BEN & JERRY'S BUTTER PECAN ICE CREAM
Another one of Ben and Jerry's released recipes for making at home. Enjoy! Cooking time is however long it takes your ice cream freezer.

Steps:
- Melt the butter in a heavy skillet over low heat.
- Add the pecans and salt and saute, stirring constantly, until the pecans start to turn brown.
- Drain the butter into a small bowl.
- Transfer the pecans to another bowl and let cool.
- Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
- Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
- Pour in the cream and milk, and whisk to blend.
- Add the melted butter and blend.
- Transfer the mixture to an ice cream maker and freeze following the manufacturer's directions.
- After the ice cream stiffens (about 2 minutes before it is done), add the pecans, then continue freezing until done.

- Whip the eggs and sugar together with a whisk until fluffy (but not firm).
- Add the rest of the ingredients into the eggs and sugar.
- Whisk together until well mixed.
- Place in ice cream maker and follow it's directions to make.

- Place the shaved chocolate flakes and the cherries in separate bowls; cover and refrigerate.

VARIATION: Chocolate Almond- Add 1 cup roasted whole almonds (salted or unsalted) after the ice cream stiffens, about 2 minutes before it is done, then continue to freeze until the ice cream is ready.

- Gradually whisk chocolate into the milk and heat, stirring constantly, until smooth.
- Remove from the heat and let cool.
- Whisk the eggs in a mixing bowl until light anf fluffy, 1-2 minutes.
- Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
- Add the cream, vanilla and salt and whisk to blend.
- Pour the chocolate mixture into the cream mixture and blend.
- Cover and refrigerate until cold, about 1-3 hours, depending on your refrigerator.
- Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
