Steps:
- Open beer and bring to room temperature It is desirable to get most of the gas out of the beer, but don't let it get stale. You can heat it in the microwave a bit if you are in a hurry, but don't boil it.
- Grate cheese and garlic in a food processor.
- Switch to the mixing blade and add remaining ingredients, mixing until thoroughly blended.
- Refridgerate overnight. This really helps the flavors develop and meld properly.

CHEESE LOG
I really liked this simple cheese log recipe. It has a lot of flavor from the garlic and onion. The crushed red pepper really gives this zing... not too spicy, but just enough to keep you coming back for more. This is easy to throw together and would be great for a casual gathering like a football game but just as lovely served...

AMY'S BEER & RANCH CHEESE BALL
I came across a recipe for "beer dip" a few years ago that I tweaked to turn into this wonderful cheese ball. It has since become my standard cheese ball, requested at family functions. It's rolled in cheddar cheese, because that's my family's preference-- I'm sure it could be rolled in chipped beef or nuts if you prefer. Cooking time includes time to chill and form the cheese ball.

MENG CHEESE SPREAD
It's probably been 25 years since my father discovered this yummy appetizer in the IGA store in Mexico, MO. One of the butchers made the cheese logs to sell in the meat department, and I think his name was Meng (could be first name or last name). After making the logs for the last 2-3 years, I find it easier to serve as a cheese spread stored in an air-tight deli container. Since I'm revising the recipe this year, I've included variations (all tried and tested) for Mild, Medium & HOT! From the kitchen of Howard Thornburg, Moberly MO

- To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl combine the flours, salt, and yeast. Stir in the beer, water, honey, and butter. , Turn the rough dough onto a lightly oiled surface and knead it briefly, just enough to bring it together in a cohesive mass. You can also do this right in the mixing bowl, if you choose. The dough will be stiff, yet still sticky. That's OK; don't add any additional flour.
- Cover the bowl and place it somewhere warm. After 30 minutes, run a bowl scraper, spatula, or your fingers down the inside far wall of the bowl, bring the dough up from the bottom, and fold it over on top of itself. Repeat three times, rotating the bowl 90° each time.
- Cover the bowl and let the dough rest for an additional 30 minutes before refrigerating for 8 to 16 hours. , Remove the dough from the refrigerator, divide it into 10 pieces.
