BEER AND MOLASSES BARBECUE SAUCE

Number Of Ingredients 10

1 1/4 cups bottled chili sauce
3/4 cup mild-flavored (light) molasses
3/4 cup beer
2 tablespoons Dijon mustard
2 tablespoons chili powder
2 teaspoons soy sauce
2 teaspoons hot pepper sauce (such as Tabasco)
1 1/2 teaspoons fresh lemon juice
1 teaspoon hickory-flavored liquid smoke*
A smoke-flavored liquid seasoning that is available at specialty foods stores and at many supermarkets.

Steps:

  • Mix all ingredients in heavy medium saucepan. Bring to boil over medium heat, stirring occasionally. Reduce heat; simmer until sauce thickens and is reduced to 2 cups, stirring frequently, about 15 minutes. Cool completely before using. (Can be made 1 week ahead. Cover and chill.)

Three 16-ounce, 1/2-inch-thick prime-aged New York strip steaks
3 tablespoons vegetable oil
Kosher salt
Freshly ground black pepper
Molasses Sauce
2 teaspoons butter
2 strips thick-sliced bacon, cut into 1/2-inch pieces
1/2 medium onion, finely diced
1 garlic clove, minced
1 cup ketchup
1/4 cup molasses
1/4 cup apple cider
1/4 cup lager-style beer
1 tablespoon honey
1 tablespoon prepared yellow mustard
1 tablespoon fresh lemon juice
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika

Steps:

  • Rub the steaks with the oil and season generously with salt and pepper.
  • Melt the butter in a medium saucepan over medium heat. Add the bacon, onion, and garlic, and sauté for 3 minutes, or until softened. Add the rest of the ingredients, bring to a boil, then reduce the heat to low, and simmer until the sauce is reduced and thickened, 15 to 20 minutes.
  • Preheat the grill or a grill pan to medium-high. Grill the steaks for about 3 minutes per side for medium-rare; brush the steaks with sauce during the last 2 minutes of cooking time. Allow the steaks to rest for 10 minutes, then slice on the diagonal, and serve with the remaining sauce on the side.

peanut oil (for frying)

Steps:

  • Combine flour and salt in a bowl, whisk in beer.
  • Let stand 30 minutes.
  • Stir in parsley and onion.
  • Salt and pepper chicken.
  • In large skillet, heat 2 inches of the oil.
  • Dip chicken in batter and fry until done and golden brown.

I use this often on my outdoor and indoor grill or for broiling, brush this on the last 15-20 minutes of cooking time. Plan ahead this sauce needs to chill for a minimum of 6 hours before using. This will keep refrigerated for up to 1 week.

1 small onion, minced
1 -2 tablespoon fresh minced garlic (or to taste)
2 -3 tablespoons oil (do not use olive oil)
1 1/2 cups chili sauce (store-bought)
3/4 cup light molasses
3/4 cup beer
2 tablespoons Dijon mustard
2 tablespoons chili powder
2 teaspoons soy sauce
1 teaspoon Tabasco sauce (or to taste)
1 1/2 teaspoons fresh lemon juice
1 teaspoon liquid smoke
salt (optional)

Steps:

  • In a heavy sauce sauté onion and garlic in about 2 tablespoons oil until soft (about 3 minutes).
  • Add in all remaining ingredients; mix to combine and bring to a boil, stirring occasionally.
  • Reduce heat; simmer until the sauce thickens and is reduced to around 2 cups or a little more, stirring occasionally, season with salt if desired (this should take about 20 minutes).
  • Cool completely, cover and refrigerate for a minimum of 6 hours.

From my Aunt Alta's recipe collection. This one is unique in that it is made specifically for your ham leftovers(in my case, after Christmas leftovers). You can also buy a ham steak, cook it however you like, and then serve this sauce ladled over the top of each portion. This version does not contain vinegar or mustard, but is instead molasses based. This is rather sweet. Servings are just an estimate.

1 tablespoon granulated sugar
4 teaspoons all-purpose flour
1 cup water
1/2 cup seedless raisin (I like golden raisins)
3 tablespoons molasses (such as Brer Rabbit)
1 tablespoon lemon juice
1 pinch salt, to taste
1 tablespoon unsalted butter

Steps:

  • Mix sugar and flour together in a small saucepan (no heat yet).
  • Gradually whisk in the water until blended.
  • Turn on heat and bring to a boil, stirring constantly.
  • Add raisins, molasses, lemon juice, and salt to taste, stirring to blend.
  • Lower heat to a simmer and let simmer 5 minutes, or longer if you like it thicker.
  • Add butter and cook until melted and blended.
  • Pour over heated leftover ham.
