Depending on whom you talk to, making ice cream floats with beer is either a genius idea, or a horrible mistake. The key is to choose a beer that's on the toasty, malty, sweeter side, and stay away from beers that are too hoppy, dry, and bitter. Here I pair coffee ice cream with stout and vanilla, the safest option, with a Belgian raspberry sour (or any fruity beer). I'd make a small test glass first, to make sure it works for your palate.

1 cup chocolate stout beer
1 scoop coffee ice cream
1 pinch unsweetened cocoa powder
1 cup Belgian-style raspberry sour beer
1 scoop vanilla ice cream

Steps:

  • Version 1: Pour stout into a British pint glass and scoop coffee ice cream on top. Garnish with a dusting of cocoa powder.
  • Version 2: Pour raspberry beer into a pint glass; top with vanilla ice cream.
  • Add a straw to each float and serve with spoons alongside.

1 pint vanilla bean ice cream
2 quarts root beer

Steps:

  • Hang a large, well packed scoop of vanilla ice cream on the edge of a fountain glass or other tall drinking glass. Fill the glass 3/4 full with root beer. Set the fountain glass on a salad plate, underlining the glass for overflow. Serve floats with straws and parfait spoons. When you are ready to enjoy the floats, knock the ice cream into the root beer and watch it fizz up as the ice cream floats. Yummy! This is the simplest and my most favorite fountain drink!

1 (12 fluid ounce) can or bottle root beer
½ cup whipped cream
4 maraschino cherries

Steps:

  • Place 1 scoop of ice cream into each of two tall glasses. Pour root beer carefully over the ice cream. Add another scoop and repeat. If possible, repeat again. Top each with whipped cream and cherries.

To make an old-fashioned creamy root beef float that is creamy from the word "go," melt a couple of tablespoons of ice cream per float and pour that in the bottom of your glass first. You're welcome. Now go make one immediately.

1/2 cup vanilla bean ice cream, melted but still cold
8 scoops vanilla bean ice cream
4 12 oz bottles your favorite root beer
1 cup whipped heavy cream, unsweetened (my preference)
4 maraschino cherries

Steps:

  • Pour 2 Tablespoons of melted vanilla ice cream in the bottom of your glasses.
  • Top off with about 1/4 of the bottle of root beer.
  • Add one scoop of ice cream to each glass and then slowly fill with root beer until the foam reaches the top rim of the glass.
  • Plop in another scoop of ice cream. Spoon or pipe on a generous swirl of whipped cream, and then perch a drained maraschino cherry on top.
  • Enjoy, and keep your bottle of root beer right next to you, because as you sip, you'll want to keep adding root beer. It's like a bottomless float!

1 (18.25-ounce) package yellow cake mix
1 (12-fluid ounce) bottled or canned root beer
¼ cup vegetable oil
3 eggs
3 tablespoons root beer, for drizzling over the cake
½ cup powdered sugar
3 tablespoons root beer

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease the bottom of a 10-inch bundt pan with butter or oil and lightly coat with flour.
  • In a medium bowl, whisk together the cake mix, 12 ounces of root beer, oil, and eggs until the mixture is smooth and well-combined.
  • Pour the batter into the greased bundt pan. Bake for 35 to 40 minutes. To check for doneness, insert a toothpick into the center of the cake - if it comes out clean, it's done baking.
  • Flip the pan onto a wire rack and let the cake cool completely while in the pan.
  • Using a knife or skewer, poke holes into the cake, with a 2-inch space in between.
  • Remove the cake from the pan. Loosen the sides with a knife or flat spatula if needed.
  • Drizzle 3 tablespoons of root beer over the poked cake.
  • If making a root beer glaze, stir together powdered sugar and 3 tablespoons of root beer until smooth. Spread glaze over the cake.
  • Slice, serve, and enjoy!
