Nothing says "fall is here" quite like the smell of tender-baked apples filling your home. This simple and downright delicious apple crisp gives you all the flavor you could ever ask for in a dessert, and is as quick to make as it is to finish. The cherry on top? A generous topping of cream or vanilla ice cream.

- Heat oven to 375°F. Grease bottom and sides of 8-inch square pan with shortening.
- Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.

BAKED HONEYCRISP APPLES {BEST EVER!}
Steps:
- Preheat oven to 350° fahrenheit.
- Slice approximately 1/3 off of the top of the apples and scoop out the core, leaving a well in the center.
- In a bowl, mix brown sugar, cinnamon, cranberries and walnuts (using a spoon or fork) until blended.
- Stuff each apple with 1/4 of brown sugar mixture.
- Place apples in a deep baking dish, topping each apple with 1 tblsp butter and a sprinkle of cinnamon.
- Pour about 1/2" of water into the baking pan, around the apples, and bake for 50 - 60 minutes, until apples are tender.
- Serve warm, topped with caramel sauce drizzled on top of each apple, if desired.
- Also excellent served with vanilla or butter pecan ice cream.

APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

- Place the peeled and sliced apples in a medium-size bowl.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
- For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.

EASY HEALTHY SUGAR-FREE APPLE CRISP
Steps:
- Preheat oven to 350 degrees.
- Grease an 8x8 baking dish. I use cooking spray.
- Place a saucepan on medium-high heat. Add the apples, cinnamon, vanilla, sweetener, and lemon juice. Stir and cook for 2-3 minutes until the apples are soft.
- Mix the cornstarch and water in a small bowl. Add to the pan and stir. Cook for 30 seconds.
- Transfer the apple mixture to the bottom of the baking dish.
- Combine the oats, brown sweetener, cinnamon and melted butter in a separate bowl.
- Spread the topping throughout the pan.
- Bake for 20 minutes.
- Loosely cover the pan with foil to prevent the topping from over-browning.
- Bake for an additional 20-25 minutes until the apples are soft.
- Cool before serving.

BEK'S BAKED APPLE CRISP
This recipe is my own version, modeled after my own apple pie. Usually, this is made using ingredient amounts that basically include a pinch and a dash, a squeeze and a scosh. Finally, I made myself slow down and kind of measure everything out so that I could post it here. These are, of course, approximate. I've written this to make four individual crisps, the way we eat it, but if you want to make one big crisp, just add 10 minutes to the baking time. I don't use nuts, but if you want to add some nuts such as pecans to the topping, just replace about a 1/4 cup of the oats with them. Also, I'm not a huge fan of very sweet desserts - this even pushes the limits for me. If you prefer sweeter desserts, increase the sugars in the filling to your taste.

- Preheat the oven to 375°F Butter 4 individual casserole dishes. (If you choose to make one large crisp, you'll increase baking time by about 10 minutes.) I often forget the butter. No biggie.
- I love to cook, but hate doing dishes, so I make this all in one pot. In a medium pot (NO HEAT!) combine apples and lemon juice and toss well to coat. Add in the rest of the filling ingredients, brown sugar, white sugar, flour, cinnamon, nutmeg, and cloves. Stir well to combine, breaking up any lumps of sugar or flour.
- Pour equal amounts of apple mixture into the four casseroles. They should be about half full. Set aside.
- In the same pan (see? one less bowl to wash!) melt the butter over medium lo heat. Once butter is melted, turn off heat.
- Add in remaining topping ingredients: oats, flour, brown sugar, cinnamon, salt, and nuts if you're using them. Stir to combine well, again, breaking up any obvious lumps of sugar or flour.
- **The topping should not be "wet", but if it seems TOO dry, and the butter does not seem to have coated all of the oats, then add in an additional tablespoon of butter. It won't hurt anything.
- Pour mixture equally over the apples in each dish. They should be almost full, but not overflowing.
- Place the dishes on a cookie sheet, just in case the filling does overflow. Bake for 30 minutes (40 if you're making one big crisp).
- Allow to cool, serve with milk, whipped cream, or vanilla ice cream.
