I have tried dozens of pizza crust recipes, and this one stands out as the very best as far as taste, and ease of preparation. I usually make about a dozen and freeze as necessary to always have them on hand when needed (which is often).

Steps:
- Add the ingredients to the bread machine in the order given by the manufacturer (liquids first, followed by drys, and finally yeast).
- Process on the "dough" cycle for 1 1/2 hours then turn out onto a floured surface.
- Divide into (2) equal sized dough balls. Knead each ball in your hands for a few minutes, then set under a towel for 15-20 minutes to rest.
- Stretch or roll each dough ball seperately into a 14-inch circle, and prebake on a lightly oiled pizza pan, or cornmeal dusted pizza stone for approximately 5 minutes in a 375 degree oven.
- Refrigerate crusts up to a week. Freeze for even longer if necessary.
EASY BREAD MACHINE PIZZA CRUST
This is from an Italian lady from church. This made a wonderful 16 inch pizza. The herbs in the crust are a nice touch. Try this it is easy and a nice dough to work with and best of all tastes great. Baking time does not include bread machine mixing and rising.

- Add all ingredients to bread pan in the order given.
- Select dough cycle.
- Add water if too dry. A little at a time.
- After dough cycle is complete, roll dough or stretch to fit pizza pan.
- We sprinkle our dough pan with cornmeal but its just an option.
- No need to let dough rest again just start loading up with sauce and toppings.
- Bake pizza at 450 for 15-20 minutes.
- Enjoy!

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA
This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

- To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
- Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
- Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
- To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
- To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

BREAD MACHINE PIZZA CRUST
I'm adding this recipe for the benefit of friends and family because I have this recipe memorized! This is based on Laura Brody's recipe from her book, Bread Machine Baking. This one is customized for the Panasonic/National. I also didn't divide the dough into 2 pieces -- I simply use the entire dough to make a thick-crusted pizza that fits the dimension of my pizza stone.

Steps:
- Place all ingredients in the bread machine in the order recommended by the manufacturer.
- Program the machine for the dough setting and press start.
- After the cycle completes, remove the dough from the machine and let it rest for 10 minutes at room temperature.
- If you have a pizza stone or tiles, place them on the middle rack of the oven.
- Preheat the oven to 450 degrees farenheit.
- Sprinkle either a wooden pizza paddle or a heavy-duty cookie sheet with additional cornmeal.
- Use your hands or a floured rolling pin to form a flat 10- to 12-inch disk.
- Place the rolled-out dough onto either the pizza paddle (if using) or the cookie sheet.
- Optional: place shredded cheese, such as mozzarella, around the perimeter and roll the dough over the cheese for a thick cheese-filled border.
- Add the toppings of your choice (I frequently just top with canned pizza sauce, shredded mozzarella cheese, sausage and/or pepperoni, sliced mushrooms and olives).
- Slide the pizza onto the hot stone or tiles (if using) or slide the cookie sheet into the oven.
- Bake for 18 minutes (or adjust the time based on how you divided the dough and on the thickness of the crust).
- Serve hot.

BREAD MACHINE PIZZA CRUST AND DAIRY FREE TOPPINGS
This makes an awesome vegan pizza! The kids love it. I found this dough recipe online (Mitch Mandell with fabulousfoods.com) and it is so delicious and easy to prepare. We experimented with different cheese alternatives and the rice cheese has the best flavor and best melting properties. Prep time is minimal (includes placing items in bread machine and later assembling the pizzas). Prep time listed includes the bread machine time. Place the ingredients in the bread machine, go away for an hour and a half, and come back and make homemade pizza. What a treat! I altered the recipe to use less yeast (1 packet or approx 2 1/2 tsp rather than the suggested 2 Tablespoons in the original recipe). Be sure to use the dough right after it comes out of the machine for the best elasticity! Cooking time is approximate. Everyone can enjoy this, even folks who aren't on a dairy free diet. The taste is great!

- Place liquid ingredients into the bread machine.
- Place flour and salt in the bread machine.
- Make a well in the top of the flour and pour in the yeast.
- Close the machine and set it to the dough setting (follow your machine's instructions).
- When the machine beeps and the dough is ready, sprinkle some flour on a working surface and form the dough into 2 balls (or one for a REALLY thick pizza).
- Flatten it while pressing from the center outwards. Stretch the dough while turning it. Once it's the right size for your preference, you are ready to put it on a pan.
- Grease a cookie sheet or pizza pan and, if desired, for a pizza shop flare, you can sprinkle a light dusting of cornmeal on the surface before placing the dough down (be sure none of the cornmeal is left exposed, or it will smoke when you put it in the oven!).
- I like to stretch my dough to the edge of a cookie sheet pan and then pinch the edges up.
- Prick the dough with a fork all over (to keep it from bubbling up and to allow it to hold the sauce well).
- Drizzle small amount of olive oil (nice flavor) over the dough. I spread mine around with clean fingers.
- Add toppings - pizza sauce and then whatever you want. We like mushrooms, diced red pepper, and diced onion. Be creative!
- Top with the cheese substitute (we used to use Rice cheese until we learned that it contained milk proteins. Read labels carefully and select a smooth melt mozzarella alternative).
- Cook in a preheated 400 degree oven until the crust and cheese lightly browns.
- Serve and enjoy!

BASIL BEER PIZZA CRUST
From Canada's Best Bread Machine Baking Recipes book. This recipe can be made in a bread machine, or by hand. I usually make two pizzas from this recipe and have leftovers, but you could roll it out into one larger pizza and/or thicker crust.

- If using a bread machine, simply add all the ingredients in the order given. Make sure that the salt and yeast do not touch, and that the yeast does not touch the liquid, especially if you have a bread machine that preheats the ingredients.
- If making by hand:.
- Pour beer into a cup and sprinkle the yeast on top. Let sit for about 5 minutes or until yeast starts bubbling and foaming.
- Mix all dry ingredients. Slowly add in beer and yeast mixture. Combine all ingredients.
- Kneed dough on a cutting board or countertop for approximatley 8-10 minutes. Use flour on the counter top and your hands to ensure it doesn't stick. The dough is ready when it's elastic and you can see little bubbles in it.
- Place dough in a bowl (spray first with non-stick spray) and cover with a dish towel. Place somewhere warm (I use the oven preheated to about 200F and then cooled off). Let rise for about 30-40 minutes, or until doubled in size.
- Roll out dough using a rolling pin. Top with whatever you like!
- Bake in 475F preheated oven for 8-10 minutes. If using a pizza stone, make sure you preheat the stone in the oven.
- When the crust is brown and the cheese is browning, remove from the oven and let pizza stand for a few minutes. This will allow the cheese to solidify and make it easier to cut.
