1 piece boneless fully cooked ham (16 ounces)
6 medium carrots, halved lengthwise and cut into thirds
4 medium red potatoes, quartered
2 medium onions, cut into wedges
1 bay leaf
1 teaspoon dried thyme
1 teaspoon peppercorns
1 garlic clove, halved
1/2 teaspoon whole allspice
1/2 medium head cabbage, cut into wedges

Steps:

  • Place the ham, carrots, potatoes and onions in a Dutch oven. Place the bay leaf, thyme, peppercorns, garlic and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string. , Add to pan. Add water just to cover the ham and vegetables; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add cabbage; cover and simmer 15-20 minutes longer or until vegetables are tender; drain. Discard spice bag.

This boiled and baked ham recipe is great at Christmas or Thanksgiving. Get a large piece of ham to last a few days and eat with baked potatoes or with eggs for breakfast. Delicious.

1,5kg medium-sized ham (or any size you need)
2 tbsp English mustard
2 tbsp brown sugar
1 tbsp runny honey

Steps:

  • Firstly soak your ham in water for several hours to reduce the salty taste. Leave overnight if you have the time.
  • When you are ready to boil the ham, change the water and slowly bring to the boil. Boil for about one hour and remove from the water. In the meantime mix the mustard, sugar and honey to produce a nice sauce for the glaze.
  • Pre-heat the oven to 180C.
  • Allow the ham to rest for 5 minutes. Then remove any fat and place the ham in a baking tray.
  • Cover the meat in the glaze mixture all over and place in the oven.
  • Turn over after 15 minutes and re-baste in the glaze.
  • After about 30-40 minutes in the oven, or when the glaze has started to turn a caramelized colour, remove the ham from the oven.
  • Leave to rest for 10 minutes before carving.

1 piece ham (smoked if you want a stronger flavour)
1 bouquet garni
2 small onions, peeled

Steps:

  • The night before the gammon is to be cooked place it in a bowl of cold water and allow to soak.
  • This removes some of the salt and tenderises it a little bit.
  • Place in a large cooking pot, (make sure you have a lid for it), cover with cold water, add the onions and bouquet garni and bring to the boil.
  • Turn the heat right down so the water is barely bubbling and put on the lid.
  • Cook for 20 minutes per pound of meat.
  • Once the cooking time is up leave the meat in the liquour until cooled.
  • This stops it tensing up, and drying out, and makes it lovely and tender.

1 cup packed brown sugar

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Set aside 2 tablespoons beer. Pour remaining beer over the ham. Bake, uncovered, at 350° for 1 hour., In a small bowl, combine the brown sugar, vinegar, mustard and reserved beer; spread over ham. Bake 40-45 minutes longer or until a thermometer reads 140°, basting occasionally.

This is a recipe we have used for the past 5 years. The beer really tenderizes the ham. Using beer is probably a Wisconsin thing. We seem to find many uses for it. But don't worry, the ham will not taste like beer when it is done other than maybe a small hint on the bottom portions. I don't like beer at all, so I was quite skeptical at first, but when I found out that the ham I had at my friend's house for Christmas the year before had beer used to make it, I tried it and have been hooked ever since.

1 (20 ounce) can sliced pineapple
2 (12 fluid ounce) cans beer

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 18 quart roasting pan.
  • Place the ham, with the fattier side up, in the roaster. Use toothpicks to secure pineapple rings on the ham. Pour the beer over the ham. Place lid on roasting pan.

1 1/4 cups beer (plus a few tablespoons for the glaze)
1 cup brown sugar
1 tablespoon flour
1 teaspoon dry mustard
2 tablespoons red wine vinegar
Optional: whole cloves

Steps:

  • Remove the baked ham from the oven and score the fat diagonally in a criss-cross pattern. Stud the ham with whole cloves, if desired. Skip scoring and the cloves if the ham is spiral-sliced. Spoon the glaze mixture over the ham.
  • Serve the ham sliced; drizzle with the cooking liquids, if desired.

40 ounces beer (I use Budweiser)

  • unwrap ham and place in a large dutch oven.
  • pour beer over the ham, making sure that ham is covered.
  • cook on medium heat for 2 to 4 hours or until tender, may need to turn the ham to help the flavor of the beer get cooked into the ham.

1 tablespoon butter
1/2 cup beer

Steps:

  • Peel beets, and chop them into 1-inch chunks; roughly chop greens. Put both in a saucepan with smoked ham hock or ham steak, butter and beer.
  • Bring to a boil, then reduce to simmer. Cover, and cook until the beets are tender and the greens wilted, 20 to 25 minutes. Boil off any excess liquid. Garnish: Caraway seeds.
