Quickest thing going. Even my 12 year old son can make it in less than 15 minutes! Great for kids, big and small alike. Believe it or not, this dish is ready to eat in about 10 minutes! Delicious!

2 cups instant rice
1 (5 ounce) can chicken chunks, drained
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Prepare rice according to package directions.
  • When rice is ready, add chicken to pot and continue to stir over low heat. Mix in soup, and continue cooking until heated through.

Number Of Ingredients 10

3 quarts water
4 bone-in chicken breast halves (about 3 pounds)
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon poultry seasoning
1 teaspoon chicken bouillon granules
3 medium carrots, chopped
2 celery ribs, chopped
1 small onion, chopped
1/2 cup uncooked long grain rice

Steps:

  • In a Dutch oven, place water, chicken, salt, pepper and poultry seasoning. Bring to a boil. Reduce heat; cover and simmer until chicken is tender, 25-30 minutes., With a slotted spoon, remove chicken from broth. When cool enough to handle, remove meat from bones; discard skin and bones. Cut chicken into bite-size pieces. Skim fat from broth; add chicken and remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables and rice are tender, 25-30 minutes.

A hearty Chicken and rice soup made with homeade broth and a healthy serving of veggies. Great way to make a delicious meal from your leftover chicken.

Number Of Ingredients 8

3 1/2 cups chopped carrots
3 1/2 cups chopped celery
1 large chopped onion
1 (14 ounce) bag of chopped frozen broccoli
1 beer can cooked chicken, leftover (any kind of leftover roaster will do)
3 (10 3/4 ounce) cream of chicken soup (Cream of Celery and Mushroom also works)
18 cups water
3 1/2 cups rice

Steps:

  • Take Leftover chicken and remove all meat from bones and set meat aside.
  • Put the rest of the chicken into a large pot with the 18 cups of water. Bring to boil and reduce to medium heat. Simmer for 10 minutes.
  • Saute Carrots, Celery, and Onion in large lightly greases skillet on medium heat for about 10 minutes.
  • Pour your water with the simmering chicken through a strainer into a large bowl. Discard bones and rest of carcass.
  • Pour broth back into Large pot and Bring to a boil. Add Sauteed vegetables to boiling broth. Add chickem meat that you set aside from the roaster. Boil for five minutes.
  • Add rice and reduce heat to low. Simmer for 10-15 minutes of until rice is tender.
  • Add Cream of chicken soup and mix throughly. (You can add more or less soup depending upon your preference).
  • Let cool, salt to taste, and serve.
