A sweet but still tart jam with Swedish lingonberries. This goes really well with classic Swedish meatballs or fried herring (Swedish style).

⅞ cup water
1 cup white sugar

Steps:

  • Place lingonberries in a large pot with the water and bring to a boil. Boil for 5 to 10 minutes, and skim off any foam from the surface. Stir in sugar, bring to a rapid boil, and continue boiling for a few more minutes.
  • Ladle jam into sterile jars, leaving 1/4 inch of headspace. Cover with lids, and screw on rings. Process in a hot water bath for 10 minutes to seal. Refrigerate jam once the jar has been opened.

The name sounds like a sweet-tooth parade, but this recipe makes sense when you pair it with a spicy scallion cornmeal waffle. Wells' Restaurant, a popular 1930s Harlem supper club, cemented the chicken and waffle combination in American culinary history; Amy Ruth's in Harlem, Beans & Cornbread in suburban Detroit and Hotville in Los Angeles continue that tradition. Almost any summer-fruit jam can be substituted in the marinade, and if you don't have peanut oil, use another oil with a high smoke point.

1 large egg
1/3 cup balsamic vinegar
1/3 cup strawberry jam (or other summer-fruit jam)
2 pounds large, thick chicken breast cutlets (about 6 pieces)
1 cup all-purpose flour
1/2 cup cornstarch
2 teaspoons kosher salt
1 teaspoon ground ginger
1 teaspoon dried thyme
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
Peanut oil (or other oil with a high smoke point), as needed (about 3 cups)
1 teaspoon kosher salt
Scallion Cornmeal Waffles, or Bacon Cornbread

Steps:

  • Prepare the marinade: In a large bowl, whisk the egg, vinegar and jam. Add chicken cutlets, turn until coated, cover and chill for at least 30 minutes or overnight.
  • Prepare the dredge: In a large bowl, whisk the flour, cornstarch and spices until combined.
  • When you're ready to fry, add enough peanut oil to a large (10-inch) cast-iron skillet to form a layer that is 1 inch deep. Heat oil over medium-high to around 300 degrees.
  • Brush off any bits of fruit from the chicken. With one hand, coat each cutlet in the seasoned flour dredge. Set coated cutlets to the side of the bowl while you coat the remaining ones. Wash your hands.
  • Fry the chicken: Working in batches to avoid crowding, and adjusting the temperature as needed to hover around the 300-degree mark, place 2 to 3 pieces of chicken at a time in the fat. Using tongs, flip the chicken at the 3-minute mark, 7-minute mark and 8-minute mark, cooking until the chicken appears to float and is golden brown. (Each batch should fry for about 8 minutes total.)
  • Transfer fried cutlets to a wire rack set over a baking sheet. Sprinkle both sides with kosher salt and cook remaining cutlets.
  • Serve chicken on a scallion cornmeal waffle, if you like, or with bacon cornbread with Cheddar and scallions. Or, for a lighter morning or midday meal, serve with a breakfast salad.

6 to 8 ounces hearty greens, such as kale, Swiss chard and collards, wilted is fine (4 to 5 cups)
2 to 4 ounces tender herbs, such as parsley, cilantro, basil and tarragon, wilted is fine (2 to 3 cups)
2 cloves garlic
1/4 cup plus 1 tablespoon extra-virgin olive oil
4 kalamata olives, pitted and finely chopped
1 teaspoon capers, drained and finely chopped, optional
Large pinch brown or granulated sugar, plus more to taste
Pinch crushed red pepper flakes
Kosher salt
1 teaspoon fresh lemon juice or white wine vinegar

Steps:

  • Remove the stems from the greens and herbs. Roughly chop or tear the leaves.
  • Set a steamer basket in a large saucepan filled with 2 inches of water. Bring to a boil and add the greens, herbs and garlic. Cover, reduce the heat to a simmer and cook until all greens and the garlic are tender, about 10 minutes. (Tougher greens like collards may take 5 minutes more.) Remove from the heat and let the mixture stand until cool enough to handle (it's OK to let it cool all the way too). Chop finely (including the garlic); you're looking to make a rough paste.
  • Heat 1/4 cup of the olive oil in a medium pot over medium heat. Add the olives and capers if using and cook, stirring, until fragrant, about 1 minute. Add the chopped greens mixture, sugar, red pepper flakes and a large pinch of salt. Reduce the heat to medium-low and cook, stirring constantly, until the greens have cooked down and dried out some, about 4 minutes. Stir in the remaining 1 tablespoon olive oil and the lemon juice. Adjust the seasoning with more salt and sugar if needed.
  • Let cool to room temperature. Refrigerate in an airtight container for up to 5 days.

