½ cup fresh raspberries
1 teaspoon white sugar
¼ cup balsamic vinegar
¼ cup extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons honey

Steps:

  • Muddle blueberries, strawberries, and raspberries together with sugar in a bowl until combined.
  • Pour mixture into a blender and add balsamic vinegar, oil, Dijon, lemon juice, and honey. Blend until smooth.

1 tablespoon white sugar
⅔ cup balsamic vinegar
¼ cup olive oil
1 tablespoon honey
½ teaspoon salt

Steps:

  • Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture into a jar with a lid; add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator.

1 pint blueberries, rinsed and drained
2 pints strawberries, cleaned, hulled and halved if large
1/2 cup honey
2 -3 tablespoons balsamic vinegar
1 pint raspberries
1 grated orange, zest of
sour cream (optional) or vanilla yogurt (optional)

Steps:

  • Place cleaned blueberries and strawberries in a medium bowl.
  • In a small bowl, whisk honey and balsamic vinegar together. Pour over berries.
  • Cover and refrigerate for 2 hours.
  • To serve, quickly rinse and drain raspberries.
  • Add raspberries and orange zest to the salad.
  • Toss gently and serve with a dollop of sour cream or yogurt, if you like. Enjoy!
  • Serves 6 to 8.

4 cups frozen, thawed or fresh blueberries
1 quart balsamic vinegar
1/4 cup sugar
Lime peel cut in strips from 1 lime (green part only)
1 (3-inch) cinnamon stick

Steps:

  • In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.
  • Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.
  • Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beef.

½-1 teaspoon vanilla
Pinch of cinnamon
2 tablespoons sugar or more to taste ((I used 3 tablespoons))

Steps:

  • Put washed and hulled berries in bowl of food processor. Add remaining ingredients and puree to desired consistency. I pureed it smooth but you can leave it a little chunky if you like.
  • Chill. Serve over ice cream, cheesecake, pound cake or good Greek yogurt.

6 salmon fillets (skin on (each about 5 oz/140 g))
1 bunch asparagus (about 1 lb/500 g, trimmed)
12 cups (3 L) baby arugula
1 grapefruit (segmented into supremes)
1/4 red onion (thinly sliced)
1/3 cup (75 mL) sliced natural almonds
1/2 cup (125 mL) E.D.SMITH TRIPLE FRUITS® Raspberry Strawberry & Blackberry Fruit Spread
1/2 cup (125 mL) balsamic vinegar
1/3 cup (75 mL) olive oil
2 shallots (minced)
1 tbsp (15 mL) grainy mustard
1 tsp (5 mL) salt
1/2 tsp (2 mL) freshly ground pepper

Steps:

  • Berry Balsamic Vinaigrette: Whisk together berry spread, vinegar, oil, shallots, mustard, salt and pepper until combined.
  • Preheat grill to medium-high; grease grate well. Marinate salmon in half of the Berry Balsamic Vinaigrette for 10 minutes. Toss asparagus with 2 tbsp (30 mL) of the vinaigrette. Place salmon skin side up on grill; grill for 4 to 6 minutes per side or until fish flakes easily with a fork. Grill asparagus for 4 to 6 minutes or until tender-crisp; cut into bite-size pieces.
  • Toss arugula with remaining vinaigrette; toss gently with asparagus, grapefruit and red onion. Divide salad among 6 plates; top each with salmon fillet. Garnish with almonds. Serve immediately.
