Number Of Ingredients 12

2 tablespoons beef drippings or butter, plus more as needed
1 tablespoon olive oil
3 pounds/1.5 kg sirloin tip, cut into fat fingers
3 large onions, sliced
4 cloves garlic, chopped
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 1/2 cups/375 ml beef stock
2 cups/500 ml beer
1 tablespoon red-wine vinegar
Salt and freshly ground black pepper
1 bouquet garni

Steps:

  • Heat the beef drippings and oil together in a saute pan. Working in batches, brown the beef strips on all sides. Remove from the pan. In the same pan, fry the onions until soft, about 15 minutes, then add the garlic for 1 minute. Remove. (Check if there is fat in the pan. If not, add a good tablespoon of butter and let it melt.) Add the flour and sugar to the pan and cook for 1 minute to make a roux. Gradually whisk in the stock and bring to a boil. (At this point, turn the oven on to 325 degrees F/160 degrees C.) Add the beer and vinegar to the boiling stock, and bring back to a boil, cooking until thickened, about 10 minutes. Remove from the heat.
  • In a large casserole dish, layer the onions alternately with the beef strips, seasoning each layer as you go with salt and pepper. Tuck in the bouquet garni and pour the sauce over. Cover and bake for 2 1/2 hours. If you can wait a day before eating, cool the dish completely when it's out of the oven and refrigerate overnight: the flavor will be even better when you reheat it.

Plan ahead the steaks need to marinate for 24 hours. The peppercorn sauce can be made up to 2 hours in advance before using. Measure out 1-1/2 tablespoons of peppercorns before crushing. If you prefer a thick pepper sauce then thicken it up with a little flour/cold water paste and simmer for a minute or so to thicken.

6 (12 ounce) top New York strip steaks (about 12-ounces each)
1/2 cup white wine
1 shallot, minced
1 1/2 tablespoons coarsley crushed peppercorn blend (mixture of black, white and green peppercorns)
1 3/4 cups chicken broth
1 3/4 cups canned beef broth
1/2 cup whipping cream
salt
1 (12 ounce) bottle beer
1/2 cup brown sugar
6 tablespoons lime juice
1 small onion, minced
3 tablespoons minced garlic
2 tablespoons Worcestershire sauce
2 tablespoons grainy mustard
1/4 cup olive oil
1 tablespoon minced fresh ginger
1/2 teaspoon cayenne pepper (or to taste, can use Tabasco sauce in place of cayenne)

Steps:

  • Place the striploin steaks in a large shallow baking dish and prick holes in the beef all over and both sides using a fork.
  • In a bowl whisk together beer, brown sugar, lime juice, onion, garlic, Worcestershire sauce, mustard, oil, ginger and cayenne pepper or Tabasco; pour the marinade over the beef, turning the beef over to coat well on both sides.
  • Cover and refrigerate 24 hours.
  • For the peppercorn sauce; bring the wine, shallot and crushed peppercorns to a boil in a medium saucepan; simmer until the mixture is reduced by half (about 6 minutes).
  • Add in the chicken stock and beef broth; boil until reduced to 2 cups (about 20 minutes).
  • Add in whipping cream and cook until the sauce coats the spoon (about 6-7 minutes).
  • Remove the steaks for the marinade and let sit out for 45 minutes at room temperature before grilling, the longer the better, (this is important to relax the meat fibers, it makes for a more tender juicy steak!).
  • Prepare the grill to medium-high heat.
  • Season the steaks with salt and pepper.
  • Grill to desired doneness (about 4 minutes per side for medium-rare).
  • Transfer the sauce to plates and drizzle with sauce.
  • DELICIOUS!

I am a fulltime legal assistant and I use my crockpot often. This is a recipe that is easy and very good.

3 strips of bacon diced
2 lb beef stew meat cut into 1 inch cubes
1/2 tsp crushed peppercorns (i use the tricolor)
1/4 tsp salt
1 tsp olive oil
1 medium onion cut into wedges
1 tsp minced garlic
1 bay leaf
1 can(s) beer or non-alcoholic beer
1 Tbsp soy sauce
1 Tbsp worcestershire sauce
1 tsp dried thyme
2 Tbsp all purpose flour
1/4 c water
hot cooked noodles

Steps:

  • 1. In a large skillet, cook bacon over mediumheat until crisp. Remove from pan to paper towels to drain, discard drippings. Sprinkle beef with pepper and salt. In the same skillet brown the beef on all sides in the oil; drain.
  • 2. Transfer to a 5 quart slow cooker. Add the bacon, onion, garlic and bay leaf. In a small bowl, combine the beer, soy sauce, worcestershire sauce and thyme. Pour over beef.
  • 3. Cover and cook on low for 5 1/2 to 6 hours or until meat is tender.
  • 4. In a small bowl, combine flour and water until smooth, Gradually stir into slow cooker. Cover and cook on high for 30 minutes longer or until thickened. Discard bay leaf.
  • 5. Serve beef over noodles.

500 g beef strips
1/2 c beer
1 c milk
1 + 1/2 tsp cornstarch
2 tomatoes, chopped and fried
1 onion, chopped and fried
1 c cheddar cheese
salt and pepper to taste
pickled jalapeno
slices of bread/rolls

Steps:

  • 1. Marinade beef strips in beer for 15 - 30 minutes
  • 2. Drain the marinade and stirfry the beefstrips (use a little oil as necessary)
  • 3. Make a quick cheese sauce : heat milk to a boil, take pot off the heat, dissolve cornstarch in a little of the hot milk, then stir this into the pot of hot milk.
  • 4. Turn heat down to medium, place pot back on the heat and keep stirring until the sauce has thickened. Melt cheese in the white sauce, keeping back a little cheese for sprinkling. Stir in salt and pepper to taste.
  • 5. Toast the bread slices, place beefstrips on top, top with a dollop of chunky tomatoes and onions (previously fried), a little cheese sauce, top it all off with a sprinkling of cheese and minced jalapeno.

Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

4 teaspoons vegetable oil, divided, or as needed
12 shallots, peeled and left whole
1 pound cubed beef stew meat
1 tablespoon all-purpose flour
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
2 onion, cut in half and sliced
1 large garlic clove, crushed
4 slices smoked streaky bacon, sliced into strips
1 ½ cups fresh button mushrooms
salt and ground black pepper to taste

Steps:

  • Preheat slow cooker on Low.
  • Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker. Add beef to the same skillet and cook until meat is seared on all sides and browned, about 5 minutes. Add flour and mix well. Pour in beer and bring to a boil. Transfer beef-beer mixture to the slow cooker.
  • Wipe out the skillet with a paper towel and add remaining 2 teaspoons oil. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and bacon and cook for 1 minute more. Transfer to the slow cooker. Add mushrooms and season generously with salt and pepper. Cover.
  • Cook on Low until meat is cooked through, about 5 hours.
