Jewel-tone beet and carrot latkes with a nutritional boost will make your plate glow.

8 ounces fresh beets, peeled
8 ounces carrots, peeled
1 small red onion
2 eggs, beaten
¼ cup flour
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Extra virgin olive oil, for frying

Steps:

  • 1. In a food processor, coarsely grate beets, carrots, and onion. Transfer to medium bowl. 2. Add eggs, flour, salt, and pepper; stir to combine. Fried method: 1. In a large skillet, add evoo until depth reaches ½ inch, and heat over medium-high heat. Spoon ¼-cup sized scoops of latke mixture into the pan, and flatten with the back of a spoon or spatula. Fry until golden, 4-6 minutes per side. Remove to a paper towel-lined plate to drain. Baked method: 1. Preheat oven to 450°F. Place ¼-cup sized spoonfuls of the prepared latke mixture on a cookie sheet lined with parchment and coated with evoo. Flatten each latke with the back of a spatula. 2. Bake for 10 minutes. ROOT VEGETABLE LATKES



Root Vegetable Latkes image

We've spruced up traditional latkes by incorporating a few readily available root vegetables to lend dimension-and color-to the classic recipe. The vegetables can be shredded in a food processor or by hand using a box grater.

Yield about 2 dozen latkes

Number Of Ingredients 12

2 russet potatoes (about 1 pound)
3 small parsnips
2 medium beets
2 large carrots
2 large onions
1 1/2 cups all-purpose flour
2 large eggs, beaten
1 teaspoons baking powder
1 teaspoon chopped fresh thyme leaves (from 3 to 4 sprigs)
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
1 cup sour cream

Steps:

  • Peel the potatoes and shred them in a food processer fitted with the shredding blade. Transfer to a large mixing bowl as the food processor bowl fills up. Repeat the process with the parsnips, beets, carrots and onions. Toss the vegetables together with your hands to break up and evenly disperse. Add the flour, eggs, baking powder, thyme and stir to combine. Sprinkle generously with salt and pepper.
  • Line a baking sheet with paper towels. Fill a large skillet with 1/2 inch of oil. Heat over medium-high heat until the oil is very hot but not smoking. To test if the oil is hot enough, drop a teaspoon of the vegetable mixture in the oil; if it sizzles steadily, the oil is ready.
  • Working in batches, scoop the vegetable mixture by 1/4 cupfuls and add it carefully to the skillet, flattening each mound slightly with a spatula. Fry until golden brown and cooked through, about 3 minutes per side. Be sure to return the oil to temperature between batches or lower the heat it the latkes are browning too quickly on the first side. Drain on the prepared baking sheet.
  • Serve immediately or keep warm in a 200-degree F oven. Serve with the sour cream.

CUMIN-SCENTED BEET LATKES

6 cups coarsely shredded peeled beets (about 6 medium)
6 tablespoons all purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground cumin
3/4 teaspoon ground coriander
3/4 teaspoon baking powder
1/4 teaspoon ground black pepper
3 large eggs, beaten to blend
Canola oil (for frying)
Celery and Cilantro Relish
Apple, Green Onion, and Jalapeño Salsa

Steps:

  • Place beets in large bowl; press with paper towels to absorb any moisture. In another large bowl, whisk flour and next 5 ingredients. Mix in beets, then eggs.
  • Pour enough oil into large skillet to cover bottom; heat over medium heat. Working in batches, drop beet mixture by 1/4 cupfuls into skillet; spread to 3 1/2-inch rounds. Fry until golden, about 5 minutes per side. Transfer latkes to baking sheet. (Can be made 6 hours ahead. Let stand at room temperature. Rewarm in 350°F oven until crisp, about 10 minutes.)
  • Serve latkes with relish and salsa.

BEET AND RED ONION POTATO LATKES WITH CARROT PUREE AND HORSERADISH AND CARAWAY CREME FRAICHE



Beet and Red Onion Potato Latkes with Carrot Puree and Horseradish and Caraway Creme Fraiche image

3 ounces grapeseed oil
3 large carrots, peeled and diced
1 quart fresh carrot juice
1/4 cup freshly grated horseradish
2 tablespoons toasted caraway seeds
1 cup creme fraiche
3 Yukon gold potatoes, peeled
2 red onions, peeled
1 carrot, peeled
1 red beet, roasted and peeled
2 cups grapeseed oil, plus more as needed
2 eggs
1/2 cup all-purpose flour
Salt, for sprinkling

Steps:

  • Heat the oil in a medium saucepan, over medium heat. Add the carrots and saute for 2 minutes. Stir in the carrot juice and simmer until the liquid has reduced by 5/6. Put the carrot mixture in a blender and puree until smooth. Transfer to a serving bowl and serve at room temperature.
  • Mix all of the ingredients in a small bowl and let sit, ideally for 24 hours in the refrigerator. Serve cool.
  • Using the grating attachment in a food processor, grate the potatoes, onions, carrot and beet separately. Coat a small saute pan with a little oil and put it over low heat. Add half of the grated onions and saute them slowly until caramelized, soft and sweet. Using a colander, squeeze all the excess liquid out of the remaining vegetables and then combine all of the ingredients in a mixing bowl.
  • Add the 2 cups of oil to a medium skillet and heat it to 370 degrees F. Put 2 ounces of the latke mixture into the oil and cook until brown on 1 side, approximately 2 minutes. Using a slotted spoon or spatula, flip the latke and continue to cook until brown on the other side. Remove from oil to a paper towel covered tray and immediately season with salt, to taste. Continue with the remaining mixture. Arrange the latkes on a serving platter and serve immediately with the carrot puree and the horseradish and caraway creme fraiche.

Latkes may be a Hanukkah favorite, but with beets and dill added to the potato mixture and a bright lemony yogurt sauce for serving, this version is equally suited for spring. And as long as you use matzo and not flour, they can be served at Passover.

1/2 cup plain whole-milk yogurt
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 teaspoon grated lemon zest
1 1/4 pounds russet or Yukon Gold potatoes (about 2 medium), peeled
1 small onion
1 large egg, beaten
1 cup grated red beet
1/3 cup matzo meal or all-purpose flour
1/4 cup chopped fresh dill
1 teaspoon ground coriander
Vegetable oil or rendered chicken fat, for frying

Steps:

  • Whisk the yogurt with the olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper and the lemon zest in a small bowl until smooth. Refrigerate until ready to serve.
  • Grate the potatoes and onion on the large holes of a box grater into a colander set over a bowl. Add 1 teaspoon salt and a few grinds of pepper, toss well and let stand 5 minutes. Squeeze handfuls of the mixture firmly with your hands to remove as much liquid as possible. Blot dry with paper towels, then transfer to a large bowl.
  • Add the beaten egg, grated beet, matzo meal or flour, dill and coriander to the potato mixture and toss well to combine. Scoop 1/4 cupfuls of the mixture and tightly pack into thin 3- to 4-inch pancakes. Transfer to a paper towel-lined baking sheet.
  • Preheat the oven to 250˚. Heat 1/4 inch vegetable oil or chicken fat in a large nonstick skillet over medium-high heat.
  • Working in three batches, fry the latkes until deep golden brown, 3 to 5 minutes per side, reducing the heat as needed if the latkes are browning too quickly. Remove to a rack set on a rimmed baking sheet and sprinkle with salt. Keep warm in the oven while you make the remaining latkes.
  • Serve with the yogurt sauce.
