8 ounces whipped topping
2 cups mini marshmallows
2 cups strawberries (washed & cut)
¾ cup blackberries (washed )
¾ cup raspberries (washed )
¾ cup blueberries (washed )

Steps:

  • Combine cottage cheese and dry Jell-O powder in a bowl.
  • Fold in whipped topping.
  • Gently fold in all remaining ingredients. Refrigerate at least 2 hours before serving.

1/4 cup honey
2 tablespoons poppy seeds

  • In a small bowl, whisk together the lime juice, honey, and poppy seeds.
  • Place the berries in a large bowl and drizzle the dressing over the top. Toss gently to coat.

1 medium red apple, diced

1/2 cup slivered almonds, toasted
DRESSING:
1 cup fresh cranberries
1/2 cup sugar
1/2 cup cider vinegar
1/4 cup thawed apple juice concentrate
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon grated onion
1 cup canola oil

Steps:

  • Combine the first six ingredients. To make dressing, pulse next seven ingredients in a blender, covered, until well mixed. While processing, gradually add oil in a steady stream. Drizzle desired amount of dressing over salad; toss to coat. Refrigerate any leftover dressing.

1 tablespoon good balsamic vinegar
1/4 cup sugar
Fresh mint, for garnish

Steps:

  • Place 6 glasses in the refrigerator.
  • In a large bowl, combine the berries, vinegar and sugar. Stir gently. Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Spoon the berries into the chilled glasses. Garnish with a sprig of fresh mint.

2 cups torn romaine lettuce
1 cup torn radicchio
1 cup torn escarole
1 cup torn red leaf lettuce
1 cup snow peas
½ cup sliced fresh strawberries
1 cup diced cooked ham
½ cup diced Muenster cheese
½ cup raspberry vinegar
½ cup canola oil
8 packets artificial sweetener
2 teaspoons Dijon mustard
¼ teaspoon dried oregano
¼ teaspoon freshly ground black pepper

Steps:

  • Place the romaine, radicchio, escarole, and red leaf into a colander. Rinse, drain and set aside. Rinse the peas and cut into thirds. Transfer the mixed greens and peas into a large bowl, and gently toss in the cheese, ham and strawberries. Set aside.
  • In a shaker container or a jar with lid, add the vinegar, oil, sweetener, mustard, oregano and pepper and shake well. Add up to two additional packets of sweetener, if desired. Pour over salad just before serving, or pour into a serving container and pass.
