3 lbs white asparagus or 3 lbs green asparagus, fresh
8 tablespoons unsalted butter
3 hard-boiled eggs
1 1/2 teaspoons fresh lemon juice
1/4 cup fresh parsley, chopped
salt & freshly ground black pepper
1 pinch nutmeg

Steps:

  • Trim white asparagus, if using, with vegetable peeler, from just under tip to stem end to remove woody skin. If using green, trim just hard stem end.
  • Bring large pot of salted water to boil.
  • Bundle asparagus up and tie with kitchen twine. Trim ends evenly. Gently place in boiling water and immediately lower heat to simmer. If using white asparagus, cover pot. If using green, DO NOT cover, as it will lose it's fresh green color. Simmer for approximately 15-30 minutes, depending on thickness of stems. When tender, remove bundle and carefully drain on kitchen towel, being careful of tender tips.
  • Melt the butter over low heat in a small saucepan. If the eggs are completely cold, plunge into hot asparagus water for 1 minute. Remove, dry and peel.
  • In a small bowl, mash the complete egg with a fork. Add the melted butter, lemon juice, parsley, nutmeg and salt and pepper. Mix thoroughly.
  • Arrange the asparagus on individual plates. Pour Flemish sauce to cover all but the tips of the asparagus. Serve immediately while everything is still warm.

olive oil
salt & freshly ground black pepper
2 tablespoons romano cheese, freshly grated
3/4 cup Egg Beaters egg substitute
1 tablespoon fat-free half-and-half
2 slices whole grain bread (suggestion (7 grain bread)

Steps:

  • Preheat the oven to 400 degrees F.
  • Break off the tough ends of the asparagus and place the asparagus on a baking sheet, drizzle with olive oil, tossing to coat the asparagus completely.
  • Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.
  • Roast the asparagus for 15 to 20 minutes, until tender but still crisp.
  • Sprinkle with the cheese and return to the oven for 5 minutes, or until the cheese melts.
  • While the asparagus is roasting, whisk the eggs in a bowl with the half-and-half, and salt and pepper, to taste.
  • Cook the eggs on the lowest heat, stirring constantly with a wooden spoon, to the desired doneness.
  • Remove from the heat, add the remaining 1/2 tablespoon of butter, and stir until it melts. Check for seasoning, salt and pepper, if needed, and serve with the roasted asparagus and 7-grain bread.

1/2 pound uncooked shrimp (16-20 per pound), peeled and deveined

8 fresh asparagus spears, trimmed and cut into 2-inch pieces
1/2 cup sliced fresh mushrooms
1/4 cup chopped seeded tomato, peeled
4 garlic cloves, minced
2 teaspoons chopped green onion
1/2 cup white wine or chicken broth
1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons minced fresh oregano
1-1/2 teaspoons minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, sprinkle shrimp with salt and pepper flakes. In a large skillet or wok, heat 1 tablespoon oil over medium-high heat. Add shrimp; stir-fry until pink, 2-3 minutes. Remove; keep warm. , In same skillet, stir-fry the next 5 ingredients in remaining oil until vegetables are crisp-tender, about 5 minutes. There are so many ways to customize this recipes, that if you don't have/like an ingredient, just substitute something you do have/like. I love black pepper, and added a lot to this recipe, use as much as you and your family like.

1/2 lb asparagus, cut into 2 inch pieces
12 ounces egg noodles
2 tablespoons canola oil
340 g shrimp
1 tablespoon fresh garlic, minced
1 (8 ounce) package cremini mushrooms, sliced
20 cherry tomatoes, halved
fresh black pepper
soy sauce, to taste

Steps:

  • Cook asparagus until tender in a large pot of boiling water. Remove with tongs and place in a bowl of cold water, this will stop the cooking process. Set aside.
  • Cook egg noodles in the same pot of boiling water according to package directions. Drain and set aside.
  • Add 1 tbsp of oil to a hot large pan or wok. Add garlic and shrimp, cook until shrimp are pink. Remove shrimp from pan using tongs, set aside.
  • Add remaining oil to the pan. Add mushrooms and saute just until starting to brown, about 3 minutes. Return shrimp to the pan, and add asparagus, cherry tomotoes, black pepper and soy sauce to taste. Cook another 1-2 minutes.
  • Add mushroom mixture to noodles and toss to blend. Serve hot.

5 large free-range eggs
1/2 teaspoon smoked paprika (Pimenton)
1/4 teaspoon sweet paprika
1 pinch ground cumin
salt and black pepper
1 tablespoon olive oil
1 ounce butter

Steps:

  • Trim the woody ends from the asparagus, removing tough fibrous outer layers from the stalks if they are large - a potato peeler is good for this.
  • Cut the asparagus into 1" lengths - setting aside the tips.
  • Bring a pan of water to the boil and boil the asparagus for 2 to 4 minutes - excluding the tips; add the tips and boil for a further 2 minutes.
  • Drain carefully - the asparagus should be just tender but not too soft.
  • Beat the eggs with the spices and seasonings.

  • When the butter has melted and the oil is sizzling, add the beaten eggs.

  • Serve at once, sprinkled with pimenton, crusty bread and side dishes of olives, almonds and choritzo.
