Apple, Beet and Avocado Salad image

Winter produce at its best and in holiday colors too. You can also toss the salad instead of arranging it if you prefer.

3 medium beets
4 cups mixed salad greens
1 onion, sliced into thin rings
1 apple - peeled, cored and thinly sliced
½ avocado - peeled, pitted and sliced
½ cup toasted chopped walnuts
¾ cup apple cider
⅔ cup cider vinegar
½ cup vegetable oil
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon prepared mustard
¼ teaspoon celery seed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Wash beets, and place in a baking dish with 1/4 cup water. Cover and bake for 1 hour or until tender. Remove from oven and set aside to cool.
  • Whisk together the apple cider, vinegar, oil, salt, pepper, mustard and celery seed.
  • Peel and slice the beets, combine with the vinaigrette and refrigerate at least half an hour.
  • Divide the greens among four salad plates. Drain beets, and reserve dressing. Decoratively arrange overlapping layers of beet, onion, apple, and avocado on the greens. Drizzle with reserved dressing. Sprinkle on the nuts, and serve at once.

4 tomatoes, medium, cut into 1/4-inch wedges
1 medium avocado, ripe, Hass, cut into 1/2-inch cubes
1 small red onion, cut in half and sliced into thin half moons
4 teaspoons olive oil, extra virgin
4 teaspoons red wine vinegar
1/4 teaspoon table salt
1/4 teaspoon black pepper, freshly ground
1 tablespoon basil, fresh, chopped
1 tablespoon chives, fresh, chopped

Steps:

  • * Place a medium saucepan filled with water over high heat; bring to a boil. Add beets, bring back to a boil and reduce heat to medium; simmer until beets pierce easily with the point of a sharp knife, about 25 minutes.
  • * Remove beets from pan and place under cold running water until cool enough to handle. Peel beets with a vegetable peeler and cut into 1/2-inch wedges; place beets in a large bowl.
  • * Add tomato, avocado, onion, oil, vinegar, salt and pepper to bowl; toss to combine. Sprinkle with basil and chives; serve. Yields about 1 1/4 cups per serving.

extra-virgin olive oil
balsamic vinegar
salt and ground black pepper to taste
1 avocado - peeled, pitted, and cut into bite-size pieces
2 tablespoons extra-virgin olive oil
1 (10 ounce) package mixed salad greens
¼ cup shelled pistachio nuts
¼ cup dried cherries
¼ cup shredded Parmesan cheese
extra-virgin olive oil
balsamic vinegar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut stems off beets and place whole on a baking sheet. Roast until fork tender, about 45 minutes. Allow to cool; peel and dice beets into large bite-sized pieces. Toss with 1 tablespoon olive oil and 1 tablespoon balsamic vinegar in a bowl; season with salt and black pepper.
  • Toss diced avocado with 2 tablespoons olive oil in a separate bowl; season with salt.
  • To serve, divide salad greens between serving plates. Top each serving with 1/4 of the beets and avocado. Sprinkle each serving with shelled pistachios, dried cherries, and shredded Parmesan cheese. Drizzle with remaining 1 tablespoon olive oil and 1 tablespoon balsamic vinegar.
