BEER CHEESE PASTA SAUCE



Beer Cheese Pasta Sauce image

This Beer Cheese Pasta Sauce is a mellow cheese sauce served over pasta. It's a copycat recipe from Spaghetti Works. Delicious topped with bacon!

Number Of Ingredients 8

12 ounces (1 1/2 cups) Half & Half
1 12 ounce jar Cheez Whiz
1 12 ounce light beer (pour it a little ahead so it's a bit flat)
12 ounces (1 1/2 cups) broth
6 Tablespoons butter
6 Tablespoons flour
1 pound package pasta, prepared
Bacon for topping, if desired

Steps:

  • In a small pan, melt butter for about 2 minutes. Don't let it brown. Add in flour to form a roux.
  • In a medium sized sauce pan, over medium heat, heat half & half, Cheez Whiz, beer and beef broth, stirring constantly. When sauce reaches approximately 140 degrees F. add the roux. Continue cooking, stirring constantly until sauce reaches 160 degrees F. Don't let it come to a boil, you don't want it to curdle.
  • Serve immediately over prepared pasta, topped with bacon if desired.

TOMATO BEER SAUCE

This dish is simple and soooo goood!!! This dish is a more delicious version of the standard spaghetti-sauce dinner!! Try it and enjoy =)

Number Of Ingredients 9

1 lb cooked sweet italian sausages (optional, you could sub with cooked chicken or keep plain)
4 bottle budweiser beer or similar beer
4 Tbsp olive oil
1 sweet onion, diced
2 clove garlic, minced
2 - 29 oz cans of diced tomatoes
3 - 4 pieces of basil or a few shakes of dried basil
2 lb penne pasta or pasta of your choice
2 Tbsp sugar ( for reduction of acid in sauce)

Steps:

  • 1. take big sauce pot and add your olive oil with your onions and cook until translucent. Then add your garlic and cook until garlic is golden brown.
  • 2. Add your 2 cans of diced tomatoes, add a can of water and let cook until your sauce comes to a simmer. When your sauce comes to a simmer add 2Tbsp of sugar, keep stirring until sugar is dissolved and add your basil leaves.
  • 3. Add 2 Bottles of beer to the tomato sauce and let the sauce come to a boil then cook on med/low heat and you could add your cooked sausage or chicken, or just let cook on low if you are keeping the sauce plain.
  • 4. while your sauce is cooking. Add 2 bottles of beer in a pot and fill the pot the rest of the way with water. Add salt to cut the bitterness. Cook on high when the water comes to a boil add your Pasta and cook until al dente.
  • 5. Drain your pasta. Top your pasta with the delicious beer sauce, add some Parmesan cheese if desired and enjoy!!

I can't take credit for this one. I grew up in Omaha, Nebraska, and love the Spaghetti Works. I found this recipe ages ago somewhere online (I've since lost the link) and it's pretty close to what I remember!

Number Of Ingredients 6

1 jar cheese whiz
1 jar flat beer
1 jar whole milk
1 jar beef broth
10 Tbsp flour
10 Tbsp butter

Steps:

  • 1. (For ease, use the Cheese Whiz jar to measure milk, beer, and broth.)
  • 2. Heat cheese, milk, beer and broth to 140 degrees, stirring constantly. Melt butter in saucepan and add flour. Stir until blended. Cook 2 minutes but do not brown. Stir into cheese mixture and heat to 160 degrees stirring constantly. Remove from heat and add bacon bits. Serve over favorite pasta. This freezes very well. Add small amounts of milk to desired consistency when reheating.

14 ounces ketchup
12 ounces beer
14 ounces tomatoes, diced (optional)
pepperoni, chopped (optional)
1 lb spaghetti noodles

Steps:

  • Brown hamburger. Drain. Make pasta according to directions. Stir in ketchup, beer and any additionals you would like to add. Bring to a boil and simmer until sauce thickens, about 20 minutes. Pour over cooked noodles and serve.

1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

1 lb rigatoni pasta
15 ounces fresh bratwursts
1/2 cup beer
1 1/2 cups low-fat cheddar cheese
2 sweet red peppers, coarsely chopped
1 cup onion, coarsely chopped
4 -6 garlic cloves, chopped
1/2 cup fresh basil
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (more or less to your liking)

Steps:

  • Preheat oven to 425°F.
  • Mix red pepper, onion and garlic with 1 tablespoons olive oil in 9x13" baking dish and roast in oven for 25 minutes; stirring occasionally.
  • While vegetables roast, remove casing from bratwurst, crumble and brown in a skillet over medium heat until they are no longer pink and well brown.
  • Remove bratwurst and drain on paper towel.
  • Pour fat from skillet.
  • Add bratwurst and beer to skillet and simmer.
  • Cook pasta according to package directions and drain, reserving 1/2 cup of pasta water.
  • Remove roasted vegetables from oven, immediately add bratwurst from skillet; add basil, red pepper flakes, pasta, 1 cup of cheese and toss to mix thoroughly. If mixture seems too dry, add some of the pasta water to moisten.
  • Sprinkle remaining cheese over top and serve.
