BERRY-ROSE CRUMBLE
If you're wondering how to incorporate more antioxidant-rich foods into your diet, look no further. The perfume of rose water, which you can find in Middle Eastern markets, is irresistible here. Served with yogurt, this is one of my favorite breakfasts. The berries are quite juicy. If you want a thicker syrup, use corn starch or arrowroot.

Steps:
- Hull the strawberries. If they're large, cut them in half. In a large bowl, toss the fruit with the sugar, rose water and (optional) cornstarch or arrowroot. Cover and let stand for 15 to 30 minutes. Meanwhile, preheat the oven to 350 degrees, and butter a two-quart baking dish.
- Transfer the fruit to the baking dish, making sure to scrape all of the liquid into the bowl. Set the baking dish on a baking sheet for easier handling, and place in the oven for 15 minutes. Remove from the oven, and spread the crumble topping over the fruit in an even layer. Return to the oven for 15 to 20 minutes until the crumble is bubbling and nicely browned. Allow to stand for at least 15 minutes before serving.
TRI-BERRY CRUMBLES
Steps:
- Preheat the oven to 350 degrees F. Place 6 creme brulee dishes on a sheet pan lined with parchment paper.
- In a large bowl, toss together the blueberries, raspberries, strawberries, 1/2 cup granulated sugar, the cornstarch, lemon zest, and lemon juice. Divide the mixture evenly among the creme brulee dishes, including any juices that collect.
- For the crumble, combine the flour, granulated sugar, brown sugar, oats, cinnamon, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix it on low speed until the mixture is crumbly. Pinch it with your fingers until it makes large crumbles and distribute it on the berries (it will not cover them entirely). Bake for 35 to 40 minutes, until the juices are bubbly and the topping is browned. Serve warm with a small scoop of vanilla ice cream.

- Preheat the oven to 180ºC (350ºF) and lightly grease a small 16 x 10 cm (6 x 4 inch) baking dish with oil or butter.
- To make the crumble, whisk together the flour, oats, coconut sugar, and cinnamon in a small bowl using a fork. Pour over the melted butter and toss with the fork until all the mixture is coated and resembles wet, clumpy sand. Set aside.
- In a large bowl, toss together the apples, berries, arrowroot powder, honey, vanilla, and lemon juice until well coated.
- Scrape the fruit mixture into the prepared baking dish. Top with the crumble mixture.
- Place the dish on a baking tray and bake for 30-35 minutes, or until bubbly and golden and the apples are softened. At the 20-minute mark, check the crumble and cover loosely with a layer of foil if it looks too browned.
- Remove the crumbles from the oven and allow them to rest for 5-10 minutes. Serve warm with vanilla ice cream, yoghurt, or whipped cream.
FROZEN BERRY CRUMBLE
You can use any fruit, but this recipe with frozen berries has a lot of what everyone likes best: the crumble! It's on the bottom and the top and absolutely delicious. This is great right out of the oven with freshly made whipped cream or vanilla ice cream.

- Defrost frozen berries for 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x13-inch baking pan.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
- Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
- Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
