BERRY ANGEL DELIGHT

Steps:
- In chilled medium bowl, beat whipping cream and sugar with electric mixer on high speed until stiff peaks form. Gently stir in yogurt.
- Place cake pieces in large bowl; gently stir in yogurt mixture. In medium bowl, gently mix berries.
- Spoon half of the cake mixture into 9-inch springform pan; press firmly in pan with rubber spatula. Top with half of the berries. Repeat with remaining cake mixture; press with spatula. Top with berries. Cover and refrigerate at least 4 hours or overnight.
- Run metal spatula carefully along side of dessert to loosen; remove side of pan. Cut dessert into wedges.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
- Spread berries evenly in bottom of pan. In small bowl, mix sugar, ginger and lemon peel; sprinkle over berries. Drizzle lemon juice over top.
- Top with dry cake mix; gently shake pan to distribute evenly
- Pour melted butter over top, tilting pan to cover as much of the top with butter as possible. Bake 45 to 50 minutes or until top is light golden brown, mostly dry on top and bubbly around edges. Cool 15 minutes before serving. Top individual servings with ice cream.

- Preheat oven to 350°. Toss blackberries with 1/4 cup flour; set aside. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Combine baking soda, cinnamon, nutmeg, salt, cloves, allspice and remaining 1-3/4 cups flour; add to creamed mixture alternately with buttermilk, beating well after each addition. - 1. Preheat oven to 350 degrees. Grease cake pans. (I used two 8" round pans.)
- 2. In a mixer, combine cake mix and 12 oz. of soda. Mix until combined. Pour into cake pans and bake according to directions on the box. (Toothpick should come out clean.)
- 3. Dice your strawberries and blackberries while the cake is baking.
- 4. Once cool, place 1 round cake pan on the bottom of a baking dish, whole. Take the 2nd cake and crumble or dice it.
- 5. Add a layer of frosting. (I chose chocolate. You could replace frosting with a cool whip/pudding mix as well.)
- 6. Add a layer of diced strawberries & blackberries on top of the frosting.
- 7. Sprinkle part of the crumbled cake over the fruit. Repeat steps 5 & 6. Refrigerate before & after serving.

- Preheat the oven to 350 F and spray or grease a 9-inch square baking pan.
- In a large bowl, whisk together flour, sugar and baking powder. Cut butter into small pieces. Add egg, milk, butter and lemon peel; mix just until dry ingredients are moistened. You may need to finish mixing with your hands to get all the flour incorporated. the batter will be very thick.
- Fold in the blueberries. Because the batter is so thick, this may take a few minutes. Spread into a greased 9-in. square baking pan.
- For topping, combine sugar, flour, walnuts and cinnamon in a mini food processor or bowl. Add butter and process, or cut in if doing by hand, until mixture is crumbly. I like to do this with my fingers so I can tell when it's ready by touch. Sprinkle over batter. Bake at 350 degrees F for 40-45 minutes or until cake tests done.
- For drizzle, combine the powdered sugar and milk. If too thick, add a few drops of additional milk at a time until it reaches drizzling consistency. Drizzles over the top of the cake and allow to sit until sugar solidifies.

RED, WHITE AND BLUE BERRY DELIGHT

- Place cut strawberries into a medium bowl.
- In a small bowl, mix together the orange juice, sugar and Blue Curaçao.
- Pour over the strawberries and gently toss to completely coat.
- Cover and refrigerate at least two hours before using.
- Preheat oven to 325 degrees F.
- Prepare a 9 X 5-inch loaf pan by spraying with with cooking spray and lightly flouring it.
- Cream the butter.
- Slowly add the sugar and beat until light.
- Add the eggs, one at a time and beat until well incorporated.
- Add the vanilla.
- Stir in the flour and salt and mix well.
- Pour into prepared pan.
- Bake for 1 1/4 to 1 1/2 hours or until a toothpick inserted into the middle comes out clean.
- Cool in the pan for 5 minutes.
- Then run a knife around the sides of the cake to loosen it before turning it out on a wire rack to cool completely.
- Cut half the loaf into one inch cubes.
- Pour the whipping cream into a mixer and beat at medium for about 3 minutes until soft to medium peaks form. Gradually add sugar while beating.
- In a trifle bowl, place a single layer of poundcake cubes on the bottom.
- Cover with a third of the Strawberries Lenox and remember to use that juice!
- Sprinkle with 1/3 of the blueberries.
- Evenly spread 1/3 of the whipped cream to cover the bottom layer.
- Repeat process until reaching the top of the bowl.
- Top with remaining whipped cream, sprinkle with a few blueberries and seal the deal with those whole strawberries.
- Refrigerate until serving.
