1 (9.74 ounce) package Idahoan Signature™ Russets Mashed Potatoes
1 cup flour
2 tablespoons cornstarch
½ teaspoon baking powder
½ teaspoon baking soda
½ cup sriracha hot sauce
1 (12 ounce) can beer
2 pounds cod fillets, cut into serving-size pieces
4 cups vegetable oil for deep frying, or as needed
1 teaspoon salt

Steps:

  • Prepare Idahoan Signature™ Russets Mashed Potatoes according to package instructions. Keep warm.
  • Combine flour, cornstarch, baking powder, baking soda, and sriracha hot sauce in a large bowl. Stir until combined. Add beer and continue to stir until batter is smooth. Place pieces of fish to the bowl and coat all sides evenly coated with the batter.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Cook fish fillets in batches until golden brown, 2 to 3 minutes. Drain cooked fillets on a wire rack. Season with salt.
  • Serve with a side of Idahoan Signature™ Russets Mashed Potatoes.

Beer battered fish with a crunchy coating and tender flaky fish.

2 cups flour
⅓ cup corn starch
2 teaspoons salt
1 teaspoon paprika
1 Tablespoon baking powder
1 - 1½ can beer (12 ounce)
1 -2 pounds fish fillets
corn oil (for frying)

Steps:

  • Mix dry ingredients together in a bowl. Add beer and stir. Mixture should be the same consistency like pancake batter.
  • Add 1 1/2 -2 inches oil to pan. Heat oil to 375 degrees.
  • Pat fish fillets dry with a paper towel. Dip fish, one at a time, into beer batter. Add to heated oil. Cook 3-4 pieces at a time so pan is not overcrowded.
  • Cook 2-3 minutes per side. Place cooked fish on a baking sheet lined with a baking rack. Place in a preheated 250°F oven to keep warm while remaining fish cooks.
  • Repeat until all fish is cooked.

  • Open the beer and let it sit for about 15 minutes so that all the foam evaporates. Then in a large bowl, combine 1 3/4 cup flour, 1/2 teaspoon salt, and 2 cups beer with a whisk. Mix just until the batter is no longer clumpy.
  • Pat the cod fillets dry using a paper towel and season both sides of each cod fillet with salt and pepper. Make sure to pat dry well. The more you dry the fillets, the better the batter will stick to the fish.
  • Heat about 2-3 inches of vegetable oil in a heavy-bottomed skillet over medium-high heat. Use an instant-read thermometer to make sure the oil temperature stays at 375 degrees Fahrenheit.
  • In a separate bowl, combine 1 3/4 cup flour with 1/2 teaspoon salt. Then use tongs to dredge the seasoned cod fillets 1 at a time.
