2 lbs beef stew meat
1 (10 ounce) can cream of celery soup
1 (10 ounce) can condensed golden mushroom soup
2 (10 ounce) cans water
1 (1 ounce) package dry onion soup mix
2 cups diced potatoes
1 cup diced carrot

Steps:

  • Mix all but vegetables in deep casserole.
  • Bake at 300 degrees for 3 hours.
  • Add carrots after 1 hour.
  • Add potatoes after 2 hours.
  • Add more water if needed.
  • I have also just put all ingredients into a crock pot on low all day.

This recipe came from one of the Fix It and Forget It cookbooks. I don't drain the cans of beans and I omit the water. It works for me. I also don't peel the tomato. Added note: I noticed reviewers mentioning using broth and I even made this somewhat recently and forgot to *not* drain the beans. It's way better with just dumping the beans and their, um, bean juice? right into the pan and skipping the water. So I'm correcting the recipe to remove the words "drained" (beans) and "1 quart water".

1 1/2-2 lbs stewing beef (or lamb)
2 (15 ounce) cans chickpeas
2 (15 ounce) cans white beans
2 medium onions, peeled and quartered
1 teaspoon salt
1 tomatoes, peeled and quartered
1 teaspoon turmeric
3 tablespoons lemon juice

Steps:

  • Combine all ingredients in a slow cooker.
  • Cover and cook on high for 6-7 hours.
  • Serve into pita pockets with a slotted spoon.
  • I serve with Hoda's Cucumber-Yogurt. Combine 32 ounces of plain yogurt with 1 large cucumber peeled and diced (about .5 cm size), a LOT of dill (at least a tablespoon), and salt to taste. (I asked my friend Hoda what it's called and she told me in Persian. I said, "what does that mean?" "Cucumbers and Yogurt." Well, okay.).

Ok, so I had this leftover meatloaf that no one was going to eat [no one but me likes meatloaf] and I needed to use it up, so I came up with this soup, and it turned out pretty good. I'm really just posting it so I remember how to make it [ha-ha] if you make it, feel free to sub prepared meatballs as well, and to mix up the veggies as to what you have on hand. It makes a lot, but it does freeze okay.

1/2 basic meatloaf, chopped (left over)
1 (26 ounce) can diced tomatoes
2 quarts beef broth
1 onion, diced
2 garlic cloves, minced
1 large carrot, diced
1 potato, diced
2 -3 cups frozen vegetables (peas, corn and green beans)
1/4 cup pearl barley (more if you like it thick)
1/4 cup alphabet pasta (or any other small noodles)
2 cups baby spinach leaves (optional)
1 pinch salt and pepper, to taste

Steps:

  • Sauté onions and garlic in a small amount of oil.
  • Add carrots and potatoes, and cook for another minute.
  • Pour in tomatoes (I used to pre-seasoned kind) and allow to simmer for 5 minutes.
  • Add stock and bring to a boil.
  • Add frozen vegetables, barley and pasta, and meatloaf.
  • Return the pot to a boil, cover and let simmer for 20 minutes or until barley is tender.
  • Toss in a few handfuls of baby spinach leaves (optional).
  • Add salt and pepper to taste.

The deep flavors in our beef stew come from browning the chuck roast in batches and cooking the onions and garlic until they're sweet. Cooking low-and-slow in the oven allows the meat to become completely tender in its rich red wine-laced sauce. This is a great dish to make ahead as its complex flavors intensify overnight.

4 sprigs flat-leaf parsley
4 sprigs thyme
1 sprig rosemary
2 fresh bay leaves
2 tablespoons olive oil
3 pounds beef chuck roast, cut into 2-inch pieces
1 large onion, chopped
5 cloves garlic, chopped
7 medium carrots (about 12 ounces), peeled, cut diagonally into 1-inch pieces
3 large stalks celery, cut diagonally into 1-inch pieces
1/2 cup dry red wine
2 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1 1/2 pounds small red potatoes, halved
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
Chopped flat-leaf parsley, for serving

Steps:

  • Arrange a rack in the lower third of the oven and preheat to 275 degrees F. Tie the parsley, thyme, rosemary and bay leaves together with kitchen twine.
  • Heat the oil in a large Dutch oven or other heavy pot over medium-high heat. Working in batches, cook the beef in a single layer spaced about an inch apart, turning a few times, until the pieces are browned on at least three sides, 8 to 10 minutes per batch. As the beef finishes browning, transfer to a large plate.
  • Reduce the heat to medium. Add the onion and garlic to the pot and cook, stirring occasionally, until the onions are tender and beginning to brown, about 6 minutes. Add the carrots and celery and continue to cook until they are brightly colored and fragrant, about 4 minutes. Stir in the wine, scraping up any browned bits on the bottom of the pot, and cook until it evaporates, about 4 minutes. Sprinkle the vegetables with the flour, stir to evenly coat them and cook for 1 minute. Add the broth, potatoes, tomatoes and the reserved beef with any accumulated juices. Season with 3 tablespoons salt and 1 teaspoon pepper. Add the herb bundle and bring the stew to a simmer.
  • Cover the pot and then transfer to the oven. Bake until the beef is tender but still holds its shape, 1 1/2 to 2 hours. Let the stew cool for 30 minutes before serving. Discard the herb bundle and serve topped with chopped parsley.

1/2 lb vermicelli
1 lb frozen raw baby shrimp, cleaned and peeled (no tails)
1 tablespoon olive oil
1 tablespoon butter
2 shallots, minced
2 garlic cloves, minced
1 cup dry white wine
8 ounces cream cheese
salt
pepper
4 scallions, chopped
1 small tomatoes, seeded and chopped
4 ounces sharp white cheddar cheese, grated

Steps:

  • Cook pasta according to package instructions.
  • Add frozen shrimp for the last 2-3 minutes of pasta cooking time.
  • Drain pasta and shrimp.
  • While pasta is cooking, prepare sauce.
  • Melt butter with olive oil in pan.
  • Saute shallots until tender, then add garlic and saute untl tender being careful not to burn.
  • Add wine off heat and return pan to flame.
  • Allow wine to come to a simmer and reduce a bit.
  • Turn off heat and add cream cheese in chunks.
  • Cover pan and allow cream cheese to melt.
  • When cheese is melted, whisk into sauce to combine.
  • Add salt and pepper to taste.
  • Combine pasta, shrimp, sauce, scallions and tomato.
  • Turn into a buttered casserole dish and top with grated cheddar.
  • For OAMC freeze at this point.
  • Thaw completely in fridge.
  • Bake at 350° for 10-15 minutes or until cheese is melted.

I created this recipe on a day I needed to use up some leftover fresh green beans and zucchini. Even our pickiest eaters - 11 and 13 year-old granddaughters - ate it and asked for more! Practically endless in its flexibility, you can make a lot of changes to this recipe according to what you have on hand. You can use green Zucchini or yellow summer squash. Green beans can be canned, frozen, or fresh. Bell peppers can be green, yellow, or red. Seasoning can be chili powder or Mrs. Dash. Only the butter beans are an absolute, as they add a unique flavor and just a tad of thickening to the broth.

  • Bring to just to a boil, turn down heat and simmer 30-60 minutes until chicken is completely cooked.
