8 medium fresh beetroots
1 cinnamon stick
2 shallots
1 garlic clove, crushed
125 ml white wine
225 ml chicken stock
250 ml sour cream
1 tablespoon fresh dill, chopped
1 tablespoon horseradish cream
400 g cooked fresh tagliatelle pasta noodles
salt and pepper
parmesan cheese, shavings
1 tablespoon olive oil

Steps:

  • preheat the oven to 400°F.
  • wipe the beets clean,season then wrap them in aluminum foil with the cinnamon stick and roast for 45 mins or until soft.
  • cool, unwrap and peel then chop up into 1/2 in dice.
  • fry the shallots and garlic in oil until soft, add the wine, bring to the boil and reduce by 2/3rds.
  • add the chicken stock and return to the boil, reduce by about 1/2.
  • add the beets and sour cream, return to the boil and reduce to a thick sauce.
  • Fold in the dill and horseradish, spoon over pasta and serve with the parmesan shavings.

These wholesome, gluten-free beetroot and apple bites are coated with sesame seeds and baked, then served with a creamy avocado dip

100g sesame seeds , for coating
140g raw beetroot , coarsely grated
140g peeled and coarsely grated apple
100g feta , coarsely grated
2 spring onions , very finely chopped
50g gluten-free oat
1 large egg
2 tsp ground cumin
1 heaped tsp turmeric
1 large ripe avocado
8 tbsp pro-biotic live Greek yogurt , or goat's or cow's milk
1 small garlic clove
juice ½ lemon

Steps:

  • Whizz the ingredients for the dip together in a food processor until smooth and glossy. Chill until ready to serve.
  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. In a large bowl, mix all the ingredients for the patties together with a large spatula until well blended. Form the mixture into 12 round patty shapes, roughly 6cm wide, by pressing together between your palms. They will feel wet, but this helps to keep them moist during baking.
  • Put the sesame seeds in a bowl and coat the patties. Lay each patty on the baking tray and bake for 20 mins or until firm to the touch and lightly golden, then serve with the dip.

Number Of Ingredients 9

1 tablespoon butter
2 tablespoons olive oil
2 garlic cloves, minced
3 cups (packed) coarsely grated peeled uncooked beets (about 3 large)
1/2 teaspoon cayenne pepper
2 tablespoons fresh lemon juice
12 ounces tagliatelle or fettuccine
1 8-ounce container sour cream
6 tablespoons chopped fresh Italian parsley, divided

Steps:

  • Melt butter with oil in large nonstick skillet over medium heat. Add garlic; stir until pale golden, about 1 minute. Add beets and cayenne; reduce heat to medium-low and sauté just until beets are tender, about 12 minutes. Stir in lemon juice.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
  • Drain pasta and return to pot. Stir in sour cream and 4 tablespoons parsley, then beet mixture. Season to taste with salt and pepper. Transfer pasta to bowl. Sprinkle with remaining 2 tablespoons parsley and serve.
