Berry spinach salad is the perfect spring and summer salad recipe - and it only takes 5 minutes to make! Fresh strawberries, raspberries and blueberries are tossed with baby spinach, goat cheese, red onions and pecans, then drizzled with a sweet and tangy raspberry vinaigrette.

1 cup strawberries (halved)
1/2 cup raspberries
1/2 cup blueberries
1/3 cup goat cheese (crumbled)
1/3 cup red onion (thinly sliced)
1/4 cup pecans (roughly chopped)
1/2 recipe Raspberry Vinaigrette

Steps:

  • Add the spinach, strawberries, raspberries, blueberries, red onion, goat cheese and pecans to a large mixing and toss together.
  • Serve the salad with the raspberry vinaigrette dressing.

1 package (5 ounces) spring mix salad greens
1 cup (4 ounces) crumbled blue cheese
1 cup fresh blueberries
1 cup pecan halves, toasted
VINAIGRETTE:
1/2 cup olive oil
2 tablespoons champagne vinegar or white wine vinegar
2 tablespoons raspberry vinegar
1/8 teaspoon pepper
Dash salt

Steps:

  • In a salad bowl, combine the salad greens, cheese, blueberries and pecans., In a small bowl, whisk the vinaigrette ingredients. Drizzle over salad and toss to coat. Serve immediately.

This is a dessert 'salad' with raspberry Jell-O and crushed pineapple. You can also change it around to your specified taste.

2 (3 ounce) packages raspberry flavored Jell-O® mix
2 cups hot water
1 (20 ounce) can crushed pineapple, drained
1 (21 ounce) can blueberry pie filling
1 (8 ounce) package cream cheese
½ cup white sugar
1 cup sour cream
1 teaspoon vanilla extract

Steps:

  • Combine hot water and gelatin; stir until dissolved. Stir in pineapple and blueberry pie filling. Pour into a 9x13 inch dish and chill in refrigerator until firm.
  • Cream together cream cheese and sugar. Beat in sour cream and vanilla. Spread over firm gelatin. Chill until serving.

1/2 cup fresh blueberries
1/4 cup blue cheese, crumbles
1/2 cup thinly sliced red onion
1/3 cup extra virgin olive oil
1/3 cup orange juice
2 tablespoons fresh lemon thyme leaves
1 tablespoon minced shallot (optional)
sea salt
fresh ground black pepper
1/4 cup toasted almond, slivered

Steps:

  • Place greens, blueberries, blue cheese and red onion in a serving bowl.
  • In a smaller bowl, whisk together olive oil, orange juice, lemon thyme leaves, shallot if desired, and salt and pepper to taste.
  • Toss salad with the dressing and garnish with roasted, sliced almonds.

1 cup farro
3 cups water
Kosher salt and black pepper
1 pound large shrimp, peeled and deveined
1 container (5 ounces) baby kale blend or other salad greens
1 cup blueberries
1 1⁄2 cup cooked beets, cut into quarters
2 tablespoons crumbled feta cheese
2 tablespoons toasted pecans
1 1⁄2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon maple syrup
2 1⁄2 tablespoons extra virgin olive oil
Kosher salt and black pepper

Steps:

  • Farro Salad: Place the farro, 3 cups water and a pinch of salt in a medium saucepan and bring to a boil. Reduce to a simmer and cook until tender, about 30 minutes. Drain the farro and set aside. Heat a grill pan over medium high heat and spray with cooking spray. Season the shrimp with a pinch of salt and pepper and add them to the grill. Cook about 3 minutes on each side until opaque. Remove from grill. To assemble the salad, toss the cooked farro, salad greens, blueberries, and beets together in a large bowl with the dressing. Top the salad with the grilled shrimp, feta, and pecans.
  • Lemon Dressing: Whisk the lemon juice, mustard, maple syrup, and olive oil together in a bowl. Season the dressing with a pinch of salt and pepper.
