Carbonnade Flamande (Beef and Beer Stew) image

Provided by Olivia Mesquita

Categories     Main Courses

Time 3h

Number Of Ingredients 14

2 pounds chuck roast (trimmed and cut into stew cubes)
2 11.2oz bottles of Flemish Sour Ale
4 slices of bacon (diced)
3 medium onions (sliced)
3 cloves of garlic
2 tablespoons olive oil
3 tablespoons all-purpose flour
1 1/2 cups beef broth
2 bay leaves
4 springs of fresh thyme
1 tablespoon dark brown sugar
1 tablespoon whole grain mustard
1 Cup chopped parsley plus more to garnish
Salt and pepper to taste

Steps:

  • Marinate the beef with the beer, the garlic, the bay leaves and a pinch of salt for at least two hours, or overnight.
  • Drain the beef and reserve the marinade. Pat dry the beef with paper towels.
  • In a dutch oven, heat the olive oil until pipping hot. Fry the beef in batches, until golden brown on all sides, about 10 minutes. Remove the beef cubes and reserve.
  • In the same dutch oven, fry the bacon until golden and crisp. Reserve with the beef.
  • Add the onions, a pinch of salt and fry in the bacon grease, until caramelized (around 10 minutes).
  • Add the flour and cook for about 2 minutes until the flour is cooked and the onions are coated.
  • Add the beef broth and scrape the bits stuck in the bottom. Add the reserved marinade, the beef, the bacon and the thyme.
  • Cook for 1.5 hours.
  • Add the brown sugar, the parsley, some fresh pepper and the mustard. Cook for 30 minutes.
  • Sprinkle some fresh parsley on top and serve with fries.

Time 10h30m

Yield 8

Number Of Ingredients 16

2 ½ tablespoons garlic powder
1 ½ tablespoons white pepper
1 ½ tablespoons seasoned salt
1 tablespoon onion salt
1 teaspoon dried oregano
4 pounds pork spareribs
½ cup distilled white vinegar
12 (12 fluid ounce) cans or bottles premium lager
1 (20 ounce) bottle ketchup
1 (10 fluid ounce) bottle Worcestershire sauce
1 ½ cups maple syrup
1 cup brown sugar
1 cup liquid smoke flavoring
½ cup margarine
½ cup apple cider vinegar
½ cup honey mustard

Steps:

  • In a medium bowl, mix garlic powder, white pepper, seasoned salt, onion salt, and oregano.
  • Place ribs in a large roasting pan, and rub evenly with the garlic powder mixture to coat. Pour distilled white vinegar and 1/2 the beer, or enough to cover ribs, into the pan. Cover pan, and marinate ribs in the refrigerator 8 hours, or overnight.
  • Prepare an outdoor grill for indirect, medium heat, and lightly oil grate.
  • In a large saucepan, whisk together remaining beer, ketchup, Worcestershire sauce, maple syrup, brown sugar, liquid smoke, margarine, apple cider vinegar, and honey mustard. Bring to boil. Cover, reduce heat, and simmer 15 minutes, or until a thick sauce has formed.
  • Remove ribs from the marinade mixture, and coat liberally with the sauce. Place on the prepared grill, and cook 1 1/2 to 2 hours, to an internal temperature of 160 degrees F (70 degrees C). Brush frequently with the sauce while cooking.

  • Whole Wheat Beer Bread: A beer culinary classic! Adding beer to a hearty whole-wheat loaf gives this bread a tangy, rich flavor.
  • Beer Pretzels: These dark beer-infused mini pretzel rolls make it easy to practice portion control. For an even healthier snack, sub in whole-wheat flour.
  • Gluten Free Oregano Beer Bread: This quick bread recipe makes for a great breakfast or snack. Fresh oregano balances out the sweet, mellow brown sugar and GF beer.
  • (Seriously) Belgian Waffles: Belgian-style ale (like Blue Moon) makes these Belgian waffles extra fluffy and light. It also makes them extra-Belgian.
  • Beer BBQ Tofu:Here’s one for the vegetarians! Combine garlic, ginger, and BBQ sauce (extra points for using the healthier recipe described in #18 below) and marinate tofu blocks for an hour or two.
  • Belgian Steamed Mussels: Cooking these bad boys with beer makes the broth briny, sweet, and full of mussel-flavored deliciousness. You might want to make some extra beer bread (like #1 above) to sop it up!
  • Beer-Marinated Shrimp: Gluten-free shrimp lovers rejoice. This tangy marinade with fresh ginger and mustard also features gluten free beer. After a few hours in the marinade, pop the shrimp onto the grill or in the oven for a super-quick, healthy dinner.
  • Stout and Chicken Stew: What happens when you combine Guinness-braised chicken, roasted fall veggies, and a lil’ bit of bacon in a slow cooker? A delicious hearty stew to get you through the cold months, is what.
  • Chocolate Stout Vegan Chili: This veggie-laden chili recipe incorporates chocolate stout beer, bittersweet chocolate, and espresso. Um, which way to the kitchen?
  • Beer-Braised Brisket: Impress friends with this “just like Mom’s” brisket recipe. Using pale ale keeps the meat tender (i.e. not tasting like an old shoe), while low-sodium broth and a whole bunch of veggies make it a healthier dinner choice.
