3/4 cup white rice flour
1/4 cup cornstarch
1 teaspoon paprika
1/2 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cayenne
Kosher salt and freshly ground black pepper
1 to 1 1/4 cups light beer, such as pilsner
3 pounds russet potatoes, peeled and cut into batons 3 inches long, 1/2 inch wide and 1/4 inch thick, soaked in cold water

Steps:

  • Fill a small Dutch oven with 3 to 4 inches of oil and heat over medium heat until a deep-frying thermometer inserted in the oil registers 325 degrees F. Line a large plate or baking sheet with paper towels.
  • In a medium bowl, whisk together the flour, cornstarch, paprika, baking powder, garlic powder, onion powder, cayenne, 2 teaspoons salt and 1/2 teaspoon black pepper. Add 1 cup of the beer and stir until smooth, adding more beer a tablespoon at a time if necessary until the batter is the consistency of heavy cream. Set aside.
  • Using kitchen towels, dry the potatoes thoroughly. Working in batches, slide the potatoes into the oil, being careful not to crowd the pan, and cook until lightly golden, about 5 minutes. Use a slotted spoon or skimmer to remove to the towel-lined plate and sprinkle with a few pinches of salt.
  • Raise the oil temperature to 350 degrees F. Dip the partially cooked fries a few at a time in the batter to coat. Using a fork, slide the coated potatoes 1 at a time into the oil, about 6 or 8 in a batch so as not to overcrowd the pan. Use a metal skimmer or tongs to keep them separate, as they tend to cling together. Cook until deep golden brown, 2 to 3 minutes. Remove to fresh paper towels to drain. Serve immediately.

Steps:

  • For the dip: In a food processor, add the cream cheese, dill, cucumber and 1 teaspoon of the lemon juice and pulse until smooth. Taste and add more lemon juice if needed. Season with salt and pepper. Refrigerate until ready to serve. For the eggplant: Place the eggplant spears on a baking sheet and lightly brush with the oil just to coat. In a large bowl, whisk together the flour, Greek seasoning, a pinch of salt and a few grinds of pepper. Add the eggplant in batches and coat with the flour mixture, shaking to remove the excess, then remove to a plate. For the batter: In a large bowl, whisk together the flour, Greek seasoning, lemon zest and a nice pinch of salt until combined. Slowly whisk in the beer until you achieve a pancake batter consistency; you may not use all of the beer. Allow the batter to rest 5 minutes. If it thickens, loosen with a bit more beer. Heat a fryer filled with oil to the proper level or a pot with about 2 inches of oil to 365 degrees F. In batches, dunk the flour-coated eggplant spears into the batter, shake off the excess and gently place in the oil. Fry until golden brown, 4 to 6 minutes, making sure to maintain an oil temperature around 350 degrees F. Remove the eggplant to a paper towel-lined plate and immediately spritz lightly with lemon juice and sprinkle with a pinch of salt. Serve immediately with the chilled dip.

1 3/4 cup all purpose flour
1 egg
1 teaspoon salt
1 teaspoon granulated garlic
1 12 ounce can light beer
1 medium eggplant (peeled, cut in half and then cut into strips)
1/4 cup sour cream
2 tablespoons mayonnaise
1 teaspoon curry powder
1/2 teaspoon garlic chili sauce
1/4 teaspoon salt

Steps:

  • Make the dipping sauce first by whisking all ingredients together in a bowl. Cover and refrigerate until ready to use.
  • Preheat oven to warm setting or 200 degrees. Place a cooling rack on top of a baking sheet.
  • Heat half an inch of oil in a large pot over medium heat to 350 degrees.
  • Whisk together flour, egg, salt and granulated garlic. Slowly whisk in beer. Mix just until a batter forms.
  • Working in batches, dip eggplant fries into the batter. Shake off any excess and then carefully add to oil. Fry until golden brown and crispy, about 2 minutes. Use a slotted spoon to transfer to the prepared cooling rack. Sprinkle with salt. Place in the oven to keep warm while you fry the remaining batches.

