Beer-Braised Sausages with Warm Potato Salad image

Beer, sausage, and potatoes are a classic combination. We simmer everything together to make a satisfying one-pot meal.

2 tablespoons extra-virgin olive oil
1 1/2 pounds sweet Italian pork sausages
1 medium yellow onion, halved and thinly sliced
12 ounces pale ale beer
1 1/2 pounds small red potatoes, halved
Coarse salt and ground pepper
1 tablespoon red-wine vinegar
2 tablespoons chopped fresh parsley

Steps:

  • In a large Dutch oven or heavy pot, heat 1 tablespoon oil over medium-high. Add sausages and cook until brown on all sides, about 8 minutes. Add onion and cook until softened, about 7 minutes. Add beer, potatoes, and 2 cups water; season with salt and pepper and press to submerge potatoes in cooking liquid. Bring to a boil; cover, reduce heat to medium, and cook until potatoes are tender, about 20 minutes.
  • Transfer sausages to a serving platter and keep warm. In a large bowl, stir together 1 tablespoon oil, vinegar, and parsley. With a slotted spoon, transfer potato mixture to dressing (reserve cooking liquid) and toss to combine.
  • Return pot to high heat; boil cooking liquid until reduced to 1 cup, about 12 minutes. Return sausages to pot and cook until heated through, 2 minutes. Place sausages and dressed potatoes on serving platter; drizzle half the sauce over top. Serve sausages and potatoes with remaining sauce alongside.

12 smoked sausages with cheese (such as Hillshire Farms cheddar wurst)
3 tablespoons butter, melted
1 tablespoon brown sugar
1 tablespoon grainy mustard
3 large onions, sliced into 1/4-inch rings
1 teaspoon caraway seeds
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (12 oz) beer
12 hoagie rolls, split
Mustard and shredded cheddar (optional)

Steps:

  • 1. Heat a large nonstick skillet over medium-high heat. Add sausages and brown on all sides, about 10 minutes. 2. Meanwhile, coat the bowl of a slow cooker with nonstick cooking spray. Place butter, brown sugar and mustard in slow cooker; stir in onions, caraway seeds, salt and pepper. Place sausages over onions and pour beer over the top. 3. Cover and cook on HIGH for 4 hours. Serve sausages on rolls with onions. Top with mustard and cheddar, if desired. Beer Cheese Sauce: 12 ounces pasteurized cheese product, cubed, such as Velveeta 1 tablespoon Dijon mustard 1/2 cup reserved beer braising liquid, plus more as needed Add the cheese and mustard to a medium saucepan over medium heat. Stir until melted and smooth. Add the beer braising liquid and stir to combine. Add more braising liquid if the sauce is too thick; the sauce should be velvety. Yield: 2 cups.

3 tablespoons olive oil
3 lbs Italian sausages
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 garlic cloves, chopped
2 (12 fluid ounce) bottles beer
1 (6 ounce) can tomato paste
3 tablespoons fresh oregano, chopped
3 tablespoons fresh cilantro, chopped
2 tablespoons hot sauce
salt and pepper

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat.
  • Cook sausage until browned on all sides. Remove sausage from pan, and set aside.
  • Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom.
  • Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender.
  • Slice the sausages into bite size pieces, and add to the peppers.
  • Cover, and simmer until sausage is cooked through.

These onions are great with burgers (try it with my recipe #309195).They can be cooked ahead, cooled and kept in the fridge. When you need them, simmer them gently. When they are hot, add a splash of beer to perk up the flavour.

1/2 ounce unsalted butter
1 large onion, thinly sliced
8 fluid ounces beer
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Melt the butter in a pan. Add the onions and cook until tender.
  • Add 6 fl oz beer, sugar and salt. Cook approx 16/18 minutes until the beer is absorbed and the onions are starting to brown.
  • Add the remaining beer and simmer gently.
  • Serve warm to accompany burgers.

1 tablespoon canola oil
3 onions, peeled and slivered lengthwise (1 1/2 pound total)
1 cup stout beer (such as Guinness) or 1 cup dark beer (such as Guinness)
1 teaspoon fresh thyme leave
salt and pepper
8 sausages (1 1/2 to 2 pound total)
2 tablespoons chopped parsley

Steps:

  • Pour oil into a 10- to 12-inch ovenproof frying pan over high heat; when hot, add onions and stir often until slightly limp and beginning to brown, about 4 minutes.
  • Stir in beer and thyme; cook until liquid is reduced by about half, 3 to 5 minutes.
  • Stir in salt and pepper to taste.
  • Pick sausages all over with the tip of a sharp knife and arrange in a single layer on onions mixture.
  • Bake in a 375°F regular or convection oven until sausages are heated through, about 20 minutes. Sprinkle with parsley.
