Steps:

  • Cook 3 each red beets and yellow beets in boiling salted water until tender, 30 minutes. Let cool; peel and cut into wedges. Whisk 2 tablespoons each orange juice and olive oil, 1 tablespoon white balsamic vinegar and 3/4 teaspoon kosher salt in a large bowl. Add the beets, 4 segmented blood oranges and 1/3 cup chopped parsley; toss.

3 (15-ounce) cans baby beets, drained
2 tablespoons raspberry vinegar
2 tablespoons freshly squeezed orange juice
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup small-diced red onion (1 small onion)
2 large seedless oranges, zested
Segments 2 large seedless oranges

Steps:

  • Drain the beets and dice into 1/2-inch cubes. Place the beets in a mixing bowl and add the raspberry vinegar, orange juice, olive oil, salt, pepper and red onions. Zest the oranges and then segment over a bowl to catch the juices. Add the orange zest, orange segments, and any juices and mix well. Taste for seasoning and serve cold or at room temperature.

A vegetarian alternative to beef carpaccio. This recipe wins over so many people who thought they hated beets or just never wanted to even try them. I was that person - once I actually tasted this recipe, well, I was sold and have loved beets ever since. Once beets are steamed and peeled, it is simple and easy. Beets can be prepped a day ahead and stored in a bag or container, but I personally like bringing it all together in one shot.

6 2-inch beets, trimmed, as evenly sized as possible
2 ounces soft fresh goat cheese, or more to taste
sea salt and freshly ground black pepper to taste
⅓ cup rice vinegar
¼ cup chopped fresh mint
¼ cup olive oil
1 teaspoon white sugar

Steps:

  • Fill a pot with 3 inches of water, insert a steamer basket, and bring to a boil. Reduce heat to medium or medium-low and place beets inside the steamer basket. Cover pot. Cook until beets are easily pierced with a knife, checking water level periodically, 35 to 50 minutes. Remove from heat and cool, about 30 minutes.
  • Peel the beets; if you are using red and golden beets, peel the golden ones first so you don't end up turning them pink. Remove any remaining root stems. Thinly slice beets and arrange on a serving platter. I use a round plate and start in the center, alternating red and golden beet slices. Dot the top with goat cheese - you want to be able to see the beets but have enough cheese because it pairs so well with the beet. Sprinkle with sea salt and black pepper.
  • Combine rice vinegar, olive oil, mint, and sugar in a small bowl. Drizzle over beets.

I love roasted beets and am always ordering them out...but have never tried making them at home. Posting this recipe for safekeeping. Adapted from "Atlanta Cooks: 125 Recipes from 25 Top Atlanta Chefs" by Melissa Libby, this recipe is from the Floataway Cafe restaurant in the Atlanta area. Their roasted beets are the BEST. Also great paired with goat cheese in a green salad. NOTE: 2nd ingredient is for 1/4 cup raspberry vinegar...for some reason ZAAR won't let me input that ingredient.

2 1/2 lbs beets, washed & tops removed
raspberry vinegar
1 1/2 tablespoons butter
2 tablespoons honey
salt and pepper (to taste)
1/2 cup red wine or 1/2 cup raspberry vinegar
1/4 cup honey
3 shallots, finely diced
1/2 cup grapeseed oil
salt and pepper (to taste)

Steps:

  • Preheat oven to 350 degrees. Place washed beets in a deep roasting pan. Fill pan halfway up the beets with water. Add vinegar, butter, honey, salt and pepper. Cover tightly with aluminum foil and roast for 2-3 hours, or until a knife goes easily into a beet's center. Remove from oven and remove beets from cooking liquid. Wearing gloves, peel off the exterior skin of the beets and dice.
  • For the vinaigrette, place vinegar and honey in a bowl and whisk together. Add shallots and, while slowly whisking, add the grape-seed oil in a thin stream. Season with salt and pepper and toss with the warm, peeled and diced beets.
  • *The beets will be even better the second day.

Carrot and Beet Salad with Lemon Vinaigrette image

We bought my grandmother a food processor, but she continued to use her hand-cranked shredder for grating. Made of cast aluminum, it was a sturdy beast that attached to the counter with a vise. She would peel the carrots and Dede would patiently shred them into a large bowl for carrot slaw. This recipe is a bit more complex in flavor and technique than Meme's, and I use a food processor to shred the vegetables. Just make sure you shred the carrots first! To prevent the beets from staining the carrots when mixed in the salad, the key is to dress the beets before combining with the carrots. This seals in their red pigments (betalains), which don't dissolve in oil.

Yield serves 4 to 6

Number Of Ingredients 9

2 small shallots, finely chopped
1 clove garlic, finely chopped
1 tablespoon Dijon mustard
Juice of 2 lemons
1/2 cup walnut oil
Coarse salt and freshly ground black pepper
1/4 cup finely chopped walnuts
5 large carrots, finely shredded
6 small to medium fresh beets, peeled and finely shredded

Steps:

  • To make the dressing, whisk together the shallot, garlic, mustard, and lemon juice in a bowl. Add the walnut oil in a slow stream and blend until smooth. Season with salt and pepper; mix in the chopped walnuts. Set aside.
  • In separate bowls, toss the carrots with half the dressing and the beets with the remainder. Taste each and adjust for seasoning with salt and pepper.
  • Once the vegetables are separately dressed, they may be combined and served, or refrigerated and held separately for up to several hours before combining (you may either bring to room temperature or serve chilled). Serve immediately after the carrots and beets are mixed.
