Roast Beef and Cheddar Sliders image

These Roast Beef and Cheddar Sliders are a simple comfort food, perfect for tailgating, holiday party, or event. While the roast beef and cheddar are delicious, the butter topping really sets this one apart from all the others.

Categories     All Dinner

Time 40m

Number Of Ingredients 10

1 12 count package Hawaiian sweet rolls
3/4 pound roast beef, thinly sliced
3/4 pound extra sharp cheddar cheese, thinly sliced
1 stick butter, melted
2 teaspoons Worcestershire Sauce
1 tablespoon dijon mustard
1/2 tablespoon poppy seeds
2 teaspoons minced dried onion
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. Line a 9X13 inch baking pan with foil, and spray with non-stick cooking spray. Set aside.
  • Open the rolls from their package, slide out the tray, and slice them in half, where you have all their tops in one "sheet", and all their bottoms in one "sheet". Place the bottoms in their sheet like form in the prepared baking dish.
  • Layer half of the roast beef on the rolls. Then layer all of the cheese. Top cheese with remaining half of roast beef. Top with the sheet of the tops. Set aside.
  • Melt the butter in a small microwave safe bowl, about a minute. Whisk in the Worcestershire Sauce, mustard, poppy seeds, onion, salt, and pepper. Evenly pour this over the tops of the rolls. Cover with foil, and allow to rest (soak of the goodies!) for 10 minutes.
  • Bake covered for 20 minutes, remove the foil, and bake for another 5 to 8 minutes. Slice into individual sliders, and serve!

Provided by Fanny Slater

Categories     Sliders

Time 30m

Number Of Ingredients 12

12 slider buns (like dinner rolls or Hawaiian sweet rolls)
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1 pound thinly sliced deli-style roast beef
6 slices sharp provolone cheese
4 tablespoons unsalted butter, melted
1/2 tablespoon packed light brown sugar
1 tablespoon Dijon mustard
2 teaspoons finely minced sweet onion
1 tablespoon Worcestershire sauce
1/2 teaspoon coarse salt
1 tablespoon poppy seeds

  • Split the buns down the middle (keeping them intact if they came stuck together) and place them into the baking dish.
  • In a small bowl, mix together the mayonnaise and horseradish. Spread evenly on the bottom side of each bun, and then top with the roast beef, cheese, and top portions of the buns.
  • In a small saucepan over low heat, melt the butter and brown sugar together. Once the brown sugar has dissolved into the butter, remove the pan from heat and then whisk in the mustard, onion, Worcestershire, and salt.
  • Spoon the butter mixture over the sandwiches and then sprinkle them with the poppy seeds. Loosely cover the sliders with foil and bake for 10 minutes. Remove the foil, and continue to bake until the top buns are golden brown and the cheese has melted, about 8-10 more minutes. Serve warm.

Provided by Sandy

Categories     Main Course

Time 35m

Number Of Ingredients 20

1½ lb. ground beef
½ cup panko breadcrumbs
1 large egg
1 Tbsp. Worcestershire sauce
1 Tbsp. yellow mustard
2 cloves garlic (minced)
Kosher salt
Freshly ground black pepper
12 dinner rolls or pretzel buns
1 clove garlic (crushed)
1 Tbsp. olive oil
½ cup whole milk
⅓ cup Guinness or other stout
1 8 oz. block cream cheese (softened)
½ cup sharp white cheddar (divided)
½ cup shredded mozzarella
1 cup shredded Dubliner or Gruyere cheese
1 Tbsp. Dijon mustard
Pinch cayenne
Kosher salt

Steps:

  • Heat oven to 400°. Line a large baking sheet with foil and spray with cooking spray.
  • In large bowl, mix together beef, panko breadcrumbs, egg, garlic, Worcestershire sauce and yellow mustard. Season with salt and pepper. Shape mixture into 12 balls and flatten slightly to create patties. Bake uncovered until cooked through, 15-20 minutes. Set aside.
  • In a medium pot, cook the garlic in olive oil on low heat, then add the milk and beer. Bring liquids to a simmer. Add the cream cheese to the pot and soften over low heat-when the cream cheese begins to melt, add in cheddar, mozzarella, Dubliner, Dijon mustard, and cayenne, stirring with a whisk until smooth. Salt to taste.

  • For Beer Cheese Sauce: Melt butter in small pan, then whisk in the flour until smooth. Cook the flour over medium heat for 2 minutes, stirring. Then whisk in the cream, a little at a time, whisking until smooth. Whisk in the beer and mustard. Once this mixture starts to steam slightly and almost simmer, start adding in small amounts of shredded cheese, whisking until completely melted in each time. Stir in chives, add salt and pepper to taste, and keep the cheese sauce warm either on the side burner or in the BBQ grill while you cook the burgers.
  • While burgers are cooking, melt butter in small frying pan and add cabbage. Add a pinch of sugar and a little salt and pepper, and sauté until crisp-tender to soft, as you personally prefer. Stir in pre-cooked and torn bacon, and sauté 1 minute longer. Remove to a bowl. Use the same pan, and add a little more butter of needed, and fry piles of corned beef on both sides.
