BERRY ICE CREAM CHARLOTTE
Cake slices, strawberry ice cream and ganache make this a special dessert. It takes some time to prepare but it can be stored in the freezer for up to a week before serving.-Suzette Jury, Keene, California

- Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; grease the paper and set aside. , In a small bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored. Gradually beat in 1/4 cup sugar. Beat in oil and vanilla. Sift the flour, baking powder and salt together; gradually add to yolk mixture and mix well. , Beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Gradually fold into batter. Spread evenly into prepared pan. , Bake at 350° for 8-12 minutes or until cake springs back when lightly touched. Cool for 5 minutes. Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack., Line a 4-qt. bowl with plastic wrap. Unroll cake; spread jam evenly over cake to within 1/2 in. of edges. Roll up again. Cut into 1/2-in. slices; place in prepared bowl, completely covering the bottom and sides. Cover and freeze until cake is firm., For ganache, place chocolate in a bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Cool to room temperature, stirring occasionally., Spread 1 cup of ice cream into cake-lined bowl; top with 1/2 cup ganache. Repeat layers four times. Top with remaining ice cream. Cover and freeze until firm., Just before serving, remove from the freezer and invert onto a serving plate. Remove bowl and plastic wrap. Let stand for 15 minutes before cutting into wedges. Garnish with whipped cream and strawberries.

- Combine the cream, milk, and sugar in a medium, heavy saucepan. Combine the flour and the water and whisk into the mixture. Scrape the seeds from the vanilla bean into the pan and add the vanilla bean halves. Bring to a gentle boil over medium heat. Remove from the heat.
- Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.
- With a food processor, chop the berries until fine. Set aside. Turn on the ice cream maker and pour in custard. When the ice cream is 3/4 ready, pour in the berries and finish freezing. Serve immediately.

- Preheat the oven to 350˚F (180˚C). Line 3 baking sheets (work in batches if necessary) with parchment paper and grease with nonstick spray.
- Make the ladyfingers: In a large bowl, beat the egg whites and cream of tartar with an electric hand mixer until foamy. Gradually add ¼ cup sugar while continuing to beat until stiff peaks form.
- In a medium bowl, beat together the egg yolks and remaining ½ cup sugar until thick and pale in color, about 3 minutes. Gently fold the yolks into egg white mixture with a rubber spatula. Sift in the flour and salt and fold to incorporate. Transfer the batter to a piping bag or zip-top bag fitted with a large round tip.
- Release the bottom from a 9-inch springform pan and set the ring in the center of a prepared baking sheet. Starting at the center of the ring and working your way outward, pipe the batter in a spiral pattern, about 1 centimeter thick, leaving a ½-inch border around the edge. Remove the ring. With the remaining batter, pipe 40 3-inch (10-centimeter) long by 1-inch (2½-centimeter) wide cookies onto the remaining 2 prepared baking sheet.
- Bake the spiral and cookies for 15-17 minutes, until lightly golden around the edges. Do not allow to get too dark. Let cool completely.
- Make the chocolate mousse: In a large bowl, beat the cold heavy cream with an electric hand mixer until soft peaks form. Add the sugar and beat to incorporate.
- In a medium bowl, pour the hot heavy cream over the chocolate. Stir with a rubber spatula until melted and smooth.
- Fold the chocolate mixture into the whipped cream until incorporated.
- Set the spiral cake base on the bottom of the springform pan and attach the ring. There should be a small gap between the cake and the ring mold. Line the gap on the inside edge of the ring with the ladyfingers, flat sides facing in. You want a snug fit so use as many ladyfingers as needed.
- Pour the chocolate mousse into the center and smooth in an even layer. Chill until set, at least 4 hours in the refrigerator or about 2 hours in the freezer.
- Garnish the charlotte with blackberries, raspberries, chocolate shavings, and mint sprigs. Release the springform and tie a ribbon around the outside of the charlotte.
- Remove the ribbon before slicing and serving. Refrigerate any leftovers for up to 2 days.

MIXED BERRY ICE CREAM

- Place frozen berries in a large microwave-proof bowl and microwave for 30 - 40 seconds or until they have softened slightly. Do not cook them through, you just want to soften them to make them easier to work with.
- Transfer berries to a food processor and blend until they form a thick puree.
- Place a sieve above a medium sized bowl and pour the berry mixture through the sieve in batches. This will take a while and you will need to press the puree through the sieve. This is to remove the bulk of the seeds and is well worth the effort. You should be left with a thick, smooth puree. Set aside.
- Pour the cream and milk into a medium saucepan. Scrape the seeds from your split vanilla bean and add both seeds and bean to the saucepan. Over medium heat, bring the mixture to a simmer then remove from heat. Do not allow to boil. Remove vanilla bean and set cream/milk mixture aside.
- In a bowl, whisk together egg yolks and sugar until pale. Add about half a cup of the milk mixture into the egg yolks, whisking constantly, then gradually pour in the rest, again, whisking constantly.
- Transfer milk and egg mixture to a clean saucepan and set over low heat on the stove. Stir continuously and do not leave the stove at any point as the mixture can easily curdle if left unattended. Do not allow the mixture to simmer or boil.
- Allow the mixture to thicken slightly and, when it coats the back of a spoon, remove from the heat and return to a large bowl. Allow to cool slightly.
- Stir the berry puree into the custard mixture and add the lemon juice.
- Transfer to an ice cream maker and churn according to the manufacturer's instructions.
- Once the mixture reaches the consistency of soft serve ice cream, transfer to a plastic container and place in the freezer overnight to set completely.
