Beer battered onion rings - my mother-in-law taught me this. You can actually use this batter for a lot of things, like zucchini, eggplant, jalapenos, etc.

2 cups all-purpose flour
1 egg, beaten
2 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoons dried oregano
salt and pepper to taste
1 cup beer
3 large onions, sliced into rings
1 cup oil for frying

Steps:

  • In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt and pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.
  • In a heavy frying pan heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip onions in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

½ cup mayonnaise
¾ tablespoon ketchup
2 tablespoons cream-style horseradish sauce
¼ teaspoon paprika
¼ teaspoon salt
1 pinch ground black pepper
1 pinch cayenne pepper
1 egg
1 cup milk
1 cup all-purpose flour
1 ½ teaspoons salt
1 ½ teaspoons cayenne pepper
½ teaspoon ground black pepper
½ teaspoon garlic powder
¼ teaspoon dried thyme
¼ teaspoon dried oregano
⅛ teaspoon ground cumin
1 large onion
2 quarts vegetable oil for deep-frying

Steps:

  • Make the dipping sauce: Combine mayonnaise, ketchup, horseradish, paprika, 1/4 teaspoon salt, 1 dash black pepper, and 1 dash cayenne pepper in a small bowl and refrigerate it until needed.
  • Beat egg and combine it with milk in a bowl large enough to hold the onion. In another bowl, combine flour, salt, cayenne pepper, black pepper, garlic powder, thyme, oregano, and cumin.
  • Prepare the onion: cut approximately 3/4 to 1 inch off of the top and bottom of the onion, remove skin. Remove the 1-inch diameter core from the middle of the onion. Using a large, sharp knife, slice down the center of the onion about 3/4 of the way down, turn 90 degrees and slice again. Keep slicing the sections in half, being careful not to cut to the bottom, until you have 16 sections. Spread the petals apart to make coating easier.
  • Dip the onion in the milk, then coat well with the flour mixture. Separate the petals again and sprinkle the flour mixture between them. Once you have coated all of the petals well, dip it into the milk and into the flour mixture again. Place in the refrigerator for at least 15 minutes while you preheat the oil.
  • Pour enough oil to cover the onion into a deep fryer or deep pot. Preheat the oil to 350 degrees F (175 degrees C).
  • Fry the onion right side up in the oil for 10 minutes or until golden brown. Remove from oil and let drain in a rack or paper towels. Open the center of the onion wide so that you can put the small bowl of dipping sauce in the center.

1/3 cup cornstarch
1 1/2 cup flour
2 teaspoons garlic (minced)
2 teaspoons paprika
1 teaspoon salt
2 teaspoons pepper
12 ounce beer
4 Vidalia onions (Or other large sweet onion)
2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper

Steps:

  • Combine and mix well. Mix cornstarch, flour, and seasonings until well blended. Add beer and mix well. Cut about 3/4" off top of onion and peel. Cut into onion 12 to 16 vertical wedges, but do not cut through the bottom root end. Remove about 1" of petals from the center of the onion. You may want to separate the onion petals slightly, but do not do this too much or you will destroy the onion.
  • Dip onion in seasoned flour; remove excess by shaking. Separate petals to coat thoroughly with batter. Dip in the batter. Dip in flour mixture again. Gently place in fryer basket and deep-fry at 375 to 400 degrees for 1 and 1/2 minutes. Turn over and fry an additional 1 and 1/2 minutes. Drain on paper towels. Place onion upright in a shallow bowl and remove center core with circular cutter or apple corer. Serve hot with Creamy Chili Sauce.

2 teaspoons seasoned salt, plus extra for sprinkling at the end

3 bottles beer
6 large eggs
Vegetable oil, for frying
6 large yellow onions, very thinly sliced with a mandoline

Steps:

  • Special equipment: a mandolin; a deep-frying thermometer
  • Mix the flour, baking powder, seasoned salt and pepper in a large bowl. In a pitcher, mix together the beer and eggs. Pour the liquid into the dry ingredients and mix.
  • In a large heavy-bottomed pot, heat enough vegetable oil to come halfway up the sides of the pot until a deep-frying thermometer inserted in the oil registers 375 degrees F.
  • In batches, dip the onion strings into the batter, then plunge them into the hot oil and cook until golden, 2 to 3 minutes. Drain on a paper towel and repeat with the rest of the onions. Sprinkle with seasoned salt.

  • In large bowl combine flour, paprika, oregano, salt, garlic powder, and black pepper.
  • Place the onion in it, coating every petal with egg wash.
  • Place the onion in the dry mixture coating every petal.
  • Coat the onion in the egg wash and dry mixture one more time.
  • Heat canola oil to 375ºF (190ºC) in a deep-fryer or dutch oven.
  • Place onion in the freezer for 10 minutes.
  • With tongs add the onion to the oil for 2 minutes or until it is browned and crispy.
  • Move onion to plate covered in paper towels and allow to drain for 5 minutes.
  • Meanwhile, in a small bowl combine sour cream, salt, pepper, paprika, mayonnaise, Worcestershire sauce, and ketchup.

1 tablespoon butter, melted
2 teaspoons Dijon mustard
3 tablespoons dry bread crumbs

  • Seperate peatls to coat thoroughly with batter.
  • Gently place in a fryer basket and deep fry at 375-400 for 1 1/2 minutes.
  • Turn over and fry 1 1/2 minutes more or until golden brown.
  • Drain on paper towels.
  • Place onion upright in a shallow bowl and remove center core with a circular cutter or apple corer.
  • Serve hot with chili sauce and dipping sauce.

1 large Vidalia onion (peeled)
2 eggs
½ cup milk
1 cup flour
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon cayenne pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ cup mayonnaise
½ cup ketchup
1 teaspoon Worcestershire sauce
½ teaspoon cayenne pepper
½ teaspoon paprika
½ teaspoon onion powder

Steps:

  • Cut off the top ½-inch of the onion, leaving the root end of the onion intact. Place the now flat, stem end of the onion down on a cutting board with the root end facing up. Make 16 slices around the onion, starting with your knife tip ½-inch away from the root so that you never slice through the root. Begin by making slices at 12, 3, 6 and 9 o'clock around the onion. Then make three slices down the onion in between each of the original four slices. Turn onion over, gently separate the onion petals, and remove the loose pieces of onion in the center.
  • Combine the eggs and milk in a bowl. In a second bowl, combine the flour, salt, black pepper, cayenne pepper, paprika, and garlic powder.
  • Pre-heat the air fryer to 350ºF.
  • Place the onion cut side up into a third empty bowl. Sprinkle the flour mixture all over the onion to cover it and get in between the onion petals. Turn the onion over to carefully shake off the excess flour and then transfer the onion to the empty flour bowl, again cut side up.
  • Pour the egg mixture all over the onion to cover all the flour. Let it soak for a minute in the mixture. Carefully remove the onion, tipping it upside down to drain off any excess egg, and transfer it to the empty egg bowl, again cut side up.
  • Finally, sprinkle the flour mixture over the onion a second time, making sure the onion is well coated and all the petals have the seasoned flour mixture on them. Carefully turn the onion over, shake off any excess flour and transfer it to a plate or baking sheet. Spray the onion generously with vegetable oil.
  • Transfer the onion, cut side up to the air fryer basket and air-fry for 25 minutes. The onion petals will open more fully as it cooks, so spray with more vegetable oil at least twice during the cooking time.
  • While the onion is cooking, make the dipping sauce by combining all the dip ingredients and mixing well. Serve the Blooming Onion as soon as it comes out of the air fryer with dipping sauce on the side.
