After a friend who had recently traveled to Baltimore sent me a package of Berger cookies, I was hooked. They disappeared so quickly, I decided to try to re-create them at home. After many tests and tweaks, my husband and I gained 6 pounds between the two of us, but it was worth it-I landed on a reproduction of the famous cookie I'm so proud of. -Marina Castle Kelley, Canyon Country, California

1 cup unsalted butter, softened
1-1/2 teaspoons salt
2 teaspoons vanilla extract
1 tablespoon baking powder
1-1/2 cups sugar
3 large eggs, room temperature
4-1/2 cups all-purpose flour
1 cup sour cream
CHOCOLATE ICING:
4 tablespoons unsalted butter
3-1/2 cups semisweet chocolate chips
4 ounces unsweetened chocolate, chopped
2 tablespoons light corn syrup
1-1/2 cups sour cream

Steps:

  • Preheat oven to 400°. Beat butter, baking powder, salt and vanilla until combined. Add sugar; beat until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour alternately with sour cream, beginning and ending with flour; do not overmix., Drop by 3 tablespoonfuls onto greased baking sheets. With wet fingers, flatten each into a 3-in. circle., Bake 10 minutes or until edges start to brown. Cool on pan 5 minutes; remove to wire racks to cool completely. , For icing; in a small saucepan, stir icing ingredients over low heat just until chocolate melts and mixture is smooth. Remove from heat; cool to room temperature. Using a hand mixer, beat on high until mixture thickens and becomes lighter in color, 6-7 minutes. , Spread 2 Tbsp. icing over flat side of each cookie; let stand until set. Store in an airtight container in the refrigerator.

For the cookies:

1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 cup sugar
1 egg
1 1/2 cups flour
1/3 cup milk
For the icing:
2 cups semisweet chocolate chips
1 1/2 tablespoons light corn syrup
1 teaspoon vanilla
3/4 cup heavy cream
1 1/2 cups confectioners' sugar

Steps:

  • Preheat the oven to 400 F. Line 2 baking sheets ( like to make cookies on stones...perfect edges and evenly baked to perfection! with parchment paper of Silpat mats and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, salt, vanilla, and baking powder. Add in sugar, then egg and blend to incorporate. With the mixer on low, alternately add the flour and milk, beginning and ending with the flour. Mix until just blended. Drop teaspoon sized drops of dough onto the prepared baking sheets, spacing about 3 inches apart. Using the bottom of a greased glass, flatten each cookie to about 1 1/2 inches. Bake for 10-11 minutes until the bottom of the cookies are just beginning to brown. Be sure not to overbake the cookies, they should be soft and cake-like. Cool cookies on pans for 5 minutes before transferring to a rack to cool completely. While the cookies are cooling, make the icing. Place chocolate chips, corn syrup, vanilla and cream in a microwave safe bowl and microwave in 30 second intervals until chocolate begins to melt. Stir mixture until smooth. Add in confectioners' sugar and stir until blended completely. Allow icing to cool to room temperature. Dip the bottom of the cooled cookies into the icing and place icing side up on baking sheets. After all cookies have been dipped, dollop remaining icing on top of iced cookies (you want LOTS of icing!) and evenly spread using a small knife. Allow icing to set. Store cookies in an airtight container at room temperature. Note: Icing will set completely in about 6 hours, but you can of course eat them before it has set. Just don't store them until the icing is hardened.

1/3 cup Butter, softened (5 1/3 T)
1 oz Cream Cheese, softened
1/2 cup Lakanto Granular Sweetener
1/2 tsp. Sea Salt
1 tsp. Vanilla Extract
1 tsp. Baking Powder
1 Egg
3/4 cup Almond Flour
2 tsp. Gelatin
2 T Lupin Flour
1/3 cup Almond Milk (unsweetened)
1 cup Lily's Chocolate Chips
1/2 cup Heavy Cream
1/4 cup Lakanto Confectioner's Sweetener
Leftover Fudge Dip
8 oz Mascarpone

Steps:

