BEER BRATS
These awesome beer brats are boiled and then put on the grill!

Steps:
- Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
- Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
- Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

- In a large skillet, brown the bratwurst on both sides over medium high heat.
- Add both cans of beer to the skillet. Simmer over medium-low heat for 20 minutes.
- Remove bratwurst from skillet and set aside.
- Continuing to simmer beer over medium low, add cream cheese and cheddar cheese to the skillet.
- Stir occasionally until mixture is smooth, about 5 minutes.
- Add cayenne and mustard to beer cheese, stirring to incorporate.
- Remove beer cheese from heat.
- Cover a large plate with a layer of tortilla chips. Top with beer cheese and desired amount of nacho fixings.
- Slice bratwurst and arrange over nachos.
- Repeat with another layer of chips and fixings.

- In a large skillet, saute bratwurst for 1 minute. Add stir-fry blend; cook 3-5 minutes longer or until vegetables are tender. Set aside and keep warm., In a large bowl, combine cheese and flour. In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in beer; heat over medium heat until bubbles form around sides of pan., Reduce heat to medium-low; add a handful of cheese mixture. Stir constantly, using a figure-8 motion, until almost completely melted. Continue adding cheese, 1 handful at a time, allowing cheese to almost completely melt between additions., Arrange tortilla chips on a large serving platter. Spoon cheese mixture over chips.
