1 lb bratwurst
1/2 red pepper, 1/2-inch diced
1 medium Spanish onion, 1/2 inch diced
2 teaspoons cholula hot sauce
2 tablespoons chili powder
1 tablespoon chipotle pepper (puree chipotle pepper from a can)
1/2 teaspoon ground thyme
1 teaspoon ground cumin
6 cloves chopped garlic
8 ounces beer
2 cups tomato sauce
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can kidney beans, drained
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sliced green onion

Steps:

  • Remove the brats from the casings and crumble into 2" pieces.
  • Heat a 2-quart stockpot over medium heat, Sauté brat crumbles until brown and cooked. Drain fat.
  • Add remaining ingredients except green onions and bring to a boil. Turn down to simmer and cook for 1 hour. Fold in green onions and enjoy!

1 boneless beef chuck steak (1 pound), cubed
2 tablespoons canola oil, divided
1 pound uncooked bratwurst links, sliced
1 medium onion, chopped
4 garlic cloves, minced
3 cans (14-1/2 ounces each) diced tomatoes with mild green chiles, undrained
2 cans (16 ounces each) hot chili beans, undrained
1 bottle (12 ounces) beer or 1-1/2 cups beef broth
1 can (14-3/4 ounces) cream-style corn
1 can (8 ounces) pizza sauce
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
Sour cream, optional

Steps:

  • In a Dutch oven, brown steak in 1 tablespoon oil. Remove and keep warm. , Add the bratwurst, onion and remaining oil to the pan; cook and stir over medium heat until sausage is no longer pink. Add garlic; cook 1 minute longer. , Return steak to the pan. Stir in the tomatoes, beans, beer, corn, pizza sauce, chili powder, cumin and pepper flakes. , Bring to a boil. Reduce heat; simmer, uncovered, until heated through, 25-30 minutes. Serve with sour cream if desired.

  • Warm oil in a large cast iron pot over medium-high heat. Add onion, bell pepper and garlic, and cook until the vegetables are tender but not brown (5 - 6 minutes), stirring occasionally. Add the ground pork, and cook until browned all over. I like to get all the meat in the pan, stir to combine, and then let sit for a few minutes to really get some brown color. If you continuously move the meat around, no caramelization will occur. You won't get that much dark brown color here, but even just a little bit will help with flavor.
  • Stir in chili powder and cumin, and cook for 2 minutes, stirring often. Add tomatoes with juices, beans, tomato paste, beer, oregano,salt and pepper. Bring the mixture to a simmer then reduce heat to low. Simmer, uncovered, for an hour.
  • Meanwhile, cook brats using the Johnsonville Sausage Grill. This takes about 15 minutes. Let the brats rest for 5 minutes, then cut into 3/4-inch slices. Stir in the brats into the chili during the last 30 minutes of cooking. To finish the soup, season to taste with salt.
  • To serve, spoon chili into soup bowls and top with shredded cheese, chopped red onion and sauerkraut.