  • To Make The Cookies: Preheat oven to 400. Line a baking sheet with parchment paper and set aside. In a mixing bowl, cream together butter, cream cheese, salt, vanilla, and baking powder. Beat in the Lakanto sweetener, then the egg. In a separate bowl, whisk together almond flour, lupin flour, and gelatin. Alternate mixing the dry ingredients and the almond milk in with the wet ingredients, until just combined.. Use a cookie scoop to scoop cookies onto the cookie sheet. Use a wet hand to flatten the cookies to about 1/2" thick. Leave 2" between cookies for expansion. Bake at 400 for 10-11 minutes, until the JUST start to brown. The cookies are supposed to be soft and cake-like, so take them out at the very first sign of browning on the bottom. To Make The Fudge Dip: After the cookies have cooled, add the heavy cream, chocolate chips, and Lakanto sweetener to a glass microwave-safe bowl. Microwave on high for 2 minutes, then remove from the microwave and whisk to melt the rest of the chocolate chips until the fudge is smooth. Dip the top and side of each cooled cookie in the warm fudge, then set on a wire rack to cool and harden. To Make the Mascarpone Fudge Icing While the excess fudge from dipping is still warm, add it to a large mixing bowl with 8oz of Mascarpone cheese. Whip until the mixture is smooth and fluffy. Scrape the icing into a large pastry bag with a wide tip on it, and layer on the cookies in large piles of fudgey icing. Enjoy!

Berger Cookies are thick, soft, almost cake-like cookies covered with a thick layer of rich chocolate fudge frosting! These Maryland favorites have been around since the 1800's when German immigrant Henry Berger brought them to America and started a bakery in East Baltimore.

1/3 cup salted butter (softened)
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 cup granulated sugar
1 large egg
1 1/2 cups King Arthur Unbleached All-Purpose Flour
1/3 cup milk
2 cups semisweet chocolate chips
1 1/2 Tablespoons light corn syrup
3/4 cup heavy cream
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1/8 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F. Line two baking sheets with parchment paper or a silicon mat.
  • Beat butter, salt, vanilla, and baking powder until smooth. Add sugar and beat until creamy. Beat in the egg.
  • Add the flour alternately with the milk in 2-3 additions, mixing between each addition just until combined. Do not overmix.
  • Use a small cookie scoop to drop about 1 tablespoon of dough onto the parchment paper for each cookie, spacing them 2-3 inches apart so they have room to spread when they bake. Wet your fingers or the bottom of a glass and gently press each cookie to flatten slightly into a circle roughly 1 1/2" in diameter.
  • Bake for 9-11 minutes. The cookies are done when they are lightly browned on the bottom but still pale on top, with only the slightest bit of browning around the edges. Don't overbake.
  • Make the icing while the cookies cool by heating the chocolate chips, corn syrup, and cream in a medium microwave-safe bowl for 60-90 seconds, stopping every 20 seconds to stir until completely melted. Add the vanilla, powdered sugar, and salt. Beat well using a hand mixer until smooth. Let the icing cool slightly before decorating the cookies. If it is too warm, it will run off the cookies.
  • Dip the bottoms of each cookie into the warm icing then place them upside down on the baking sheet and top each cookie with more chocolate icing until it is all used up. It will be a lot of chocolate on each cookie, but it's delicious!
  • Let the cookies sit out at room temperature until the icing has set, then transfer the cookies to an airtight container and store on the counter at room temperature for 3-4 days.
  • These cookies can also be frozen for 2-3 months. Just thaw on the counter before enjoying.

4 drops green food coloring
½ teaspoon water
¼ cup flaked coconut
48 vanilla wafers
24 chocolate covered thin mints
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a bowl, combine food coloring with a few drops of water. Add coconut and cover the container, shake until coconut is tinted. Set aside.
  • Place 1/2 of the vanilla wafers, flat side up, in an ungreased cookie sheet. Top each wafer with a peppermint patty. Place in the oven about 1 minute or just until chocolate begins to soften.
  • Remove cookies from oven and sprinkle each mint with 1/2 teaspoon coconut (for lettuce). Place another vanilla wafer on top and press gentle. With a clean paint brush, brush the top of each hamburger with just enough water to moisten so that the sesame seeds will stick when sprinkled on top of each cookie. NOTE: You can use canned chocolate frosting in place of peppermint patty, then eliminate the baking.

They are cake-like cookies piled with thick, rich chocolate icing. The cookies themselves are on the dry side, so the icing is there to help provide moisture and richness. Store in single layers in an airtight container at room temperature for up to 5 days.

1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon kosher salt
½ cup white sugar
1 large egg

½ cup heavy whipping cream
2 tablespoons light corn syrup

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Position oven racks in top and bottom thirds of oven. Line two large rimmed baking sheets with parchment paper.
  • Beat butter, vanilla, baking powder, and salt together in the bowl of a stand mixer fitted with a paddle attachment on medium-high speed until creamy, about 3 minutes, scraping down the sides of the bowl as needed.
