A perfect mix of breakfast flavors in one powerful little cup. So many layers to love: yogurt, chia seeds, quinoa, fresh berries, almonds, cinnamon. Make it the night before and grab some extra zzzzs.

Steps:
- In medium bowl, stir together milk, yogurt and chia seed until blended. Evenly divide mixture among 4 glasses. Spoon 1/4 cup cooled cooked quinoa on top of yogurt layer on each.
- Top each with a layer of fruit and almonds. Sprinkle with cinnamon. Let stand 5 minutes, or cover and refrigerate overnight.

BLUEBERRY LEMON BREAKFAST QUINOA
Sweet blueberries and tart lemon pair well in this alternative to oatmeal. High in protein and fiber, quinoa is a great start to your day! I made this up one morning when I had a craving for quinoa and was looking for a change from the usual. Top with extra milk for a thinner consistency. Also good with a sprinkle of cinnamon or nutmeg.

Steps:
- Rinse quinoa in a fine strainer with cold water to remove bitterness until water runs clear and is no longer frothy.
- Heat milk in a saucepan over medium heat until warm, 2 to 3 minutes. Stir quinoa and salt into the milk; simmer over medium-low heat until much of the liquid has been absorbed, about 20 minutes. Remove saucepan from heat. Stir maple syrup and lemon zest into the quinoa mixture. Gently fold blueberries into the mixture.
- Divide quinoa mixture between 2 bowls; top each with 1 teaspoon flax seed to serve.

BLUEBERRY QUINOA BREAKFAST BARS
Steps:
- Preheat the oven to 350 degrees F. Line a 9"x 9" baking sheet with parchment paper and grease the sides with cooking spray.
- In a large mixing bowl, whisk together the oats, quinoa, sugar, baking powder, and hemp seeds.
- In a separate bowl, mix the banana, nut butter, flax eggs, lemon juice and vanilla. Pour this mixture over the dry ingredients, mixing everything together until fully incorporated. The batter should be moist, but not runny. Fold in the blueberries
- Transfer the batter into the prepared pan and smooth with a spatula.
- Bake on the center rack for 25 - 35 minutes until the bars are golden brown and firm to the touch.
- Remove and let cool completely in the pan, then remove and slice into squares (or rectangles). Store in an airtight container for 4 - 5 days.

- Combine the quinoa, water, milk, vanilla, cinnamon, and salt in a small saucepan. Heat on high until it comes to a boil, and then cover and reduce heat to low.
- Simmer for 15-20 minutes, stirring occasionally, until the quinoa is cooked through and creamy. It should have an oatmeal-like consistency.
- Remove the pot from the heat, stir in the honey, and let cool for a few minutes. The quinoa will thicken as it cools, so if needed stir in an extra few tablespoons of milk/milk substitute to keep it smooth and creamy.
- To serve, split the cooked quinoa into 2 bowls. Top each bowl with 1 tablespoon peanut butter, 1/4 cup raspberries, and 1/2 tablespoon hemp seeds. Garnish with another splash of milk, sprinkle of cinnamon, and drizzle of honey if desired (highly recommend!).

- Place quinoa in a fine-mesh strainer and rinse thoroughly with cool water for at least 2 minutes. Drain. Rinsing quinoa before cooking will remove its natural bitter or soapy taste.
- Transfer to a medium saucepan, cover with 1 cup of water, cover with a lid and bring to a boil. Reduce heat and cook for 15 minutes on the lowest setting, or until quinoa is tender and water is almost absorbed.
