- In a bowl of a kitchen aid mixer dissolve yeast in warm water. Add the milk and next 5 ingredients. Then beat in flour, 1 cup at a time, on medium-high speed for 1 minute. Dough will be sticky. Work 1/4 of the dough at a time. Place on a well-floured board and roll dough to about 1/8 inch thick. Cut dough into 2 inch squares (irregular shapes are OK). Preheat oil to 370 degrees. Fry squares in oil, just a few at a time. When they rise to the surface, flip and cook until golden brown. Drain on paper towels. Dust with powdered sugar, or cinnamon sugar. Serve warm.
BERNER BREZELI
I posted this recipe on request. You need a special iron for this. Brezeli is a Swiss speciality and this particular recipes comes from Bern, the capital. Since I don't have a Brezeli iron (it is quite expensive!), I havn't tried it. I found it on a German Forum where a Swiss girl was looking for Brezeli recipes. I first tried to convert the recipe into cups, but it's slightly more complex than I thought. However, you may use www.recipes4us.co.uk/us_cups_to_weight.htm to convert it if you don't have a scale. The recipe doesn't say anything of buttering the iron. So try the first four without buttering/oiling and see how it works. If it sticks, use melted butter or oil every time. The preparation time is a guess. I also haven't got a clue how many cookies it will yield and I filled in 8 servings because you need to fill in something.

Steps:
- Whip butter, sugar, salt and lemon zest until frothy.
- Mix in the flour and knead until you have a nice dough.
- Leave to rest for at least 1/2 hour.
- Form rolls of the thickness of a finger.
- Cut rolls intos small pieces and form balls of the thickness of a hazelnut.
- Put 4 balls on the ornaments of the iron.
- Close iron with care.
- Slightly press iron while brezeli are baking.
- Keep in a metallic box.

I'm really excited to show you this recipe, not only because it's one of the best beef stews ever, but also because after we enjoy this in stew form, we're doing a follow-up video using this to make some of the most incredible tacos you've ever had. If you like beef stew, and you're a fan of chili, you're going to go nuts over this. Serve with lime wedges as-is, or with warm flour tortillas, chili oil, salsa, or diced avocado next to some Spanish rice and a nice green salad.

- Cut each beef short rib through the middle, all the way down to the bone. Cut beef chuck in half; cut each half into 3- to 4-inch pieces.
- Place beef chuck and short ribs into a soup pot and season with salt, black pepper, oregano, cumin, cinnamon, and cloves. Toss very thoroughly until the meat is evenly coated with the spices, 2 to 3 minutes.
- Cover and transfer into the refrigerator for at least 6 hours, or overnight.
- Prep guajillo chiles by snipping off stems with scissors; slice open and scrape or shake out the seeds onto a plate to discard.
- Heat olive oil in a saucepan over medium heat. Add dried guajillo chiles and toss in the hot oil, about 30 seconds. Add chopped onion, garlic, and ginger; toss to combine. Add tomatoes and water, raise heat to high, and bring the mixture to a simmer. Reduce heat to medium-low and let simmer for 30 minutes.
- Turn off heat and use an immersion blender to blend the mixture as smooth as possible, or transfer to a regular blender, working in batches as needed.
- Remove the soup pot with meat from the refrigerator. Strain the reserved chili mixture into the pot using a large mesh strainer. Add bay leaves, honey, vinegar, and chicken broth.
- Bring to a boil over high heat, and then lower to medium-low. Simmer gently, stirring occasionally, until the meat is falling-apart tender, 3 to 4 hours. Skim fat off of the top and reserve for future birria queso tacos.
- Place some chunks of beef into a soup bowl and ladle some of the cooking liquid over top. Top with white onion and chopped cilantro and squeeze lime juice over top.

- In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
- Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
- Shake confectioners' sugar on hot beignets. Serve warm.

- Peel the parboiled potatoes, grate into thin strips and mix with the salt.
- Heat the butter and lard (or all butter) in a non stick frying pan. Add the diced bacon and potato and fry gently, stirring frequently.
- Bring together into a cake and cover with an upside-down plate. Fry over gentle heat for 20 minutes.
- Pour the milk over the top and fry, covered, for about another 10 minutes. Tip out onto the plate and serve .
