in a medium bowl and add in apple, celery, grapes, and blue cheese. Add dressing to taste and toss well. Sprinkle with walnuts.

From The Whole Foods Market Cookbook Wheat berries are the mother grain from which pasta, bread, and flour are derived. Most of us have never tasted the true flavor of wheat. Little wheat berries pack a nutlike flavor and are pleasantly chewy. Use a crunchy, firm, sweet-tart apple (such as a Granny Smith or Gala) for this salad. Lemon juice and vinegar keep chopped apples from darkening so you may make this salad the day before serving. Try substituting dried apples for the fresh ones for another flavor variation.

2 cups wheat berries
7 cups water
1 cup chopped walnuts
2 medium apples, unpeeled, cored and chopped
1 cup raisins
1 cup finely chopped parsley
1/4 cup apple cider vinegar
1/2 cup apple juice
1 tablespoon salt
1/2 teaspoon fresh ground pepper
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup extra virgin olive oil
1/8 cup lemon juice

Steps:

  • Soak the wheat berries at least 6 to 8 hours or overnight in water to cover by a couple of inches. Drain the water, and set aside.
  • In a saucepan, bring the 7 cups water to a boil. Add the soaked wheat berries and turn down to a simmer, uncovered, for about 50 minutes or until they are totally cooked through. Wheat berries retain a firm, chewy texture when cooked. Drain the water and set aside to cool.
  • When cool, transfer the wheat berries to a large mixing bowl and add the walnuts, apples, raisins, parsley, apple cider vinegar, apple juice, salt, pepper, nutmeg, cinnamon, olive oil and lemon juice. Mix everything together thoroughly. Add more salt if necessary and serve.

1 Gala or McIntosh apple
1 Granny Smith apple
1 celery rib, sliced thin
2/3 cup packed fresh mint leaves, washed well, spun dry, and chopped
1/2 cup dried sour cherries**
1/4 cup golden raisins
2 scallions, chopped
3 tablespoons seasoned rice vinegar
3 tablespoons fresh orange juice
3/4 teaspoon freshly grated orange zest
8 Boston lettuce leaves

Steps:

  • In a saucepan bring water and salt to a boil and add wheat berries. Simmer wheat berries, covered, 1 1/2 hours, or until tender. Drain wheat berries in a colander and cool to room temperature.
  • Cut apples into 1/2-inch chunks and in a large bowl toss with wheat berries and all remaining ingredients except lettuce. Season salad with salt and pepper and serve over lettuce.
