2 lbs steak*
1/4 cup olive oil
1 tsp mild vinegar (Sherry or rice, optional)
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 shallot
2 cloves garlic
5-6 sprigs fresh thyme
1 tsp paprika
1 tsp Kosher salt
red pepper flakes to taste (optional)
6 oz beer (use Munich helles, Czech pils, German pilsner, American craft lager or Vienna lager)

Steps:

  • Prepare a non-reactive container or freezer bag appropriately sized for the steak(s). Thinly slice shallot, mince or roughly chop the garlic. Pick the thyme leaves (optional).
  • Add all marinade ingredients to container (beer should be last) and whisk until well combined. Add steak and make sure it is well covered with marinade.
  • Marinate for 3 to 24 hours, covered and refrigerated. Occasionally move the steak around to ensure all of its surfaces are adequately accessed by the marinade. Bring to room temperature before cooking.
  • Heat grill (or pan/griddle) to medium-high to high heat. Scrape marinade off the steak surface and discard. Pat dry steak and season lightly with salt and pepper. Grill or sear for about 3-5 minutes per side, flipping once until your desired doneness is reached. (See steak temperatures below).
  • Remove from the grill and rest the steak before slicing/serving. You may lightly cover it with foil while resting.

This marinated flank steak recipe will have everyone singing your praises, begging for the recipe and coming back for seconds and thirds. The flank steak marinade creates melt-in-your-mouth tender, juicy steak with complex savory, tangy, sweet and spicy notes. The marinade is made with soy sauce, balsamic, lemon juice, brown sugar and seasonings that infuse the steak with tons of flavor. And the best part of grilled flank steak? It's SO easy with zero clean up! Marinate then grill - that's it! (I've also included oven and stove top instructions.) Flank steak is also extremely versatile and can be served up with your favorite sides like mashed potatoes and fruit salad or in salads, wraps, pasta, sandwiches and more.

1 1/2 -2 pounds flank steak
1/2 cup olive oil
1/3 cup reduced sodium soy sauce
1/4 cup balsamic vinegar
2 tablespoons lemon juice
2 tablespoons brown sugar
1 1/2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 TBS EACH onion powder, garlic powder
1 tsp EACH paprika, pepper, red pepper flakes, dried dill weed
1/2 tsp EACH dried oregano, dried rosemary, ground coriander

Steps:

  • Whisk marinade ingredients together in a freezer size ziploc bag. Reserve 2 tablespoons to use later. Add steak, press out excess air and seal. Massage marinade into the steak with your hands through the outside of the bag.
  • Marinate in the refrigerator at least 2 hours or up to 12 hours.
  • Preheat outdoor grill (or indoor grill pan) to medium-high heat, (450 degrees F when lid is closed).
  • Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.
  • Remove the steak to a cutting board and let rest for 10 minutes before slicing. Slice steak into thin strips against the grain (perpendicular to the long strands) or ½-inch cubes. Drizzle with the 2 tablespoons reserved marinade.

1 orange, thinly sliced with peel
1/2 onion, thinly sliced
4 garlic cloves, halved and smashed
2 1/4 pounds skirt steak
Kosher salt and fresh ground black pepper
1 cup light-colored beer (preferably lager style)
1/2 cup soy sauce

Steps:

  • In a wide, shallow glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish. Sprinkle the steak all over with salt and pepper and put in the dish on top of the orange and onion slices. Scatter the remaining orange, onion and garlic over the steak and pour in the beer and soy sauce. Cover with plastic wrap and marinate for 1 hour at room temperature or up to overnight in the refrigerator.
  • Prepare a barbeque on medium-high heat or preheat a broiler. Remove the meat from the marinade and discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium-rare. Serve as desired.

2 teaspoons ground cumin

Steps:

  • Using sharp knife, lightly score flank steaks about 1/8 inch deep on both sides in a crisscross pattern at 1/2-inch intervals. Place steaks in 13x9x2-inch glass baking dish. Sprinkle steaks on both sides with oregano and cumin and generous amount of coarse salt and freshly ground pepper. Drizzle olive oil over both sides of steaks, rubbing oil and spices into meat. Add green onions, beer, and Worcestershire sauce, turning steaks several times to coat both sides. Cover and chill at least 3 hours, turning occasionally. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Prepare barbecue (medium-high heat). Brush grill rack lightly with oil. Grill steaks to desired doneness, 3 to 4 minutes total per side for medium-rare, turning steaks 1/4 turn after 1 1/2 minutes to form crisscross grill marks, if desired. This flank steak is perfect for tacos. The meat is marinated in a flavorful chili and beer mixture, then grilled to perfection.

2 1/2 pounds flank steak
For marinade:
1/2 cup lager beer
2 tablespoons white vinegar
2 tablespoon olive oil
3 dried guajillo peppers
2 dried chiles de árbol
1/2 yellow onion (roughly chopped)
2 cloves garlic (minced)
2 teaspoons tomato paste
1 teaspoon kosher salt
1/2 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon cinnamon

Steps:

  • Cut dried chilies and remove stems. Submerge them in a bowl of hot water, covered, for 15-20 minutes.
  • Remove chilies and add them to a food processor with the remaining marinade ingredients. Puree the mixture. Add 1 to 2 tablespoons of water if it is too thick.
  • Cut the flank steak in half down the center and place both halves into a resealable plastic bag. Pour marinade over the top, and work it around the meat for even coating. Seal the bag and place it in the refrigerator for 6-2 hours.
  • Prepare the grill for an indirect cook with coals banked to one side, creating a hot zone.
  • Remove steak from marinade, and place it onto the grill's cool zone (no coals). Brush the remaining marinade on the steak. Close the lid and cook for 5-7 minutes; turn the steak over and cook for an additional 5 minutes. Cook time is entirely based on your desired doneness. We recommend medium doneness for this recipe (140 degrees F.).
  • Transfer steak to the hot zone (direct heat) to finish off, about 1-2 minutes per side. This will sear the steak and provide a nice flavorful crust. Keep a close eye on it so that it doesn't burn.
  • Once cooked, remove the steak from the grill and place it on a clean cutting board. Let the meat rest for 10 minutes before carving. Enjoy!

1/4 cup soy sauce
2 tablespoons olive oil
3 large garlic cloves, minced
2 teaspoons Dijon mustard
2 teaspoons chopped fresh rosemary
2 teaspoons Worcestershire sauce
2 teaspoons fresh coarse ground black pepper
1/2 cup lager beer (such as Heineken)
2 1/2 lbs flank steaks

Steps:

  • Whisk first 7 ingredients in medium bowl, then whisk in beer. Pour marinade into large resealable plastic bag. Add steaks, seal bag, and chill 1 day, turning bag occasionally.
  • Grill over medium-high heat for 5 minutes per side for medium rare. Alternatively, place steaks in hot grill pan or skillet and cook until well browned and thermometer inserted into center registers 125°F to 130°F for medium-rare, about 5 minutes per side.
  • Transfer steaks to carving board and let rest 5 minutes.
  • Slice steaks thinly across grain. Arrange on platter; spoon any accumulated juices over and serve.

  • Place the steak on a cutting board and find the natural graining running lengthwise through the steak. Cut the steak into 1/4 inch thick slices AGAINST the grain. This is to ensure the steak is tender and easy to bite. If you slice with the grain, the meat will be much tougher to bite through.
