OLD FASHIONED STRAWBERRY JAM
This delicious Strawberry Jam is made following a simple Old Fashioned recipe with only 3 ingredients and no added pectin. Makes 6 250ml (8 fl oz) jars.

- Place 2 saucers in the freezer Prepare jars for sterilization by washing in warm soapy water and rinsing well. Wash, hull and halve the strawberries. In a large non-reactive pan add all ingredients. Warm gently without boiling and stir carefully with a wooden spoon to combine - Avoid breaking up fruit. Increase the heat and without boiling, continue to stir until the sugar is fully dissolved. Boil without stirring for 20 minutes. Sterilize jars in oven (120C for 30 minutes) Start to test for setting point - take mixture off heat and spoon a small amount of mixture onto chilled saucer, return to freezer for 30 seconds then draw your finger through the mixture. When the mixture has reached setting point it should leave a trail clean trail on the plate and not flood back over. If setting point not reached cook for another 5 min and repeat. It could take up to 40 minutes to reach setting point. When you are happy setting point has been reached, remove from heat and rest for 5 minutes. Remove any scum or froth that forms on the surface. Pour in to hot sterilized jars, seal and label.

BONE-IN HAM COOKED IN BEER
This is a recipe we have used for the past 5 years. The beer really tenderizes the ham. Using beer is probably a Wisconsin thing. We seem to find many uses for it. But don't worry, the ham will not taste like beer when it is done other than maybe a small hint on the bottom portions. I don't like beer at all, so I was quite skeptical at first, but when I found out that the ham I had at my friend's house for Christmas the year before had beer used to make it, I tried it and have been hooked ever since.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 18 quart roasting pan.
- Place the ham, with the fattier side up, in the roaster. Use toothpicks to secure pineapple rings on the ham. Pour the beer over the ham. Place lid on roasting pan.
- Bake 6 to 8 hours, or until cooked through.
- Remove the pineapple rings and let sit 15 minutes before slicing.

BEER JAM
It is not jam in the classic sense, it is more a preserved sauce. Use a stout beer to make this dark syrup. Lovely to glaze beef or pair with a wedge of well aged cheddar.

- In a large heavy bottomed pan over high heat bring the beer, sugar lemon juice, vanilla, allspice, cloves, star anise and orange zest to a boil.
- Remove from heat, transfer to storage container and refrigerate overnight or up to 5 days.
- Strain the liquid and save the vanilla for another use.
- Pour into a large wide pot, stir in the pectin, and bring to a boil over high heat being sure it does not boil over.
- Cook, stirring occasionally, until the mix reaches about 215 F and has the texture of a light syrup, 20-25 minutes.
- Use standard canning techniques to finish seal in 6 half pint and 1 4 oz jars.
- Does not include refrigeration time.

- In a wide, heavy-bottomed pot set over medium-high heat, combine all the ingredients and bring to a simmer. Turn off the heat and let the mixture cool, then transfer to an airtight container and refrigerate overnight or up to 5 days.
- Strain the mixture through a sieve and into a wide, heavy-bottomed pot (save the rhubarb for later). Bring the liquid to a boil over high heat, stirring occasionally, until the liquid reaches 215°, about 12 minutes. Return the rhubarb to the pot and simmer, stirring occasionally to prevent scorching, until the jam lightly coats the back of a spoon and its temperature has returned to 215°, 10 to 15 minutes.
- In a large pot of simmering water, sterilize seven ½-pint jars. Once the jam is finished, use tongs to remove the jars from the pot and set upside down on a kitchen towel to drain. Turn off the heat and soak the lids and bands in the hot water. Turn the jars upright and pour the jam through a funnel to fill each jar with jam up to ½ inch from the rim. Wipe the rims clean with a kitchen towel and seal with the lids. Screw on the bands until snug.
- Place a canning rack into the pot of hot water and return to a boil. Use tongs to lower the jam-filled jars into the pot, making sure there is enough water to cover the jars by 1 inch. Boil the jars for 10 minutes and turn off the heat. Leave the jars in the hot water for 5 minutes, then use tongs to remove them. Cool completely before storing in a cool, dark, dry place.

- Cut the bacon into half-inch slices and add them to a large frying pan. Don’t worry if the bacon pieces stick together, they will come apart as they cook. Cook over medium-high heat for about 10 minutes, stirring frequently until the bacon is cooked but still quite chewy. A few crispy bit are ok. Use a slotted spoon to remove the bacon from the pan.

- Use immediately or refrigerate for up to a week. Bring back to room temperature before serving. There will be little spots of white fat when you take it out of the fridge. As the jam comes to room temperature, these will disappear.