2 eggplants, large
1/4 teaspoon salt
2 cups flour
1/2 teaspoon baking powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder (ground chiles, not the mix you use to make chili)
1 1/2 cups water
1 tablespoon vegetable oil

Steps:

  • Wash the eggplants and cut into 1 inch slices. Place the slices on a rack or in a colander, sprinkle with the salt, and let sit for 15 minutes. This will release Mix remaining ingredients into a batter.
  • When the oil is hot, dip a few pieces of the eggplant in the batter until well coated. Carefully place into the hot oil, and fry for 3-5 minutes on each side, until golden brown.
  • Remove from oil and place on paper towels to drain any excess oil.
  • Serve immediately.

1/2 cup extra virgin olive oil (120 ml)
1 large eggplant
1 cage-free organic egg
3/4 cup beer at room temperature (200 ml)
1 cup all-purpose flour (120 grams)
2 tbsp honey (42 grams)
handful finely chopped parsley
sea salt & black pepper

Steps:

  • Cut the eggplant into 1/2 inch (1.25 cm) thick diagonal slices, season the slices of eggplant generously with sea salt on both sides, add the the slices of eggplant into a colander and let them sit for 30 minutes
  • Meanwhile, crack one egg into a large bowl, season with 1/4 tsp (1.5 grams) sea salt and whisk together until well mixed, then add in 3/4 cup beer at room temperature and whisk together, then slowly add in 1 cup all purpose flour as you continue to whisk, once all the flour has been added and you end up with a light creamy batter with no lumps, set it aside
  • After 30 minutes, rinse the slices of eggplant to remove the salt, then pat each one completely dry, cut each slice into 1/2 inch (1.25 cm) thick slices to end up with your fries, then place them in a single layer and season with sea salt & black pepper
  • Heat a large fry pan with a medium heat and add in 1/2 cup extra virgin olive oil
  • While the olive oil is heating, add the eggplant fries into the bowl with the reserved batter and mix together until each fry is evenly coated in the batter
  • After heating the olive oil for 5 minutes, start adding the eggplant fries into the pan, making sure to shake off any excess batter and that they´re all in a single layer (cook in batches), after 3 minutes flip the fries to cook the other side, after a total cooking time of 6 minutes, remove them from the pan and transfer into a dish with paper towels, continue to cook in batches until they are all done
  • Once all the eggplant fries are done, transfer them into a serving dish, drizzle a generous portion of honey over the fries and sprinkle with finely chopped parsley, enjoy!

1 leeks, chopped
6 ounces fresh spinach
1 clove garlic

1 tablespoon chopped fresh parsley
½ cup whole wheat flour

6 fluid ounces beer
1 cup ricotta cheese

Steps:

  • Place eggplant on paper towels; cover with 1 teaspoon salt. Let sit until moisture is drawn out, 10 to 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Heat canola oil in a deep fry pan over medium heat.
  • Heat olive oil in a skillet over medium heat; add the leek. Cook and stir until leek is slightly translucent, about 5 minutes. Stir in spinach; cook until slightly wilted, 3 to 5 minutes. Add garlic; cook and stir until spinach is fully wilted, about 3 minutes. Remove from heat.
  • Combine panko, Parmesan cheese, and parsley in a bowl. Whisk flour, paprika, salt, and pepper together in a separate bowl; pour in beer. Whisk until batter is loose, adding more beer if batter is too thick. Dredge eggplant in the batter, allowing excess to run off; coat in panko mixture.
  • Drop 1 pinch of panko into the canola oil to test the heat. It should bubble up without splattering out. Fry battered eggplant for 30 seconds; flip. Fry until golden brown, about 30 seconds. Place on a paper towel to drain.
  • Combine spinach mixture, ricotta cheese, salt, and pepper in a bowl; spread an even amount onto 4 of the fried eggplant slices. Sprinkle with mozzarella cheese; cover with a second slice of fried eggplant. Top with mozzarella cheese. Place onto a baking sheet.
