This Kombucha Float with Summer Berries is a 3 ingredient summertime dessert. Probiotic kombucha gets poured over coconut ice cream and fresh berries for an easy dairy free recipe.

1 cup cold heavy cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla bean paste (or seeds from 1 vanilla bean)
1 cup mixed berries
2 pints vanilla ice cream
1 1-liter bottle red cream soda

Steps:

  • Make the vanilla whipped cream: Whisk the heavy cream, confectioners' sugar and vanilla bean paste in a large bowl until stiff peaks form.
  • Alternate the berries and 2 scoops ice cream in each of 4 glasses. Pour in the soda, then top each glass with a large dollop of vanilla whipped cream.
