RUSTIC ITALIAN PIZZA DOUGH RECIPE

The absolute best, easy, thin and crispy rustic Italian pizza dough recipe you will ever make.

5 cups all purpose or 00 flour (+ some for dusting)
1 1/2 tsp active dry yeast
1 1/2 tsp sea salt
2 1/4 cups COLD water
1 tbs extra virgin olive oil
Caramelized onions
Arrabiata Sauce
Heirloom Tomatoes
Fresh Basil
Green Onions
Smoked Mozzarella Cheese
Sauteed Mushrooms
Ricotta Meatballs

Steps:

  • Preheat your oven as high as it will go for at least 45 minutes to one hour.
  • In the bowl of your kitchen aid and using the paddle attachment mix the flour, sea salt and active dry yeast (
  • Switch to the dough hook and mix together on low speed for 8 to 10 minutes. The dough should be smooth and sticky but should not stick to the sides of the bowl, only a little to the bottom.
  • (If the dough sticks to the sides sprinkle in a little more flour, if it is too dry then add a bit more water).
  • After the 8 minutes have passed remove the dough from the kitchen aid and cut it into 6 pieces and form them into rounds. Place them on a lightly oiled cookie sheet and drizzle with 1 tbs of extra virgin olive oil. Cover with plastic wrap and allow to sit at room temperature and rise for 2 hours in a draft free area. ( I prefer the oven )
  • Sprinkle the counter with a little bit of flour, take one piece of dough and press down on it with your fingers until you have 1/2" thick circle or oval. Using your fists and knuckles start stretching the dough until 10" in diameter making sure not to tear it ( this should be easy since it is a small pie).
  • Dust your pizza peel (or a piece of cardboard) very well with semolina flour or corn meal and set your pizza dough on it making sure it slides easily when moved. Pour 2-3 tablespoons of the pizza sauce in the center and spread it around with the back of a spoon leaving 1 inch of space at the edges and making sure not to get any on the peel. Sprinkle with the mozzarella and add your favorite toppings. ( Don't add too many toppings, keep in mind this is a thin crust and a couple of toppings will suffice ).
  • Gently slide the pie on the preheated pizza stone in a hot 525 degree or more oven, and bake for 5 to 7 minutes or until golden brown on the edges. When making the breakfast pizza I find that the egg cooks perfectly in 6 minutes.
  • Remove from the oven and sprinkle with the basil and freshly grated parmigiano reggianno. Allow to rest for a few minute for the cheese to set.

I was going to order in a gourmet pizza but thought twice when I saw the price! So, instead, I took a note of the ingredients from the take-away menu and made it myself. It turned out to be the best pizza we've ever eaten - and I could probably make three for the cost of one from the shop. Please note that quantities below are approximate and can be adjusted to suit your own taste.

1 pizza crust
2 tablespoons pizza sauce (about 70g or half a small tub)
50 g salami, very finely sliced (I bought a packet of shaved hot salami)
1 1/2 cups pizza cheese, grated (I bought a packet of pre-grated cheese, a combination of cheddar, Parmesan and mozzarella)
1/3 cup green olives, pitted and halved
3 -4 artichoke hearts (from a bottle or can)
1/4 red onion, finely sliced
50 g feta cheese, cut into small cubes (I like the creamy variety of feta cheese, in Australia, I choose the South Cape brand)
1/2 teaspoon rosemary (dried)
1/4 teaspoon garlic powder, approximately

Steps:

  • Set oven to 200°C.
  • Spoon pizza sauce or tomato paste onto the pizza base and spread evenly - I use the back of a spoon.
  • Cut salami slices in half and lay evenly over the pizza.
  • Sprinkle fairly lightly with grated cheese, but with enough for a reasonable covering.
  • Now scatter over the olives.
  • Slice the artichoke hearts fairly thinly, lengthwise, and arrange evenly over pizza.
  • Scatter over sliced red onion.
  • Scatter another light layer of cheese over the pizza.
  • Now scatter over the feta cheese and sprinkle over the dried rosemary and the garlic powder.
  • Carefully transfer pizza to a pizza tray or similar and bake on the centre shelf of the preheated 200°C oven for approximately 15 minutes.

4 Cloves Garlic (, minced)
1 3/4 Teaspoons Onion Powder
1/4-1/2 Teaspoon Red Pepper Flakes
1 1/2 Teaspoon Fresh Basil (, chopped (or 3/4 teaspoon Dried))
1 Teaspoon Fresh Oregano (, chopped (or 1/2 teaspoon Dried))
2 Cans Tomato Sauce (8oz cans)
4 Tablespoons Tomato Paste
5 Tablespoons Fresh Parmesan Cheese (, grated)
2 Teaspoons Brown Sugar
2/3 Cup Warm Water
Salt and Pepper (, to taste)

Steps:

  • In a large pot over medium heat, add the olive oil and butter and heat until almost shimmering.
  • Add the garlic, stirring a few times around the pot. Then, quickly add the onion powder, red pepper flakes, basil, and oregano.
  • Stir a few times and allow the herbs to bloom.
  • Add Parmesan cheese and brown sugar, then quickly dump in the tomato sauce, tomato paste, and water.
  • Stir to combine and bring to a light boil.
  • Turn the heat down to low, season to taste, and allow to simmer for 1-2 hours for ultimate flavor or use immediately if needed.
