- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

OATMEAL MOLASSES BREAD

Steps:
- Dissolve the yeast in one cup of lukewarm water with 1 teaspoon of the sugar.
- In a separate bowl combine the remaining water with the molasses, shortening and salt.
- Add the remaining sugar and the yeast mixture, mix until smooth.
- Gradually add the flour mix.
- Place dough on a light floured surface and knead until smooth and elastic, about 12 minutes.
- Place dough in a grease bowl, turn dough over to grease the other side.
- Cover and let rise until doubled in size, about 1 hour.
- Divide into three portions and shape into balls.
- Place three balls side by side in a baking pan.
- Brush top lightly with melted margarine and let rise until doubled, about 1 hour.
- Heat the oven to 375F degrees.
- Bake for 45 minutes or until the golden brown (use the lowest rack in the oven).
- Remove bread from the pan and brush the top with additional melted margarine sprinkle with quick oats, place back in oven for 15 minutes.
- Place on wire racks to cool.

- Preheat oven to 325 degrees.
- Spray 9X4 inch loaf pan with non stick spray.
- Sift dry ingredients together.
- Mix liquid ingredients together, then add to dry mixture.
- Blend well with electric mixer.
- Pour into prepared loaf pan.
- Bake for 1 and 1/2 hours.
- Cool for 10 minutes in pan, then turn out and cool completely.
- Delicious with cream cheese.
- Freezes well.

OLD FASHION MOLASSES BREAD

- Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
- If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
- To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

- Heat oven to 325 degrees. Grease an 8-by-4-inch or 9-by 5-inch loaf pan (Bittman recommends a non-stick loaf pan but I prefer my stoneware loaf pan).
- If using buttermilk or yogurt, ignore this step. Make soured milk: gently warm the milk gently (1 minute in the microwave will suffice) and add vinegar. Set the soured milk aside.
- Mix together the dry ingredients. Stir molasses (or honey or maple syrup) into the soured milk, buttermilk or yogurt. Pour the liquid ingredients into the dry ingredients and stir with a big spoon, just until combined. Pour the batter into a greased loaf pan.
- Bake until firm and a toothpick inserted into center comes out clean, 45 minutes to 1 hour. Allow the bread to cool in the loaf pan for 15 minutes, then carefully invert the bread onto a wire rack.
