SIMPLE CHEESE OMELETTE



Simple cheese omelette image

This is a great quick meal at any time of the day. Eggs are a fantastic, affordable source of protein, helping our muscles to grow and repair and helping us to feel fuller for longer. Serve your omelette with wholemeal bread and a simple tomato salad for a healthy, balanced meal.

2 large eggs
olive oil
10 g Cheddar cheese

Steps:

  • Crack the eggs into a mixing bowl, season with a pinch of sea salt and black pepper, then beat well with a fork until fully combined.
  • Place a small non-stick frying pan on a low heat to warm up.
  • Grate the cheese onto a board and set aside.
  • Add ½ tablespoon of oil to the hot pan, then carefully pour in the eggs.
  • Tilt the pan to spread them out evenly, using a fork to swirl the eggs around the pan a little.
  • When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese.
  • Using a spatula, ease around the edges of the omelette, then fold it over in half.
  • When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette onto a plate. Delicious with a tomato salad and wholemeal bread.

3 eggs, beaten
1 tsp sunflower oil
1 tsp butter

Steps:

  • Season the beaten eggs well with salt and pepper. Heat the oil and butter in a non-stick frying pan over a medium-low heat until the butter has melted and is foaming.
  • Pour the eggs into the pan, tilt the pan ever so slightly from one side to another to allow the eggs to swirl and cover the surface of the pan completely. Let the mixture cook for about 20 seconds then scrape a line through the middle with a spatula.
  • Tilt the pan again to allow it to fill back up with the runny egg. Repeat once or twice more until the egg has just set.
  • At this point you can fill the omelette with whatever you like - some grated cheese, sliced ham, fresh herbs, sautéed mushrooms or smoked salmon all work well. Scatter the filling over the top of the omelette and fold gently in half with the spatula. Slide onto a plate to serve.

1 large egg
1 tbsp skimmed milk
3 pinches of cinnamon
½ tsp rapeseed oil
100g cottage cheese
175g chopped strawberry , blueberries and raspberries

Steps:

  • Beat egg with milk and cinnamon. Heat oil in a 20cm non-stick frying pan and pour in the egg mixture, swirling to evenly cover the base. Cook for a few mins until set and golden underneath. There's no need to flip it over.
  • Place on a plate, spread over cheese, then scatter with berries. Roll up and serve.

3 large eggs
1/2 cup milk
1 tablespoon sugar
1 tablespoon flour ((regular or gluten-free such as rice))
1/2 teaspoon coconut oil or other oil for the pan

Steps:

  • Heat 6.5-7" skillet on medium. Brush with coconut oil or other oil/butter of choice.
  • In a medium bowl whisk the eggs until smooth, add milk, sugar, flour and mix well trying to get rid of flour clumps.
  • Pour the eggy mixture onto the pan and cover with the lid.
  • Cook on medium or low if medium starts to burn for about 7-10 minutes. The mixture will puff up a lot and it'll smell like French Toast.
  • Once the lid is removed the omelet will fall and it's expected.
  • Serve with berries, icing sugar or maple syrup like French Toast.

1/4 teaspoon salt
1 dash pepper
1/2-1 tablespoon butter
1/2 cup fresh blueberries or 1/2 cup blueberry sauce

Steps:

  • Mix eggs, water, salt, and pepper with fork.
  • Heat butter in 8-inch omelet pan or frying pan over medium-high heat until just hot enough to sizzle a drop of water.
  • Pour in egg mixture.
  • Mixture should set at edges at once.
  • With pancake turner, turn over, carefully push cooked portions at edges toward center so uncooked portions flow to bottom.
  • Tilt pan as necessary so uncooked eggs can flow.
  • Slide pan rapidly back and forth over heat to keep mixture in motion and sliding freely.
  • While top is still moist and creamy-looking, fill with warm blueberries.
  • With pancake turner, fold in half or roll, turning out onto plate with a quick flip of the wrist.

1 tablespoon shredded or desiccated coconut

Steps:

  • 1. Preheat grill to medium. 2. Whisk eggs, syrup, cinnamon and milk until well combined. 3. Melt butter or oil in a small skillet over medium to low heat, coat pan well. 4. Pour in egg mixture. Sprinkle with berries. Cook for 1 minute until base is set. 5. Transfer to grill and continue cooking until lightly golden and eggs are firm but still creamy. 6. Serve with yoghurt and coconut.
