1 cup lager or ale
1 cup all p flour
1 1/2 tsp paprika
2 cloves garlic, crushed
2 avocados
oil for frying
1 cup salsa (to serve with them)

Steps:

  • Whisk beer, flour, paprika, garlic (I added 1/2 tsp salt) until blended. Let stand at least 2 hours. Peel avocados, cut each into 6 wedges. Dredge each wedge in batter. Deep fry until golden. This was great with onions, too! That batter is definitely a keeper for me. If your avocados are ripe and you refrigerate them, they hold their shape better for cutting.

Optional: 1 to 2 pounds onions (sliced into rings)

Steps:

  • Gather the ingredients.
  • Combine the egg and beer in a large bowl.
  • In a separate bowl, combine the flour, salt, and paprika.
  • Add the seasoned flour to the beer mixture and gently poke at it with a fork until you have a loose, floppy batter with plenty of lumps. Don't stir, whisk, or mix.
  • Once the batter is together, dredge and dip the onions right away and add to a pot of hot oil to fry.
  • Serve hot and enjoy.

Vegetable oil, or other high smoke-point oil such as canola or peanut for frying
1 large egg white
1 cup beer, slightly flat
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon, optional
1/8 teaspoon cayenne pepper, optional
3 large Granny Smith apples or other firm apple, peeled and cored
Sea salt, powdered sugar or caramel sauce for serving

Steps:

  • Pour enough oil into a medium saucepan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.
  • Whisk the egg white until frothy then gently stir in the beer, flour, salt, cinnamon and cayenne pepper until smooth.
  • Slice the apples into 1/4-inch rings and pat dry. Working in batches, dip the apple slices into the batter and allow excess batter to drip off.
  • Prepare a plate lined with paper towels or a clean dishcloth.
  • Fry 1 to 2 minutes on each side until golden brown and crispy. Using a slotted spoon, transfer the fried apples to paper towels to drain excess oil. Sprinkle apples with a pinch of salt or if serving as a dessert, with powdered sugar.

BUT, I just now (02/24/2012) added the creole seasoning to help perk it up a bit. I hope this helps some of ya'll to enjoy it more and for those that like it mild just kinda ignore the creole addition. Have a good day peeps.

Seabird sauce (recipe follows below)
8 (4-inch) white corn tortillas
Green cabbage, shredded, for garnish
Red cabbage, shredded, for garnish
Diced red onion, for garnish
Fresh lime wedges, for garnish

Steps:

  • 1. In a medium dutch oven or deep-fryer, fill oil to a depth of 3 to 4 inches (no more than halfway up the sides of the pan.) Heat oil to 375 degrees F over medium-high heat. 2. Quarter a Hass avocado (or cut into sixths, depending on size). 3. Toss cut avocado in Panko breadcrumbs, until coated. 4. Dip coated avocado wedges in beer batter, and carefully drop into hot oil. Fry wedges, in batches, until golden brown -- about 2 to 4 minutes. Using a slotted spoon, remove slices and drain on a paper towel-lined plate. 5. Warm corn tortillas wrapped in foil in the oven, or by lightly grilling them. 6. Assemble the tacos: Layer 2 warmed tortillas per taco and top with a fried avocado wedge. 10 ounces beer
4 (6-ounce) fillets fresh cod

2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat oil in a deep-fryer or a Dutch oven to about 360 to 375 degrees F.
  • Add the first 5 ingredients in a bowl and mix until combined. Dip cod into the batter and allow any excess batter to drip off prior to adding to the preheated oil. Fry the fish until browned on both sides. Once browned, remove to a paper-towel lined plate and season with salt, to taste.
