Olive oil
3/4 cup all-purpose flour, divided
2/3 cup beer
1 egg, lightly beaten
1 1/2 teaspoons baking powder
4 tilapia or flounder fillets, about 5 ounces each
Salt
Freshly ground black pepper
2 tablespoons fresh lemon juice
2 teaspoons red chili paste
1 (11-ounce) can mandarin oranges, drained and chopped
1 tablespoon chopped fresh cilantro leaves

Steps:

  • Heat enough olive oil, to shallow fry the fish, in a large skillet over medium-high heat
  • In a shallow dish, whisk together 1/2 cup of the flour, beer, egg, and baking powder. Place remaining 1/4 cup flour in a separate shallow dish.
  • Season both sides of fish fillets with salt and black pepper. Dredge fish in flour, turn to coat both sides and then shake off excess flour. Dunk fish in beer mixture and turn to coat both sides.
  • Add fish to hot oil and cook 2 to 3 minutes per side, until cooked through and opaque. Remove fish from oil. Place on a paper towel lined plate.
  • While the fish is frying, in a medium bowl, whisk together lemon juice and chili paste. Add mandarin oranges and cilantro and toss to combine. Serve sauce over fish.

1 quart of canola oil
1 1/2 cups all purpose flour divided
1 1/4 cups beer
1 teaspoon Black pepper
1/4 teaspoon Sea salt
1 teaspoon paprika
2 large fillets Regal Springs Tilapia
I large bag frozen french fries

Steps:

  • Pour the canola oil into a deep pan or pot and place over a medium heat. The oil should be about 2 inches deep.
  • In a bowl add 1 cup of the flour, beer, salt, pepper and paprika.
  • Whisk until smooth.
  • Cut the tilapia into strips and pat dry.
  • Place the remaining flour onto a shallow plate.
  • Bake the french fries as per the directions on the package.
  • Once the oil has reached 375 degrees F, start to fry the fish.
  • Roll each piece into the flour and shake off the excess.
  • Next dip the fish into the batter and let the excess drip back into the bowl.
  • Gently place the fish into the hot oil and cook for about 2-3 minutes per side or until golden brown.
  • Take the fish from the oil and place on some paper towel to drain.
  • You will have to do this in several stages so it's a good idea to place the cooked fish on a baking sheet to keep warm in the oven while you continue with the remaining tilapia.
  • Serve with the fries, seasoned with extra salt and pepper and ketchup on the side if desired.

1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup dark Mexican beer*
1/3 cup mayonnaise
2/3 cup Mexican crema** or sour cream
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 tablespoons water
Salt and freshly ground black pepper
Oil, for frying
1 cup all-purpose flour
1 teaspoon salt, plus more for seasoning
2 pounds skinned halibut cut into 5 by 1/2-inch strips
Freshly ground black pepper
Corn tortillas
2 cups shredded cabbage
2 cups tomatillo salsa (store-bought or homemade) for garnish, optional
Pickled jalapenos, for garnish, optional

Steps:

  • For the Beer Batter:
  • Mix the flour, salt and pepper in a medium bowl. Gradually add in the beer while whisking. Set aside and let the batter rest for 15 minutes before using.
  • For Cream Sauce:
  • Add the mayonnaise and crema to a medium bowl. Whisk in the lemon zest, lemon juice and water. Season, to taste, with salt and pepper (can be made 3 days ahead, covered and refrigerated).
  • For the Fish:
  • In a large skillet, over medium heat, add enough oil to reach a depth of 1-inch. Heat the oil until a deep-fry thermometer registers 350 degrees F or when the end of a wooden spoon sizzles when inserted into the oil.
  • On a large plate, combine the flour and salt. Season the fish pieces all over with salt and pepper and coat with the flour. Working in batches, dip the fillets in the beer batter and coat on both sides. Fry in the hot oil until golden brown and cooked through, about 5 minutes. Transfer to paper towels to drain.
  • Make tacos with the tortillas and fish and top each with cream, shredded cabbage, tomatillo salsa and pickled jalapenos, if desired.
  • *Cook's Note: Crack open a cold Mexican cerveza like a Negra Modelo or a 2 Equis (XX) Amber to make this tasty beer batter, which will change the way you think about fried fish! You can use it for vegetables, too.
  • **Cook's Note: Mexican Crema is Mexico's version of creme fraiche and is found at many supermarkets and can easily be substituted with sour cream.

