2 tbsp unsalted butter
1 large onion (minced)
1/2 tsp ground nutmeg
1/4 tsp ground black pepper
4 cups cornflakes (finely grounded)
2 lb ground pork or turkey
1 tsp kosher salt
1/4 cup all-purpose flour
3 tbsp unsalted butter
12 oz beer (not too dark)
2 tbsp lemon juice

Steps:

  • Melt the butter in a large skillet over medium heat, once sizzling add in the onions, season with salt to taste, black pepper and nutmeg. Sautee until soft and fragrant (about 4-5 minutes).
  • In a large bowl, add the finely crushed cornflakes, meat, sauteed onions, and salt. Mix and form into small balls. Roll your meatballs in flour and place them on a clean plate or baking sheet.
  • In the same skillet, melt the butter over medium heat. Once sizzling, add in the meatballs and cook until slightly browned on all sides. Pour in the beer and lemon juice, bring to a simmer, then cover with a lid and simmer for 25-30 minutes or until the sauce is thick and glossy. Serve immediately!

24 fluid ounces beer
1 ½ pounds ground beef
2 teaspoons garlic powder
1 onion, chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the beer and ketchup in a slow cooker on high setting and allow to simmer..

250 grams (8 3/4 ounces) minced pork
50 ml (1/4 cup) olive oil
Oregano (to taste)
Pepper (to taste)
Nutmeg (to taste)
1 tablespoon Worcestershire sauce
1/2 tablespoon breadcrumbs
3 cloves of garlic
2 medium onions
1 egg yolk
200 ml (1 cup) beer
2 medium ripe tomatoes
Salt (to taste)

Steps:

  • Season the meat with salt, chopped onion, nutmeg, pepper, oregano, Worcestershire sauce, chopped garlic, breadcrumbs and egg yolk. Mix the seasonings in the meat. Mold with your hands small portions of the meat in the shape of balls and set aside.
  • In a saucepan, add the olive oil and the remaining onion cut into round slices. Sauté on a low heat until the onion start to turn slightly golden brown, stirring occasionally. Add the peeled tomatoes cut into small chunks and cook until the tomato start to break down, stirring occasionally. Add the meatballs, drizzle with beer, cover the pan with a lid and cook on a low heat for 45 minutes.
  • Turn off the heat and serve the meatballs with mashed potato.

2 slices bread, cubed
12 ounces beer
1 lb lean ground beef
1/2 cup mozzarella cheese, shredded
1/2 teaspoon salt
1 dash pepper
3 tablespoons margarine
1/2 cup onion, chopped
2 tablespoons brown sugar
2 tablespoons vinegar
2 tablespoons beef stock
1 -2 tablespoon flour

Steps:

  • Preheat oven to 350 degrees F.
  • Soak bread cubes in 1/2 cup beer.
  • Combine ground beef, cheese, salt, pepper and beer soaked bread. Mix well and form cocktail size meatballs (about 32, 1" balls).
  • Arrange in a single layer in a cookie sheet and bake for 15 minutes.
  • Meanwhile, saute onions in margarine until tender. Stir in sugar, vinegar, beef stock, and remaining beer. Thicken with flour if so desired.
  • Simmer over low heat for 10 minutes.
  • When meatballs are done, drain on paper towels and then add to the sauce and simmer for 20 minutes longer.
  • Serve with toothpicks.

1 lb ground beef, lean

1 large egg
1 tablespoon shallot, minced
1 tablespoon fresh parsley, fine minced

1 pinch nutmeg, grated
2 tablespoons flour
2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 medium onion, thinly sliced
3 Belgian endive, cored and cut in 1/4-inch rounds
1 teaspoon sugar
salt & pepper
1 1/2-2 tablespoons flour
1 cup pilsner beer
1/2 cup beef broth or 1/2 cup chicken broth
2 tablespoons fresh parsley (for garnish)

Steps:

  • To prepare meatballs, soak bread crumbs in milk until thoroughly moistened; squeeze dry with hands.
  • Combine bread crumbs, ground meats, eggs, shallots, parsley, salt, pepper and nutmeg in medium bowl.
  • Form mixture into 6 to 8 balls or patties (2 inches in diameter and 1/2-inch thick); dust with 2 tablespoons flour.
  • Heat butter and oil in deep, heavy Dutch oven, until hot but not smoking, over high heat.
  • Add meatballs; cook until browned on all sides, about 5 minutes, making sure butter does not burn.
  • Remove meat balls to platter; keep warm.
  • To prepare sauce, discard all but 2 tablespoons of fat in pan.
  • Add onion and endives.
  • Cook over low heat, stirring constantly, for about 10 minutes.
  • Add sugar, salt, pepper and 2 tablespoons flour to vegetables; cook, stirring, for 1 to 2 minutes longer.
  • Add beer and broth; heat to quick boil, scraping up all brown bits from bottom of pan.
  • Reduce heat to simmer; return meatballs to pan, placing them on top of vegetables.
  • Simmer, partly covered, until meat is cooked through, 45 minutes.
  • Sprinkle with parsley and serve.