4 cups salmonberries
6 ½ cups white sugar
1 (2 ounce) package powdered fruit pectin

Steps:

  • Inspect seven 8-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Crush berries. Place 1/2 crushed fruit into sieve or cheesecloth to remove some seeds if desired. Transfer all berries to a large pot.
  • Stir in sugar and bring mixture to a full rolling boil over high heat, stirring constantly. Quickly stir in pectin. Return to a full boil and boil for exactly 1 minute, stirring constantly. Remove from heat.
  • Skim off any foam with metal spoon. Ladle quickly into the prepared jars, filling within 1/8 inch of tops. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area for up to 1 year.

2 (3 1/2- to 4-pound) chickens for frying
2 tablespoons Lawry's seasoned salt or 2 tablespoons of a mixture of equal parts sea salt, freshly ground pepper, garlic powder, paprika and cumin
Vegetable oil for frying
1 cup all-purpose flour
1 cup rice flour

Steps:

  • Rinse chickens inside and out under running cold water and pat dry with paper towels. Remove extra skin and excess fat. Cut off the first joint of wings and the backs and discard. Keeping skin on, cut legs into thighs and drumsticks. Remove the wings, split the breast and cut each half crosswise into two (or ask your butcher to do this). Place pieces in a single layer in a shallow baking dish; sprinkle with seasoned salt or seasoning mix and rub to coat on all sides. Cover and set aside to marinate 1 hour.
  • Preheat oven to 250 degrees. Heat 1 1/2 inches oil, enough to cover the chicken pieces 2/3 of the way but no more, in one or two wide, deep skillets or kettles to 325 to 350 degrees over medium-high heat. As the oil heats, mix the flours in a plastic food-storage bag. Add the thighs and drumsticks; shake to coat. Remove each piece with tongs, shake off excess flour and place skin side down in the hot oil without crowding. Fry until skin is browned and crisp, about 7 minutes; turn with tongs and fry until browned and crisp and cooked through, about 7 minutes longer, adjusting heat so chicken doesn't brown too quickly.
  • Drain chicken on a wire rack set over a baking pan and keep chicken warm in the oven while coating and frying the remaining pieces: breast pieces next, about 5 minutes on each side, and wing parts last, about 4 minutes on each side. Serve while still warm. The meat will be less moist when served cold the next day, but still very tasty.

4 cups finely chopped pecans
1 large egg, beaten
1/4 cup 2% milk

2-3 dashes hot pepper sauce, such as Tabasco
Cooking spray
BOURBON BERRY JAM:
1 package (16 ounces) frozen unsweetened mixed berries
1 cup sugar
1/3 cup bourbon
1/4 cup cornstarch
SLAW:
1 package (16 ounces) tri-color coleslaw mix
1/2 cup mayonnaise
3 tablespoons sugar
3 tablespoons lime juice
2 packages (12 ounces each) Hawaiian sweet rolls, split

Steps:

  • Preheat air fryer to 375°. Flatten chicken to 1/2-in. thickness; cut each thigh in half. Place pecans in a shallow dish. In another shallow dish, whisk together egg, milk, salt, pepper and pepper sauce. Dip chicken in egg mixture, then coat with pecans. In batches, arrange chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, turning once, 8-10 minutes. , Meanwhile, combine jam ingredients in a saucepan over medium-high heat. Bring to a boil, reduce heat and simmer until thick, 1-2 minutes. Remove from heat; crush berries to desired consistency. For slaw, in a large bowl, combine coleslaw mix, mayonnaise, sugar and lime juice. To assemble, spoon 1 heaping tablespoon jam onto bottom of each roll. Layer with hot chicken and slaw; replace tops.