Fish and chips are traditionally sold wrapped in paper to soak up excess grease. To cut the calories in half and reduce the fat, we coat the delicate fish in a crispy cornflake crust and then bake it along with sliced potatoes. Serve with coleslaw and malt vinegar or lemon wedges.

1 1/2 pounds russet potatoes, scrubbed and cut into 1/4-inch-thick wedges
4 teaspoons canola oil
1 1/2 teaspoons Cajun or Creole seasoning, divided
2 cups cornflakes
¼ cup all-purpose flour
¼ teaspoon salt
2 large egg whites, beaten
1 pound cod, (see Tip) or haddock, cut into 4 portions

Steps:

  • Position racks in upper and lower third of oven; preheat to 425 degrees F. Coat a large baking sheet with cooking spray. Set a wire rack on another large baking sheet; coat with cooking spray.
  • Place potatoes in a colander. Thoroughly rinse with cold water, then pat dry completely with paper towels. Toss the potatoes, oil and 3/4 teaspoon Cajun (or Creole) seasoning in a large bowl. Spread on the baking sheet without the rack. Bake on the lower oven rack, turning every 10 minutes, until tender and golden, 30 to 35 minutes.
  • Meanwhile, coarsely grind cornflakes in a food processor or blender or crush in a sealable plastic bag. Transfer to a shallow dish. Place flour, the remaining 3/4 teaspoon Cajun (or Creole) seasoning and salt in another shallow dish and egg whites in a third shallow dish. Dredge fish in the flour mixture, dip it in egg white and then coat all sides with the ground cornflakes. Place on the prepared wire rack. Coat both sides of the breaded fish with cooking spray.
  • Bake the fish on the upper oven rack until opaque in the center and the breading is golden brown and crisp, about 20 minutes.

After checking many recipes online I wanted to mix my mom's secret ingredient in fish batter. Curry. So I came up with this which was inspired by http://www.food.com/recipe/beer-battered-fish-130102 I loved this recipe. Hope you enjoy it.

1 lb tilapia fillet (sliced into 1/2 inch)
1/2 cup all-purpose flour
1 large egg (I used half the yolk)
1 tablespoon garlic powder
1/4 teaspoon curry
1 teaspoon salt
6 ounces beer
1/2 cup sunflower oil or 1/2 cup vegetable oil

Steps:

  • Mix all the dry ingredients together.
  • Whisk the egg and add to dry ingredients.
  • Add beer gradually while mixing till the batter gets liquid enough.
  • Dip the tilapia fillets in the batter and let it rest for a minute.
  • In a pan add the oil and put on medium heat.
  • Add the tilapia to the pan and fry till each side is golden brown.
  • After they're done remove and put on paper towel and let it cool for few minutes before serving.
  • You can serve this with boiled rice and/or my Minty Cucumber Salad.

1 tsp salt
1/2 tsp black pepper
1 cup all purpose flour
1 tbsp garlic powder
1 tbsp paprika
2 tsp seasoned salt
1 large egg (lightly beaten)
1 1/3 cups beer
Canola oil for frying

Steps:

  • Add oil to a large, heavy bottomed pot or deep fryer till it's about 2 to 3 inches deep. Heat oil to 375 degrees F.
  • Meanwhile, cut fish into stick shapes, about 1 inch wide and 3 inches long. Pat dry with paper towels and season with salt and pepper.
  • To make the beer batter, whisk together the flour, garlic powder, paprika and seasoned salt. Stir in the lightly beaten egg, then gradually whisk in the beer until the batter forms and is no longer lumpy.
  • Quickly dip the fish one piece at a time into the batter, then place in the hot oil. Cook for 3 to 4 minutes, or until the fish is a nice golden brown. Drain on a wire rack and enjoy while hot!
